    “ Cookin” Seniors Recipes Dec. 23 – 29

    Just 4 that I found for this week. If I missed some please add them on.

    Cranberry Clusters
    1. 2 cups semi sweet chocolate chips
    2. 2/3 cup dried cranberries
    3. 2/3 cup cashews
    In microwave or saucepan, melt the chocolate chips. Stir in the cranberries and cashews. Drop by teaspoonful onto a waxed paper lined baking sheet. Let sit until set. Can anything be simpler and still be good. Hope you enjoy it.                   Catsgalore

    Delicious Applesauce Cake
    1. 2 cups flour
    2. 1 tsp cinnamon
    3. 1 tsp soda
    4. 1/2 tsp salt
    5. 1 1/2 cups sugar
    6. 1/2 cups butter
    7. 1 tsp vanilla
    8. 2 eggs
    9. 1 cup sweetened applesauce
    10. 2/3 cup butterscotch morsels
    11. 1/2 c nuts
    Topping:
    1. 1/3 c butterscotch morsels
    2. 2 tbsp butter
    3. 1/3 c brown sugar
    4. 1/4 c light cream (used half and half)
    5. 1/2 c flake coconut
    6. 3/4 c nuts
    The first group of ingredients is for the cake and the second group for the topping. Sift flour, cinnamon, soda and salt. Cream butter and sugar. Beat eggs and add applesauce and vanilla to the eggs then add that to the cream mixture alternately with the sifted dry ingredients. Then add butterscotch morsels and nuts. Bake in 9 x 13 x2 inch cake pan at 350 degreese for 30 or 35 minutes. While cake is baking, prepare topping melting butterscotch morsels, butter, and brown sugar over low heat. Stir in light cream, coconut and nutts. When cake is done, pour on topping and place under broiler till frosting gets bubbly, watching closely. Serve in baking dish or pan.Note: I sprayed the baking pan with cooking spray with flour. Also since I ruined my first try at the topping my DD gave me this hint. Start melting the butter before you add the butterscotch morsel and brown sugar and then add the coconut and nuts, it sure worked for her.     CRACKED PEPPER CHEDDAR MUFFINS
    1. 2 cups flour
    2. 1T sugar
    3. 1 tsp baking powder
    4. 1/2 tsp coarsely ground pepper
    5. 1 egg
    6. 1 1/4 cups milk
    7. 2 T vegetable oil
    8. 1 cup shredded cheddar cheese
    In a large bowl, combine the flour, sugar, baking powder and pepper. In another bowl, whisk the egg, milk and oil.  Stir into day ingredients just until moistened.  Fold in cheese. Fill greased muffin cups two-thirds full.  Bake at 375 for 25-30 minutes or until a toothpick comes out clean.  Cool for 5 minutes before removing from pan to a wire rack.  Serve warm- Makes 1 dozen.  Enjoy!                                          Sue

    Place the puff pastry on a greased baking sheet. In a small bowl, beat the egg white and water; brush over pastry. Sprinkle with cheese and salt.     Cut into ten 1-in. strips; twist each strip three times. Bake at 400° for 10-13 minutes or until golden brown. Yield: 10 breadsticks.Source:

    Best Brownies

    1. 1/2 cup butter. melted (l stick)
    2. 1 cup sugar
    3. 1 tsp. vanilla
    4. 2 eggs
    5. 1/2 cup all-purpose flour
    6. 1/3 cup Hershey's cocoa
    7. 1/4 tsp. baking powder
    8. 1/4 tsp. salt
    9. 1/2 cup chopped nuts (optional)
    10. Creamy Brownie Frosting (recipe follows)

    Directions:

    Heat oven to 350 Degree. Grease 9 inch square baking

    pan.

    Stir together butter, sugar and vanilla in bowl.  Add eggs;

    beat well with spoon. Stir together flour, cocoa, baking

    powder and salt, gradually add to egg mixture, beating

    until well blended. Stir in nuts, if desired. Spread batter

    evenly into prepared pan.

    Bake 20 to 25 minutes or until brownies begin to pull

    away from sides of pan. Cool completely in pan on wire

    rack. Prepare Frosting, spread over brownies. Cut into

    squares. About 16 brownies.

    Frosting:

    1. 3 tbsp. butter, softened
    2. 3 tbsp. Hershey cocoa
    3. 1 tbsp. light corn syrup
    4. 1/2 tsp. vanilla
    5. 1 cup powdered sugar
    6. 1 to 2 tbsp. milk

    Beat butter, cocoa, corn syrup and vanilla in small bowl

    until blended. Add powdered sugar and milk., beat to

    spreading consistency. About 1 cup frosting.

    Hershey's Best Brownies

    Ingredients:

    1. 1 cup (2 sticks) butter
    2. 2 cups sugar
    3. 2 tsp. vanilla
    4. 4 eggs
    5. 3/4 cup cocoa
    6. 1 cup a.p. flour
    7. 1/2 tsp. baking powder
    8. 1/4 tsp. salt
    9. 1 cup chopped nuts

    Directions:

    Heat oven to 350*. Grease 13 x 9 x 2 in. baking pan

    Place butter in large microwave safe bowl. Microwave at

    high 2 to 2-1/2 minutes or until melted. Stir in sugar and

    vanilla. Add eggs, one at a time, beating well with spoon

    after each addition. Add cocoa; beat until well blended.

    Add flour, baking powder and salt; beat well. Stir in nuts.

    if desired. Pour batter into prepared pan.

    Bake 30 to 35 minutes or until brownies begin to pull

    away from sides of pan. Cool completely in pan on wire

    rack. Frost if desired. Cut into bars. About 35 brownies.
