    Good morning, dear ones!

     

    Well, here's a little more to help us re-up in our better eating plans...at least, that's my plan!

    Hello Margaret, Thank you for the link and all the other sites I really appreciate you.

    Supposed to get about 5 inches of that white stuff today, Oh well might as well be us.

    Didn't work with Jennie yesterday so I am off to the shower and out the door.

    We had bugers on the grill last night with cottage cheese and sliced Tom's, Tonight I think we will have country ribs.

    Good Morning Margaret and Ann,

     

    What a wealth of information Margaret. We certainly will have no excuse for not finding things now. Thank you, thank you, thank you. We are still eating Christmas dinner so to speak much of what I didn't have on Christmas day even. I made a broccoli salad from what wasn't eaten with dip and we will have that tonight along with the ham.

     

    I stayed off my feet yesterday completely  I can actually walk again. Yippee !!! I had to switch shoes because I couldn't get into any others and these are flatter and therefore stretched the muscles in the calves, that was almost worse than the original damage.

     

    It was nice to go back and check  yesterday's chat thank you for the link's Margaret. I have been up since 2am so I think I will try and take a nap.

     

    We are in for some snow too Ann. I wish the weather man would give us a rest until some of the other goes away but that won't happen for awhile I'm afraid. Becareful if you are out.

    Good morning Margaret, Ann & all ~

     

    Wow!  Where do you find all these great sites Margaret?  I will definately be checking them out.  Seems as though we keep having the same thing all the time & I really need to get out of that rut.

     

    Did you get all of that snow Ann?  Would you believe we are going to be between 35 & 40 today?  Now, you know that won't last long.  Next week they are talking about being in the low 20's & snow again.  Seems good not to have to put boots on or worry about ice, etc.

     

    Mom's doing pretty well, Dava, thanks for asking.  Her memory is not so good & her hearing is getting bad... (have to repeat nearly everything you say to her).   Then again, I'm not sure if it's hard of hearing or that she just can't grasp what's being said the first time around.  It's very frustrating & I'm ashamed to say it, but I do get impatient with her.  I try not to show it, but sometimes it's very hard.  How's your mom, Dava?  How are your colds?  I thought I was getting one Christmas eve.  During the night I woke up sneezing & the next morning the nose was running like a hose.  I took some Airbourne first thing & today it's gone!  I love that stuff!!!!

     

    Well, Linda, how are the wedding plans coming along?  I just can't believe you have lost all that weight.  You should be so proud of yourself.  I know there are a few people on this post that are!  Me included!!!! Party!!!  CONGRATULATIONS!!!!!

     

    Yum, mincemeat cookies sound really good, Patti.  I wanted to make a mincemeat pie for Christmas, but just didn't have enough time.   The only ones that would eat it would be my 2 sons-in-law, my mom & me, but that's OK.  The all the more for us!  I can get mincemeat if I go to the grocery store in the city, but not here in town.  The store is too small for any of that fancy stuff.  LOL  It's gotten really expensive too.

     

    Hey, I think I have figured out a way to look back at all the posts.  I reduced my reply & then went back to the internet opening page, clicked on favorites & went to TOH bb again.  It's a pain, but at least now I won't forget anyone.

     

    Not sure of what's for dinner tonight.  I want something nice & easy.  Maybe some hotdogs.  Haven't had those in a while & Mom was asking for them last week.  Maybe I'll pick up a bag of coleslaw too.

     

    Will try & check back, but you know how that goes!  Enjoy your day & have a great weekend!  Keep your snow over your way, Ann.  LOL

    Good morning girls!

    Jessie called this morning and Matt was in a little car accident. They had about 5 inches of snow in Kansas and he had just got on the highway and slide into the back of a tractor-trailer.  He did not get hurt, but it took off his front bumper and a headlight/blinker.  And then the tractor-trailer took off.  He didn't get his license plates, so nothing he can do about it.  Jessie and 2 of her girlfriends are going to Kansas this weekend. They are attending a friends wedding and of course visiting with Matt Smile   I would like for her to stay home, but I know that ain't happening!! So I told her to be very careful driving there and back because of the weather and the holiday...

