    How funny MIchelle - I didn't know there was a set time for meals. We live "in the country" and they are lucky to get a meal when I have time to put it on the table! In the summer that could be any time from 5-10 pm and in the winter ...5 -6 -7 ish. I grew up on a dairy farm and  we had supper when chores were done - 8-8:30. Even as kids - that's when we ate. Sunday was the only time we had dinner -noon or 1:00. DId you make your cabbage rolls? I only make them in the fall when large heads of cabbage are ready . It's an all day job so I make several roasters full - feed the whole extended family and freeze any left.

    Evening all,

     

    So who was everyones first day of the year? Good I hope!

    I have a good day and got a lot accomplished, well cooking wise, and laundry. Tomorrow is house work though.

     

    The Baklava is wonderful!!!!! I have not had it since I was a little girl so it is even better then I remembered! I will post the recipe in the next post. It has been on  Recipes all week. I made 2 batches of banana bread, DH can take a bunch for his drive. It is about 7 hours to get up to where he is going. Definately a busy week for him.

     

    Julie, sounds like when I make cabbage rolls, it is nice to get the mess over with in one day but is a big job.

     

    I hope I can sleep in a bit, I am quite tired.

    Baklava

     

    1 (16 ounce) package phyllo dough**

    1 pound chopped nuts (could easily use 3 cups instead of 4 to save on expense)

    1 cup butter

    1 teaspoon ground cinnamon

    1 cup water (1 1/2 cup water)

    1 cup white sugar (1 1/2 cup white sugar)

    1 teaspoon vanilla extract (1 1/2 teaspoon vanilla)

    1/2 cup honey (3/4 cup honey)

    If you want your Baklava more gooey use the larger measurements for syrup. I 'd add a bit of lemon juice or lemon zest. Orange works the same way. Mine turned out a to need more moisture-this is a THICK Baklava. I will definitely make the larger syrup next time, maybe even double the original recipe. You can always pour some out if you have too much.

    (**I used Athens Fillo Dough--it comes already cut to fit a 9x13 pan perfectly. Jaxon)

    DIRECTIONS

    Preheat oven to 350 degrees F(175 degrees C). Butter the bottoms and sides of a 9x13 inch pan. (I used a glass pan so I wouldn't worry about cutting one of my metal non-stick pans. Reduce oven to 325 if using glass. Mine was done after 45 minutes but I'd watch from about 35 minutes on so as not to overbrown.)

    Chop nuts and toss with cinnamon. Set aside. Unroll phyllo dough. Cut whole stack in half to fit pan. Cover phyllo with a dampened cloth to keep from drying out as you work. Place two sheets of dough in pan, butter thoroughly. (I melted the butter and brushed it on with a pastry brush.) ** Repeat until you have 8 sheets layered. Sprinkle 2 - 3 tablespoons of nut mixture on top. Top with two sheets of dough, butter, nuts, layering as you go. (There will be about 12 thin layers of nuts.) The top layer should be about 6 - 8 sheets deep. (No nuts here.)

    Using a sharp knife cut into diamond or square shapes all the way to the bottom of the pan. You may cut into 4 long rows then make diagonal cuts. Bake for about 50 minutes until baklava is golden and crisp.

    Make sauce while baklava is baking. Boil sugar and water just until sugar is melted. Add vanilla and honey. Simmer on low for about 20 minutes. (I added the vanilla after it cooled, otherwise I think it would cook some of the flavor out.)

    Remove baklava from oven and immediately spoon sauce over it. Let cool. Serve in cupcake papers. This freezes well. Leave it uncovered as it gets soggy if it is wrapped up.

    I got this recipe at Allrecipes. I looked at dozens of recipes all over the internet, there are lots of small variations , especially in the syrup, but this one had almost 500 reviews and nearly every single review gave the recipe FIVE stars. Works for me. And since I was very nervous about tackling this I read every single review. (yes, all of them!) Lots of tips and suggestions but I ended up just following the recipe exactly as she wrote it. If you want to take a look before leaping here's the address:

    My biggest tip is not to sprinkle your layers too heavily with nuts. You are going to have about 12 layers of nuts, with two sheets of Phyllo between each layer. That 2 or 3 tablespoons just seemed so scant to me but I was warned if I made the nuts too thick then the Baklava didn't hold together as well. That is correct. It is also best to chop your nuts very finely. I used my mini food processor. It's good if some of the nuts go almost powdery. It makes the Baklava stick together better. Just make sure you don't make nut butter!

