    So glad to hear about everyone's Christmas holidays.  It sounds like everyone had a good time with lots of good food and presents.  I was concerned for travellers when I heard that Colorado and a few other areas were having some pretty bad weather.

    We had very mild temps in the 30's with no rain or snow.  Yesterday we did have a very heavy fog for a while.  They called it freezing fog, though I have no idea what that means.

    The holiday was a little different this year for us.  We went to mil's as usual for Christmas Eve after DH got home from work.  Usually there are 27 people, but DN's family could not come, so that was 5 less, and BIL and his total of 9! did not come until later.  It was less hectic than usual but still a lot of fun.  One of my younger nephews performed part of his magic routine, so we had a floor show.  He is very good, and makes money on the side doing parties.

     

    My energetic mil made crab dip, spinach dip, shrimp cocktail, and sausage balls for appetizers, then we had lasagna, salad, and home made (to die for) rolls for dinner.  Dessert was my cookie tray and a Lazy Man's Pie I got from the bb.

     

    Christmas day was at my DSister and BIL's house.  We kept it very simple this year, with me and my BIL being unemployed, we just could not justify spending a lot of money on a big meal for the four of us.  My DH gets a turkey every year from work, so we had that for dinner - first time ever we had turkey for Christmas instead of ham - mashed potatoes, a vegetable, rolls, stuffing, and for dessert my sister's famous apple pie.

    Has anyone else had this happen? That little 12 pound turkey took 5 1/2 hours to cook!

     

    My DH started to feel bad Christmas evening, so he went to the Dr yesterday.  He has pneumonia.  Luckily he went right away, before it got too bad.  It is confined to a small portion of one lung, so he should be feeling better very quickly.

     

    Hope everyone who has been ill, is feeling better soon.

    Here are 3 more drink recipes - 1 alcoholic and 2 without.  These are not T&T.

    I used to do a lot more entertaining than I do now.

     

    APPLE CINNAMON CREAM LIQUEUR

     

    Makes about 1 quart

     

    1 (14 oz) can sweetened condensed milk

    1 cup apple schnapps

    1 cup (1/2 pint) whipping or coffee cream

    4 eggs

    ½ tsp ground cinnamon

     

    In blender container, combine ingredients; blend until smooth.  Store tightly covered in refrigerator.  Stir before serving.  Serve with ice if desired.

     

     

     

    TROPICAL CREAM PUNCH

     

    Makes about 3 quarts

     

    1 (14 oz) sweetened condensed milk

    1 (6 oz) can frozen orange juice concentrate, thawed

    1 (6 oz) can frozen pineapple juice concentrate, thawed

    2 (32 oz) bottles club soda, chilled

    Orange slices

    Ice

     

    In punch bowl, combine sweetened condensed milk and juice concentrates; mix well.  Gradually add club soda; stir.  Garnish with orange slices.  Serve over ice.

     

     

    RASPBERRY FROST

     

    From Dole pineapple juice can

     

    2 cups pineapple juice, chilled

    1 pint raspberry sherbet

    1 cup frozen raspberries, thawed

    1 can (12 oz) ginger ale, chilled

     

    Combine pineapple juice, sherbet and raspberries in blender; whir until smooth.  Pour into large pitcher.  Stir in ginger ale.  Makes 5 cups. 

     

    Note:  recipe can be easily doubled.

    Hello everyone!

    Picasso.....I think simple is sometimes better! I will be so glad when this week is over......I am so tired! If I can just keep going for four more days! Sleep Wink

    We had a really nice visit with most of DH’s extended family yesterday.  His nephew is going to Afghanistan in February so it was mostly a little party for him.  He has three small children and the baby is only 2 months old so it will be really hard for him when the time comes to go.  My DD was telling me about her boyfriend’s sister who knits all the time – even in the bar!  I said she knits in the bar??  oh yeah it’s really trendy now and they even have clubs they call Stitch and B!tch lol  They can get help with whatever they are working on and complain about whatever they need to complain about! 

     

     

    I have a convection/microwave at work.  I only use the microwave part because with the quantity I do that tiny convection oven isn’t much help.  Marlene tell me about cooking the turkey in convection.  How long do you cook it per pound and what temp?  I guess you probably don’t cover it…   Texas – 17!!  I had pictured you to be older than that! lol  I hope all goes well with your tests today.   Thanks everyone for the great recipes.  Picasso I have a Strawberry Margarita recipe that is much like your daiquiri one.   Twinkle, that is cute that they play hockey with walnuts on your pond.   Picasso we have turkey for Christmas every year.  For me it just wouldn’t feel like Christmas otherwise!    Have a good one all.  I will post some recipes and then I need to go and do some cleaning up now that the company has left.

    Grrr it really bugs me when it bunches my posts all together like that!!!