    Margaret, thank you soooooo much for the links. I will definetely save them and check them out. I agree, you are a wealth of information for us.

    Ann, you be careful going out to take care of Jennie.  I hope all that snow passes you by!  Mmmm country ribs sound delicious!!!  What time is dinner? Can we all come? Wink

    Carol, so glad to hear that your ankle is feeling better today.  You probably should stay off of it as much as you can for a few days yet.  Looks like everybody is getting some snow today.  We are only expecting MORE rain. hahaha...Oh well, we need it.  Hope you enjoyed your nap!

    Barb, thanks for the congrats and I'm am hoping I will continue to lose.  I know it's gonna be slower now than it has been, but that's alright with me, just as long as it keeps coming off!!  Smile   Glad to hear that your Mom is doing pretty good.  I do understand how you can get a little upset with her sometimes.  My Mom is getting so forgetful, repeats everything over and over and each time she acts like that is the first time she has said it. The new thing she is doing now is, accusing people of saying things that they didn't say.  She gets an idea in her head and she believes that me or someone else said it.  If we tell her we didn't, she gets so angry and argues that we did. So I've just been trying to agree with her and when it gets a little tough to take, then I try to remember what a wonderful mother she has been to us and what a generous and big hearted person she is. That helps me to remain respectful and kind to her and get through it.  I'm doing something simple for supper too.  Just gonna warm up some ham, and have the cole slaw I made yesterday and I might make some deviled eggs too.  Sounds yummy to me!

    This is in the newest Taste of Home magazine and looks low carb to me.

    Spinach 'n' Sausage Pork Loin

    1 pkg. (10 oz.) frozen chopped spinach, thawed and squeezed dry

    1 egg, beaten

    1/2 cup slivered almonds, toasted

    1/4 cup dry low carb bread crumbs

    2 Tbsp. minced fresh parsley

    1 Tbsp. onion soup mix

    4 garlic cloves, minced

    1 tsp. dried thyme, divided

    1 tsp. pepper

    1/2 lb. bulk Italian sausage

    1 boneless prol loin roast (about 3 lbs.)

    1 Tbsp. olive oil

    In a large bowl, combine 1/2 cup spinach, egg, almonds, bread crumb, parsley, soup mix, garlic, 1/2 tsp. thyme and pepper. Crumble sausage over mixture and mix well. (Save the remaining spinach for another use.)

    Make a lengthwise slit down the center of the roast to within 1/2 in. of bottom. Open roast so it lies flat; cover with plastic wrap. Flatten slightly. Spread sausage mixture over meat. Close and tie several time with ditchen string; secure ends with toothpicks. Place fat side upon a rack in a shallow roast pan. Brush with oil, sprinkle with remaing thyme.

    Bake, uncovered, at 350 degrees for 2 to 2 1/2 hours or until a meat thermometer inserted into roast and sausage mixture reads 160 degrees. Let stand for 10-15 minutes. Remvoe string and toothpicks before slicing.  Yields: 10 servings.

    Chicken Mushroom Melts

    1 1/4 lbs. boneless skinless chicken breast, cut into 1/2 inch pieces

    1 lb. medium fresh mushrooms, quatered

    1 Tbsp. canola oil

    1 1/2 tsp. soy sauce

    1/2 cup heavy whipping cream

    1/4 cu butter, softened

    3 garlic cloves, minced

    1 1/2 cups shredded cheddar cheese

    In a large skillet over medium heat, cook chicken and mushrooms in oil for 5 minutes. Stir in soy sauce; cook 7 minutes longer. Stir in cream; simmer for 4-6 minutes or until sauce is thickended (do not boil)

    In a small bowl, combine butter and garlic; spread over LOW CARB bread. Place buttered side on an ungreased baking sheet. Broil 4-6 inches from the heat for 2-3 minutes.

    Top echa slice with 1/4 cup chicken mixture. Sprinkle wit cheese. Broil for 1-2 mintues or until the cheese is melted. Yield: 16 appetizers if bread is cut in half.

