    diabetic crockpot recipe??

    Might there be a diabetic main dish crockpot recipe, preferably without chicken?
     
    Tall order, huh?  I'd like to have relatives over for a meal, in my camper.  We are all in Texas for the winter.
     
    Also what can I serve on top angel food cake for dessert?

    I have a few from the Diabetic Fix it and Forget it cookbook I will post here. I haven't tried them.

     

     Autumn Harvest Pok Loin

    seves 4

     


      1   cup  apple cider -- or juice
      1 1/2   pounds  pork loin, lean, boneless
      1 1/4   teaspoons  salt
      1/4    teaspoon  pepper
      2   large  granny Smith apple -- peeled, and sliced.
      1 1/2  medium  butternut squashes -- peeled, cubed
      2   tablespoons  brown sugar
      1/4  teaspoon  cinnamon
       1/4      Teaspoon  dried thyme
       1/4      teaspoon  sage

    1. heat cider in hot skillet. Sear the pork loin on all sides in cider.

    2. Sprinkle meat with salt and pepper on all sides. Place in slow cooker with juices.

    3. Combine apples and squash. Sprinkle with brown sugar and herbs. Stir. Place around pork loin.

    4. Cover. Cook on low 5-6 hours.

    5.Remove pork from cooker. Let stand 5-10 minutes. Slice into 1/2 inch thick slices.

    Serve topped with apples and squash.

     

    Exchanges: 0 Grain(Starch); 4 1/2 Lean Meat; 1 Fruit; 0 Fat; 1/2 Other Carbohydrates.

    Bavarian Beef

    Serves 8

     


      3  pounds  beef chuck roast -- boneless, trimmed of fat
      1  Tablespoon  Virgin olive oil
      3   cups  sliced carrots
      3   cups  sliced onions
      2   large  dill pickles -- Kosher, chopped
      1   cup  celery
      1/2 cup  dry red wine -- or beef broth
       1/3 cup  German mustard
      2  teaspoons  coarsely ground pepper -- black
      2 bay leaves
     1/4 teaspoon  ground cloves
      1 cup  water
       1/3   cup  flour

    Brown roast on both sides in oil in skillet. Transfer to slow cooker.

    Add remaining ingredients except flour.

    Cover. Cook on low 6-7hours.

    Remove meat and vegetables to large platter. Cover to keep warm.

    Mix Flour with 1 cup of cooking broth until smooth. Return to cooker. Turn on high and stir, cooing until broth is smooth and thickened.

    Serve over noodles or spaetzle.

    Beef Burgundy and Bacon

    serves 6

     

      1 slice  bacon -- cut into squares
      2  pounds  sirloin tip -- or round steak, cubed, trimmed of fat
      1  teaspoon  olive oil
      1/4 cup  flour
       1/8 teaspoon  salt
       1/2  teaspoon  seasoning salt
       1/4  teaspoon  dried marjoram
       1/4  teaspoon  dried thyme
        1/4  teaspoon  pepper
      1  cube  beef bouillon -- crushed
      1  cup  burgundy wine
       1/4 pound  fresh mushrooms -- sliced
      2  tablespoons  cornstarch
      2 tablespoons  cold water
      1  clove  garlic -- minced

     

    Cook bacon in skillet until browned. Remove.

    Coat beef with flour and brown on all sides in oil.

    Combine steak, bacon, drippings, seasonings, garlic bouillion and wine in slow cooker.

    Cover, cook on low 6-8 hours.

    Add mushrooms.

    Dissolve cornstarch in water. Add to slow cooker.

    Cover. Cook on high 15 minutes.

    Serve over noodles.

     Garlic Beef Stroganoff

    serves 6

     

      2  teaspoons  beef bouillon powder -- sodium free
      9  ounces  sliced mushrooms -- from a jar; drained with juice reserved
      1  cup  mushroom juice -- with boiling water added to make full cup
      10 3/4 ounces  cream of mushroom soup -- fat free low sodium
      1  large  onion -- chopped
      3 cloves  garlic -- minced
      1  tablespoon  worcestershire sauce
      1 1/2 pounds  boneless round steak -- trimmed of fat and cut into thin strips
      2 tablespoons  olive oil
      6 ounces  neufchatel cheese -- cubed and softened

     

    Dissolve bouillon in mushroom juice and water in slow cooker.

