    CHOCOLATE SNOWBALLS

    1 1/4 cups butter
    2/3 cup white sugar
    1 tsp vanilla extract
    2 cups flour
    1/8 tsp salt
    1/2 cup unsweetened cocoa powder
    2 cups chopped pecans
    1/2 cup confectioners' sugar
    for decoration

    1 In a medium bowl, cream butter and sugar
    until light and fluffy.

    Stir in the vanilla. Sift together the flour, salt,
    and cocoa; stir into the creamed mixture. Mix in
    the pecans until well blended.

    Cover, and chill for at least 2 hours.

    2 Preheat oven to 350 deg. F. Roll chilled
    dough into 1 inch balls. Place on un-greased
    cookie sheets about 2 inches apart.

    3 Bake for 20 minutes in preheated oven. Roll
    in confectioners' sugar when cooled.

    What a yummy sounding cookie recipe. I wonder how many cookies I can make in the new year? lol. Thank-you Salsa!