     

    Strawberry Margaritas 9 cups boiling water1 pkg strawberry jello2 cups sugar2 pkg frozen strawberries, pureed1 can frozen lemonade concentrate1 can frozen orange juice concentrate1 cup gin, rum, tequila or lemon soda  Combine water, gelatin and sugar and bring to a boil. Mix well stirring until dissolved.  Let cool.  Add strawberries and concentrates and freeze until serving time.  Stir in rum.  15 to 20 servings.

    Hot Rum Mix

      

    1 lb butter (no substitutes)

     

    2 cups white sugar

     

    2 cups brown sugar

     

    1 quart (4 cups) vanilla ice cream, softened

     

    Beat sugars together with the butter.  Stir in ice cream until well mixed.  Store in the freezer.

      Mix 2-3 tbsp of the mix with a shot of rum and boiling water to fill a mug.

    Well that was a little better....

     

    Brazilian Lemonade

    Several lemon slices

     

    2 tsp sugar

     

    Crush together with back of a spoon. Add crushed ice and vodka.

    Island Rum Punch

      

    3 cups white rum

     

    ½ cup grapefruit juice

     

    ½ cup lemon juice

     

    1 2/3 cups orange juice

     

    2 cups pineapple juice

     

    2/3 cup water

     

    1/3 cup sugar (dissolved in water)

      Make 10 cups

    1 oz Kahlua

     

    1 oz Galliano

     

    2 oz coke

     5 oz soda water

     I have made the Home made Baileys and it is good but I am a little concerned about the raw eggs in there…   Kahlua 

    2 ½ cups brown sugar

     

    2 tbsp instant coffee granules

     

    1½ cups water

     

    Bring to a boil and cool 5 minutes.  Add:

     

    26 oz vodka

     

    2 tbsp chocolate extract

     2 tbsp vanilla

    Brandy Slush

     

    7 cups water

     

    2 cups sugar

     

    Boil together and let cool.

      

    Meanwhile steep 4 tea bags in 2 cups boiling water and let cool.

      

    1 can frozen lemonade

     

    1 can frozen orange juice

     

    2 cups peach or apricot brandy

      

    Mix together and freeze in ice cream pail.  When serving fill glass 2/3 full with slush and fill with 7 up.

    hi girls,

    texas i cross fingers for yur tests - you have had so many of them the past year - i really hope things get better for you!

    picasso i hope DH is much better soon and that you can find a job - i know how hard this can be!!

    berny wow you are filling us up and it ain't even happy hour -lol glad that you had fun... i wouldn't like the thought of anybody going to irak or afganistan that i personally know...

    i am preparing turkey sandwiches for tonight - DS was out all day again on the ice with his friends - they found my old hockey sticks and a tiny bean bag that they hit all day - now he wants food - so far he is having a hot chocolate and a cinnamon roll - i guess i have to speed up on the sandwiches -lol

    Take care friends and stay warm and get better  - i will have a candle lit tonight.

    Not sure if any of you tried this recipe off of the BB but it is to die for!

     

    Niagara’s Bailey's Chocolate Fudge

     


    1 can sweetened condensed milk

     

    3 1/2 cups chocolate chips


    1/3 c Baileys

     
     

    Line a 12 x 6 baking pan with parchment paper. Heat the milk up very carefully in the microwave, or it will scorch. Heat up the semi sweet chocolate chips on 30 second bursts, so they don’t scorch. Mix them all together in a 4 cup measuring cup, add the Baileys, stir a lot until really mixed and smooth. Pour into pan and let cool a few hours in the fridge. (I used half milk chocolate chips and half semi sweet because that is what I had on hand. I think it would be really good with all milk chocolate…)

    I made this over the holidays and it was a hit with the adults.  The kids found the sauce a bit strong…

      

    The Best Bread Pudding

     

    2 eggs

     

    2 tbsp melted butter

     

    2 tbsp vanilla (I used one)

     

    2 ½ cups milk

     

    2 cups sugar (I used one)

     

    5 cups bread cut into 1 inch cubes

     

    1/3 cup pecans chopped finely (I used walnuts)

      

    Preheat oven to 325.  Beat together eggs, butter, vanilla, and milk.  Add sugar and mix until sugar is dissolved.  Arrange bread cubes in a nine inch baking dish.  Pour liquid over the bread.  Sprinkle nuts all over and bake for 55 to 70 minutes or until crust is golden brown.  While the pudding is baking make the Whiskey Cream Sauce.

      

    Whiskey Cream Sauce

     

    ½ cup sugar

     

    ½ cup butter

     

    ½ cup cream

     

    ¼ cup Jack Daniels (I used Wiser’s) Combine all ingredients in a saucepan.  Stir constantly over low heat until mixture reaches a low boil.  Pour a small amount over the individual servings of bread pudding.  Store leftovers in the fridge but this is best served warm.

    Hi Twinkle how's it going?  I guess I need to hit the shower and then go and do something productive.  I frittered away enough time on here already!