    Add soup, mushrooms, onion, garlic, and worcesershire sauce.

    saute beef in oil in skillet. Transfer to slow cooker and stir into sauce.

    Cover. Cook on low 7-8 hours. Turn off heat.

    Stir in cream cheese until smooth.

    Serve over noodles.

     Ham and Corn casserole

    serves 8

     

    1/4  cup  olive oil
    1     small  green pepper -- chopped
     1    medium  onion -- chopped
     1/2  cup  flour
    1/2  teaspoon  paprika
    1/2  teaspoon  pepper
    1/4  teaspoon  dried thyme
      1  teaspoon  dry mustard
      4   cups  milk -- 1%
      8   ounces  creamed corn
      2   cups  potatoes -- peeled, diced, slightly cooked.
      3    cups  cooked ham -- diced
      3   ounces  shredded cheddar cheese -- reduced fat

     

    Saute green pepper and onion in oil in skillet.

    Stir in flour and seasonings.

    Gradually stir in milk and cook until thickened. Pour into slow cooker.

    Stir in remaining ingredients.

    Cover. Cook on low 8 hours.

    Ham and Scalloped Potatoes

    Serves 6

     


      1   pound  ham -- sliced, 6-8 slices
      8    medium  potatoes -- thinly sliced
      2    medium  onions -- thinly sliced
      1    cup  shredded cheddar cheese -- reduced fat
      10 3/4  ounces  cream of celery soup -- or mushroom soup, reduced sodium
       paprika

     

    1. Put half of ham, potatoes, and onions in slow cooker. Sprinkle with cheese. repeat layers.

    2. Spoon soup over top. Sprinkle with paprika.

    3. Cover. Cook on low 8-10 hours.

     Pepper steak

    Makes 6 servings.


      2  pounds  round steak -- trimmed of fat, cut into 3 inch by 1 inch strips
      2  tablespoons  olive oil
      1/4 cup  light soy sauce
      2  cloves  garlic -- minced
      1 cup  chopped onions
      1  teaspoon  sugar
      1/4  teaspoon  pepper
       1/4  teaspoon  ground ginger
      2  large  green peppers -- cut into strips
      4  medium  tomatoes -- cut into eighths, or 16 ounce can diced tomatoes
      1/2   cup  cold water
      1 tablespoon  cornstarch

     

    Brown beef in oil in saucepan. Transfer to slow cooker.

    Combine soy sauce, garlic, onions, sugar, pepper, and ginger. Pour over meat.

    Cover. Cook on low 5-6 hours.

    Add green peppers and tomatoes. Cook 1 hour longer.

    combine water and cornstarch to make paste. Stir into slowcooker. Cook on high until thickened, about 10 minutes.

    Serve over rice or noodles.

     Swiss Steak

    Serves 6


      3 pounds  round steak -- trimmed of fat
      1/3 cup  flour
      1 teaspoon  salt
       1/2 teaspoon  pepper
      1  large  onion -- sliced
      1  medium  carrot -- chopped
      1 rib  celery -- chopped
      1  large  bell pepper -- sliced, may use more
      16 ounces  diced tomatoes
     Add a variety of fresh or dried herbs for more flavor

     

    Cut steak into serving pieces.

    Combine flour, salt, and pepper. Dredge steak in flour mixture.

    Place onions in bottom of slow cooker. add meat. Top with carrots, bell pepper, celery and tomatoes (and herbs if desired).

    Cook on low 6-8 hours.

    IF necessary, remove steak and add 1/4 cup flour mixed with 1/2 cup water to thicken sauce before serving. Heat on high to thicken.

    mrsmonty, thanks for all your work!  At first glance the Beef Burgundy looks good.  Will look more closely to see if vegetables would work in one...............another short cut, you know.

    Sooo????? what did you make and how did it go? I have seen some of those campers that winter in Texas...some of them are as big as my house! How many people? Which recipe did you use? how was it?
