    Boneless Pork Loin Recipes

I have not posted since the new was revised. I am looking for recipes for Pork Loin.. I have a 3 LB. one.. I think I could probably get two recipes out of it.. Cooked in two different ways.. I also wonder if you can still just look up recipes the way we use to.. Thanks in andvace for the help..

P.S. Would like these to be main course recipes they don't have to be easy and can be a little harder to do or with some interesting ingredieents.. I have never cooked one of these before just to tell you up front so you might also tell me what you serve with you..

    Thanks again.

This is in my TOH 1999 The Best of Country Cooking.   It is fabulous.

    Cranberry Glazed Pork Roast
    1 t. salt
    1/2 t. pepper
1 boneless rolled pork loin roast (3 lbs.)
    1 c. jellied cranberry sauce
    1/2 c. orange juice
    1/4 packed brown sugar

Combine salt and pepper and rub over roast. Place roast on a rack in a greased roasting pan. Bake uncovered at 350 for 1 1/2 hrs. Combine remaining things in a saucepan; cook over medium heat until sauce melts. Brush a fourth over the roast. Bake 30 min. longer; brush with another fourth of the glaze. Return to the oven for 15 min. or til meat thermometer reads 160-170. Let stand 10 min. before slicing. Serve remaining glaze with roast.

I made this yesterday using a chicken breast.   Yummy....I used Raspberry perserves and have used Strawberry perserves and that is what I usually have on hand.

    Firecracker Barbecued Pork

    6 servings
    Ingredients:
One 2-pound boneless pork loin roast
    1/4 teaspoon salt
    1/4 teaspoon black pepper
    3/4 cup barbecue sauce
    1/3 cup orange marmalade
    1/2 teaspoon hot pepper sauce
    1 teaspoon prepared horseradish

Preheat the oven to 350°F. Season
the pork roast with the salt and pepper and place in a 9" x 13" baking dish.
In a small bowl, combine the remaining ingredients and pour over the roast.
Roast for 40 to 45 minutes, or until the internal temperature reaches 155°F. to 160°F. Let roast sit for 5 to 10 minutes, then slice and serve.