    (Actually when I read this recipe, I thought it would make a cook stove-top skillet meal, without the bread-butter or broiling.  Just melt the cheese on top of the chicken in the skillet)

     Oh Lawd, I should check my spelling before I hit "post"   Hopefully you can figure out what I meant in those recipes.  Like pork, instead or prol and kitchen instead of ditchen and so on.........  Just change them if you copy them Embarrassed

    Linda, I'm sorry to hear that Matt had an accident but am glad he wasn't hurt. Too bad he didn't get the license number of the truck, I would guess that he would be in some trouble for running off like that. After you post and you see that you made a mistake you can go back and edit. I have done it a number of times already. That is one nice thing about this new deal.

     

    We have already gotten three inches of snow and it was not suppose to start here until this afternoon. I sure hope we don't get anything like our last snow fall of 14 inches.

    I have a different spinach salad recipe that came from Arcamax and it might be real good. Some carbs from the tomato and pear.

     

    Spinach Salad

    2 Tbsp. butter or olive oil (or combination)
    1 cup onion, chopped
    6 small Portabella mushrooms sliced thin
    2 pears chopped
    2 tomatoes sliced into wedges then cut in half (bite size pieces)
    2 Tbsp. fresh lemon juice
    10 fresh oregano leaves
    1 tsp. thyme
    1 tsp. dried basil
    One quarter cup dry white wine
    Fresh Spinach, enough for 6 to 8 servings
    One half cup real bacon bits

    Heat oil or butter in saute pan. Add onion and saute slowly until softened. Add mushrooms and saute for another 5 minutes until mushrooms are soft. Add pear, tomato, lemon juice, herbs, and wine. Saute until heated through. Arrange Spinach on a dinner plate, tearing into bite size pieces, top with saute and garnish with bacon bits.

    The Skinny: Not much room for improvement here.

    Sure hope you don't get anymore snow!  I can't imagine how hard it must have been to get around in 14 inches of the stuff!!!!!  And the spinach recipe sounds divine.  We could cut the carbs just a bit by leaving out the pear slices.  But if you only use a little bit of pear...that shouldn't be too bad.  Thanks for sharing it with us.

    My mom called and she came down for a visit this afternoon.  We went to Applebee's around 1:30 and I got a steak, fresh vegetables and creamed spinach.  It was soooooooo good.  So if I get hungry later, I will just snack around a bit.

     It's not been a fun day around here. Our car has went from open hood surgery to a autopsy :(  We have no clue as to what is going on!

    Dava I'm so sorry about the car I hate it when that happens. DH who I call Mr. Impatience couldn't wait for the side door on the van to close today so he threw it into drive and there was a terrible noise. He had to stop and put it into park and start over and so far the door seems OK and I hope it stays that way.Hmm

     

    Linda as soon as you are done typing and you post now you see you made a mistake go up to the top of your own post and look, there should be some boxes and one will say edit. I click on that wait for the screen to come back and I just make my correction at the spot that it is wrong. There will be some other stuff under your full post but I don't bother with that then just repost. I hope this makes sense to you. There is also a spell check right on this page but silly me I don't use it unless I know I can't spell a word.

    I do hope Pattie will find us tonight...this board is really something! ( But I'm too polite to say what!)

     

    Anyway, I'll look for all of you tomorrow...same time same place! In the meantime, thanks for the recipes, rest your foot, say hi to your Moms for me, wave at Matt and Jess, find out what the heck is wrong with your poor car, grill something out for me...avoid the snow...etc...whew...I still can't find the way to answer all...

    Hi Ladies,  I've been grilling chicken breasts today.   I wanted to get a bunch in the freezer before school starts back.  I have a 15 yr. old who wants to visit all the snow.  She has yet to see it.  We keep saying we'll go somewhere for Christmas that has it, but we never do.

    Quick ? about the recipes...are there lc breadcrumbs already packaged or do you make your own from lc bread?

    Hi Pattie-I'll put you on our link list!

     

    I make my own l/c bread crumbs from my low carb bread.

    I put pieces of bread on a cooking sheet, spray with Pam, sprinkle with some garlic powder, etc, and bake at 325* for about 30 minutes...check, and if it needs longer, leave it in a bit.

    When crisp, crush it into crumbs.
