Soft Caramels....answer please Cinnamama!

    Stick out tongue [:P] Soft Caramels....answer please Cinnamama!

     These are so good! I had someone make them r me. I want to make these myself.  I don't have aandy thermometer yet, so I guess I'll cook by time.  Someone wanted to know can these be made in the microwave?

    I'd like to know  couple things:

    How many cups does this make need soft caramel for another recipe also).

     

    For the pan size  would you reccomend a jelyroll sized?

    How any pounds does this make?  I sure would lik some more awesome one please!....

    Soft Caramels...........

    Tried these this year.....Everyone Loved Them!!!

    So soft and buttery...Took a little longer to reach the temp. but well worth it...Also took time to wrap each one individually... Just like you get in a fancy candy store...A keeper in this family!!  I did not refrigerate at all...turned out great.....Just stored in a covered well sealed container....

    If you’d like to taste a little bit of heaven, give these a try. I made a half batch of this recipe yesterday and all I can say is “wow”!!! The candy is soft, buttery, and full of true caramel flavor. The only thing that I did differently was to add a combo of coarsely chopped pecans and walnuts to the original recipe.     2 cups real butter
    2 pound package dark brown sugar
    dash salt
    2 cups corn syrup
    2 14 or 15-ounce cans sweetened condensed milk
    2 teaspoons vanilla
    2 cups coarsely chopped walnuts and/or pecans, optional (carolinacooker)

    Melt butter in heavy pan. Add sugar and salt. Stir thoroughly. Stir in corn syrup. Mix well. Gradually add milk, stirring constantly. Cook until mixture reaches a gentle boil, again, stirring constantly. Cook and stir over medium heat to firm ball stage, 245ºF, approximately 12 to 15 minutes. Remove from heat. Stir in vanilla. Pour into a large, heavily buttered cookie sheet with sides. Cool and cut into squares. Wrap individual pieces in plastic or waxed paper.

     Try these, I've made them several tiimes and they are so good.

     

    Microwave Caramels

    ½ c. Butter
    1 c. Brown Sugar
    ½ c. Light Corn Syrup
    2/3 c. Eagle Brand Milk
    ½ t. Vanilla

    Mix all ingredients except vanilla.  Put in microwave on high for
    8 - 10 minutes stirring a couple of times, try the soft ball test. 
    Stir, add vanilla and pour in 8 x 8 pan.  Let cool, cut and wrap.

    Rose 51thank you for answering and the recipe.  I appreciate it.  Your recipe sounds really good, and easy too.  Are they also soft and buttery? I need them for others I plan to give to without teeth. Do they stick at all to your teeth?  I am anxious to hear....

    Piggykins, these caramels are the best I've ever had. I have not tried them in the microwave. I would suggest if you are going to try that to cut the recipe in half. It would take a pretty good size bowl to microwave the whole batch. I line  a large jelly roll pan with Reynold's release tin foil OR butter the pan heavily. Since I started using the tin foil (it works great) that is what I use but it has to be Reynold's release or the caramel will stick to the foil. I don't think these caramels are to chewy and they don't stick to my teeth.When it's time to cut and wrap them, I use a buttered pizza cutter. Makes it a little faster to cut. I don't have a short cut on wrapping them. That just takes time. I have also frozen half of a batch. Hope I have answered all your questions. If I can be of any more help, let me know.

    I used to think I had the best caramel recipe until you posted it.  These are so delicious! Stick out tongueYes.  I just thought the microwave might be a littleeasier for me being in a wheelchair.  I think I will just stick to the stovetop.  I know the hardest part of the caramels is wrapping them, what a job Confused.  I don't have a candy thermometer - in the meantime do you think I could cook these by time? Like 15 minutes?

     

    Also I would like to know if you have any other good candy recipes or treats you'd please post.

    This is a keeper recipe..

    It took me longer than the 15 minutes to reach the temperature..I think there was stirring often also...

    They melt in your mouth...a put  a few in the refrigerator a week later and they did get sticky or harder....Everyone liked them better at room temperature.

     I put nuts in half the pan...I used colored plastic wrap which I had...I wrapped the ones with nuts in a different color than the plain ones...Sometimes it was hard to see if they had nuts, and not everyone here likes nuts.

    I wandering what to wrap them i! Now do you buy pre-cut squares or d you cut your own and what size....

    They say to wrap caramels in wax paper or plastic wrap....I just judged the size....but probably 2 x 3 inches or 3 x 3....

     Takes awhile to wrap them...I also used a buttered pizza cutter...and a butter knife with a bit of butter on it....It is not a fast process ,,,the wrapping...But they are really worth it....Everyone, but my GS liked them....He is not a caramel person....

    I don't have any problems with these sticking to my teeth and yes they are soft and buttery.  I cut "Press N Seal" ...it sticks together and you can clearly see through it.

    I use parchment paper when making any kind of candy that goes in the pan. I first butter the pan and maybe grease the paper too. I found it to be so much easier to get the candy out and cut and it has a professional looking presentation too.

    I use reynolds release tinfoil and line the pan. It works great and they don't stick to it. It has to be Reynolds RELEASE not regular tin foil. You can wrap them in plastic wrap or waxed paper or even the Reynolds Release. I have never made these in the micro or with out a thermoter but you could use the water test if you don't have one. I invested in a good candy thermoter and that is what I use.

    I have a really good soft fudge recipe too if anyone wants it.

    Guess I am gong to have to invest in a good candy thermometer too! I haven't tried the quick releae from reynolds - guess  better start too....

     Over the Christmas holidays.....

    I mentioned in another place....I did keep them at room temperature...the best flavor!!  After a week, I did put some in the fridge...not as good but still good...

    I noticed mine after more than a week, at room temperature, they did get really soft and kind of grainy in flavor...

    I might try and freeze some next time and see how they taste when thawed....

    These really taste like when you go to a fancy, high priced candy store....A keeper recipe....and easy to boot...