    I used a mixture of pecans, walnuts, and cashews. Many recommended pistachios and I will definitely add some of those next time. I also wish I'd used almonds. That's something else to play with next time. The flavor will be a little different depending on which nut dominates. The pecans are strongest in this batch but the walnuts chime in too. The cashews I can't really taste but I only used about 1/2 cup this time.

    Probably the most difficult part was cutting it into squares before cooking. DO NOT skip this step. It is essential. When you pour on the syrup it needs to be able to run between all the squares, plus the dough once cooked is really crisp and fragile and would be a nightmare to cut at that point without crispy layers flying everywhere. (Imagine cutting potato chips.) So be sure and cut it into the shapes you want before it goes into the oven. A diamond pattern is the most favored but I stuck with squares for my first time as it was hard enough without having to figure out where to cut for diamonds. Just make sure you have a really sharp knife. Once I put the knife in I didn't lift it out again until the end of the row. I just rocked it gently up and down and moved steadily along. Don't worry if some of the top layer moves around. You can push it all back into place when you finish all the cutting.

    Many posters recommended making 1/2 again the amount of syrup. I didn't do that but I will next time. It seemed like just barely enough. I'd rather have a little extra that I throw out than not enough. I was going to make another half batch after pouring it on but decided to wait until they sit overnight. If they aren't moist enough I'll make some more in the morning. Once the pastry is cold you are supposed to pour the syrup on while it's hot, so it's never late to change that part. Letting them sit for 24 hours before sampling was impossible. They are supposed to be even better if they sit a WEEK. So this would be a great make-ahead dessert. I doubt I'll ever find out about the week part as they won't last that long around here, no way! They also freeze beautifully. I leave them in their cupcake paper and wrap them individually in plastic wrap. That way I can thaw one at a time when I want a treat. Unfortunately I can rarely thaw just one!

    Hello and Happy New Year to all!

     We had a nice Christmas in Chicago and Wisc. with friends and family. 

    Spent New Years here, brought in Chinese food and each of the kids had a friend over.  I haven't had time to get caught up with everyone, just wanted to stop in and say "hi".  Off to run some errands will check back in later.

    Good morning every one

    We had a great time at the TSO concert(Trans Sieberian Orchrestra). They are a mix of several kinds of music.VERY good.

    I have amy 4 legged baby in my lap helping me to type.Smile His name is Romie short for Romeo.

    Not much luck here on the de-christmasing,still have not taken down the trees.Yes we had more than one Christmas tree.

    Yum on the Baklava and the spinach balls.

    How is everyone's weather? We are cold(at least for us) It is 28 degrees here with a wind chill in the teens.And the wind is howling.brrrrrrrrrrrr!

    I think I will make a big pot of soup for dinner.Any suggestions??

    Here are some recipes Cyndi.

     

    French Onion Soup

    Caramelized Onions

    3 tbsp butter

    3 tbsp oil

    5 x large onions, peeled and sliced thinly

    Splash of water

    Salt

    The Soup

    1/2 cup brandy

    3 sprigs fresh thyme

    6 cups Homemade Chicken Broth (recipe from this episode)

    Salt and pepper

    4 slices slices multi-grain bread, cut into rounds to fit bowls, toasted

    2 cups Swiss, Gruyere or emmenthal cheese, grated

    Directions:

    Caramelized Onions

    Toss the butter, oil, onions and water into a large soup pot with a few pinches of salt.

    Cover with a tight fitting lid and let the onions soften over a medium high heat, about 10 minutes.

    When the water has evaporated, remove the lid, turn heat to low and begin to slowly caramelize onions, stirring frequently. This will take about one hour.

    The Soup

    When the onions are a deep golden colour and have shrunk dramatically, add the brandy, thyme and broth.

    Season with salt and pepper and let simmer for 15 minutes.

    Preheat your oven's broiler. Ladle the soup into 4 onion soup or ovenproof bowls and fit a slice of toast over each bowl.

    Sprinkle each evenly with the cheese and place bowls onto a baking sheet.

    Place under the broiler and broil until the soup is bubbling and the tops are golden brown.

