    Pizza [pi] anyone have any good Panini recipes?

    I got one for DH for Christmas  (the Panini maker that is) and we ae looking for recipes.

    I have been wondering about the panini makers, which to buy if indeed I do decide to buy one. What kind did you get? The ones I see are so big. I know your mom was asking about them in here last year. Does she have one like yours? We could just get a brick, and smash the sandwich under it, couldn't we? ;)

     

    I am interested in the recipes, too. :-)

    I got him one I heard about on Oprah (lol) I just figured if it was good enough for her to make Stedman a sandwich on it is probably a good one Wink  I actually put more thought into it than THAT.  I went to Amazon.com and researched them.  I knew i didn't want to spend a lot and I liked the fact I could do other things with this than JUST make Paninis.

     

    The one I got was the Cuisinart Griddler.  I got it on sale for less than $100.00 which is good.  It makes Paninis, has an extra large Grill and also a griddle.  I love the fact I got it for him and I plan on using it as well.  Makes up for all those times he has got me pots or vacuums as gifts Wink

     

    OH and it turns out this is the same one mom got. 

     

    I googled recipes and found one for a Shrimp Panini (we are trying that tonight) and also a chicken salad Panini.  I will let you know how they turn out MountainMan.

    I was actually thinking of getting that for my hubby. LOL! But I couldn't decide. I did see the Cuisinart one. I think it seemed to be the best, and sturdiest of the ones I saw, but not sure I wanted to spend that much. Plus, where to put it here, lol! Yeah, I think under $100 was good.

     

    The shrimp and chicken salad ones sound good. :-)

    Yes, the gridller is cool.

     

    - ciabatta rolls (sliced), good genoa salami, some capicola , olive oil with garlic & good provolone maybe a little shredded parmesan.

    -grill the rolls brushed with oil.

    -put on the meat with provolone on top and heat just until the cheese starts to melt.

    I don't think you are sheltered at all LOL I didn't know what it was either except I heard commercials on the radio for a local grocery chain that makes them.  Basically it is like a fancy grill cheese maker LOL!

     

    BUT much better.  It makes these neat little lines in the bread.  Top Notch LOL!!

     

    Really, I have no idea what it is but i know it helps make a nice sandwich.

    CHEESY HAVANA SHRIMP PANINI

    (Consumer Submitted Recipe)

    Prep Time: 20 minutes
    Marinate Time: 30 minutes
    Cook Time: 10 minutes
    Serves: 6

    CHEESY HAVANA SHRIMP PANINI

    Ingredients

    3/4 cup cup PLUS 2 Tbsp. Lawry's® Havana Garlic Lime Marinade With Lime Juice
    1-1/2 lbs. uncooked medium shrimp, peeled, deveined and tails removed
    1 Tbsp. vegetable oil
    1-1/2 cups shredded Monterey Jack cheese (about 6 oz.)
    1/2 cup Hellmann's® or Best Foods® Real Mayonnaise
    1/4 cup finely chopped red onion
    1/4 cup chopped fresh cilantro
    12 slices crusty country white bread
    2 Tbsp. Shedd's Spread Country Crock® Spread, melted

     

    Directions

    1. In large resealable plastic bag, pour Lawry's® Havana Garlic Lime Marinade With Lime Juice over shrimp; turn to coat. Close bag and marinate in refrigerator 30 minutes.
    2. Remove shrimp from Marinade, discarding Marinade. In 12-inch nonstick skillet, heat oil over medium-high heat and cook shrimp, stirring occasionally, 3 minutes or until shrimp turn pink. Drain; cool slightly, then coarsely chop.
    3. Meanwhile, in large bowl, combine cheese, Mayonnaise, onion, cilantro and remaining 2 tablespoons Marinade. Add shrimp and toss gently. On 6 bread slices, evenly spoon shrimp mixture, then top with remaining bread slice; brush outsides of sandwiches with Spread.
    4. In panini grill*, cook sandwiches 4 minutes or until golden brown.

     

    *TIP: If using 12-inch nonstick skillet or grill pan, press sandwiches to flatten while cooking, turning once, 4 minutes or until golden brown.

    Karma and Diz... thank you... I really had no clue!!!!  so why wouldn't your George Foreman do the same thing??? or I really like the brick Idea!!!