    Wild Mushroom Soup

    4 tbsp butter

    2 lb. of any mushrooms, sliced, the wilder the better

    1 x large chopped onion

    1/4 cup dry sherry or Madeira

    1/4 cup flour

    1 tbsp of chopped fresh thyme

    1 x bay leaf

    4 cups of chicken, beef or vegetable stock

    1 cup cream

    salt and pepper

    1 x bunch of flat leaf parsley

    Directions:

    Wild Mushroom Soup

    Melt the butter in a soup pot and add the onions and mushrooms. Sauté for five minutes or so until the mushrooms are wilted and release their moisture.

    Add the wine, thyme, bay leaf and flour and reduce the heat to low. Continue cooking for another five minutes or so stirring constantly and scraping the bottom of the pot.

    Add the stock and cream and simmer for another 20 minutes or so. Taste and season with salt and pepper.

    Serve as is or if your prefer puree all or part of the soup. Sprinkle each bowl with lots of chopped fresh parsley.

    Crockpot French Onion Soup (Kathyf)
    (makes 8 servings, though I successfully halved this recipe)

    3 large onions, sliced (3 cups)
    3 tbls butter, melted
    3 tbls flour
    1 tbls worcestershire sauce
    1 tsp sugar
    1/4 tsp pepper
    4 cans (14 1/2 oz each) condensed beef broth

    Mix onions and butter in crock pot. Cover and cook on hight heat setting for 30 minutes or until onions begin to brown around the edges. Mix flour, worcestershire sauce, sugar and pepper. Stir flour mixture and broth into onions. Cover and cook on low heat setting 7-9 hours (or high heat 3-4 hrs) or until onions are very tender. Ladle in bowls and top with a slice of cheesy broiled french bread (below)

    Cheesy Broiled French Bread

    8 slices french bread, 1 inch thick
    3/4 cup shredded mozzarella cheese
    2 tbls grated parmesan cheese

    Set oven control to broil. Place bread slices on rack in broiler pan. sprinkle with cheeses. Broil with tops 5-6 inches from heat for 2 - 3 minutes or until cheese is melted.

    Baked Potato Soup

    INGREDIENTS

    4 large baking potatoes (about 2-3/4 pounds)
    2/3 cup butter
    2/3 cup all-purpose flour
    3/4 teaspoon salt
    1/4 teaspoon white pepper
    6 cups milk
    1 cup (8 ounces) sour cream
    1/4 cup thinly sliced green onions
    10 bacon strips, cooked and crumbled
    1 cup (4 ounces) shredded cheddar cheese


    DIRECTIONS

    Bake potatoes at 350° for 65-75 minutes or until tender; cool completely. Peel and cube potatoes.
    In a large saucepan, melt butter; stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; whisk in sour cream. Add potatoes and green onions. Garnish with bacon and cheese. Yield: 10 servings.

     Hello everyone!  I hope you all had a very safe and Happy New Year’s Eve and Day!   We had a nice time.  DH took off between Christmas and New Year’s – he went back today.  Unfortunately, he got sick at the end of his time off so he missed the Chinese buffet on Monday night and missed dinner yesterday at my brothers.  I am glad he felt well enough to go in today though. I think that is a great resolution to try more recipes.  I do try a lot more since I have been coming here but if I said “one or two a week” that would be great.  Imagine all the clutter I could get rid of by just trying some of these recipes.  I have stopped printing all the ones I want to try but I still have lots to try from when I first got here.   I really don’t make resolutions but I am trying to drink 8-10 8 oz glasses of water a day.  Did any of you watch Biggest Loser Couples Monday night?  We watched it and the water drinking was one of their tips for weight loss.  So far (just started this morning) I have drank 4 – 8 oz glasses! Redawna, I think those are good resolutions.  You reminded me I decided to lose weight before opening day (baseball) which is March 31 this year.  I plan to lose 15 to 20.  I am one of those that has to have a date in mind so that is why I chose opening day. Amy, any good deals at Michaels?  How’s your Dad? Jill, DH and I were just talking about reading the bible.  Did you see that DVD they are selling on TV now?  I think it is a movie you turn on and you read the bible along with the DVD.   Cyndi, how did the cleaning go?  When I help someone else clean their place it is never as bad as cleaning my own.  The time seems to go a lot faster too. Ellie, sorry the roads were bad and you could not make it to the wedding.   Nancy, how are you feeling?  Last year DD took their tree down while Gavin was shopping with his Dad.  Gavin actually started crying that the tree was down.  This year they made a few deals so it would not be so bad but he was sad to see it go.

    Hello All.  I am going to try to make my previous post easier to read.  Sorry this was such a mess.