     

    But I certainly could go for the Salami and cheese melted.. YUMMY!!!!

    I also have a GF and think it would work. These recipes sound so yummy. Thanks a lot. Wolfgang Puck also has this and his stuff sells on HSN. Love to watch the show for recipes as well. Happy New Year to all!

    Oprah's Love Sandwich Oprah says she makes this yummy panini for Stedman—so she calls it their "Love Sandwich"!

    INGREDIENTS
    • 2 slices sourdough sandwich bread
    • olive oil for brushing
    • 1 tsp. light mayonnaise
    • 3 oz. thinly sliced turkey
    • 2 oz. thinly sliced pepper jack cheese
    • 2 basil leaves


    Preheat an electric panini press to medium-high heat according to the manufacturer's instructions.

    Brush one side of the bread slices with olive oil. Lay the slices, oiled side down, on a clean work surface and brush the tops of each slice with 1 teaspoon light mayonnaise. Place 1 1/2 oz. turkey and 1 oz. cheese and basil leaves on one of the slices of bread. Top the remaining turkey and cheese onto the other slice of bread.

    Place the sandwich on the preheated panini press and cook according to the manufacturers instructions until crispy and dark golden brown, 3 to 5 minutes. Transfer the sandwich onto a cutting board.

    Barbecue Beef Panini Sandwiches
     Ingredients:
    1/4   cup (50 mL) light mayonnaise
    2   tbsp (30 mL) barbecue sauce
    8   slices crusty Italian bread
    8   slices (3/4 oz/20 g each) thinly sliced cheddar cheese
    12   oz (350 g) thinly sliced deli roast beef
    1/2   cup (125 mL) thinly sliced red onion
     Directions:
    1. In small bowl, combine mayonnaise and barbecue sauce; mix well. Lightly spray one side of each bread slice with oil. Place bread slices oil side down; spread with mayonnaise mixture.
    2. Heat Grill Pan and Grill Press over medium-low heat 5 minutes. Meanwhile, top each of four bread slices with one slice cheese, roast beef and red onion. Top with remaining cheese and remaining bread slices, oil side up.
    3. Place sandwiches onto Grill Pan; place press on top. Grill sandwiches 1-2 minutes on each side or until bread is golden brown and cheese is melted, carefully turning sandwiches over halfway through. Serve immediately.
    Yield: 4 sandwiches

    Portobello Panini—

    Makes 1 Panini;


    Grill Time: 12 Minutes

    For the Roasted Red Pepper Mayonnaise—
    Stir Together:
    1/4 cup mayonnaise
    2 T. bottled roasted red peppers, minced

    Saute in 1 T. Olive Oil; Chop:
    1 bag (6 oz.) baby spinach
    1 t. garlic, minced
    Salt and pepper to taste

    Brush with Olive Oil, Season, Grill, and Thinly Slice:
    2 6" portobellos, stemmed
    Salt and pepper to taste

    For the Sandwich—
    Prepare:
    1 1-lb. loaf of bread
    4 oz. Swiss cheese, thinly sliced
    1/4 cup red onion, thinly sliced

    Directions:
    1 With a serrated knife, carefully trim off the top crust of the bread to make a flat surface—just skim off the crust, leaving as much bread as possible.

    2 Brush both sides of portobellos with olive oil; season with salt and pepper and grill 3–4 minutes per side. Thinly slice portobellos at an angle—this gives you larger slices.

    3 Prepare bread. To assemble panini, place layer of cheese on one slice of bread. Spread all of the red pepper mayonnaise over the cheese.

    4 Top with spinach, onion, and portobello slices; add another layer of cheese and slice of bread. Brush with olive oil and grill.

    Don’t like mushrooms? Sliced tomatoes are good here too. Romas are drier than regular tomatoes and won’t make panini soggy. Slice them 1/4"-thick.

    Panini.
     
    One of our favorites is rye bread
    with ham or turkey,
    provolone cheese and
     sliced portobella mushrooms
     
    that I have sauteed in butter and added balsamic vinegar to.
     
     Lightly brush the outsides of the sandwich with olive oil and grill.
    Delicious!

    ! Another is using panini bread, roasted red peppers, mozzarella cheese, fresh basil and ham.
    Mouth watering here!
