    Gaudrey's Rum Tum Taters (Sweet Potatoes)-Best one I've found since mine!

    I have used the same Sweet Potato casserole for many, many years and shared it here with you all many times and many of you have made it a favorite too. Well, this year for the holidays I decided to branch out a little and I made Miss Gaudrey's (Grace's) Rum Tum Tater Casserole and it was such a hit that my neices were fighting over the leftovers! Really, truly awesome, so if you haven't tried this recipe, you must. It's similiar to mine in that it uses the Rice Krispie topping, but it's jazzed up with some new and different flavors that just put it over the top. Please try this! Thank you Grace!

    Gaudrey's Rum-Tum 'Taters

    Thanksgiving 2007

    4 cups of cooked, mashed sweet potatoes
    1 cup light brown sugar, lightly packed
    1/3 cup butter or margarine
    1/3 cup dark rum OR 1 teaspoon McCormick's Rum flavoring (This is a MUST. Don't substitute any other brand of flavoring, if used.)
    1/2 cup Hazelnut flavored liquid coffee creamer (another must)
    2 eggs, beaten

    Preheat oven to 350°. Combine and pour into a greased or sprayed baking dish. Top with the following:

    1/2 cup light brown sugar, lightly packed
    2 cups Rice Krispies
    1 cup lightly toasted chopped hazelnuts or almonds  (I used almonds)
    1 stick of butter or margarine, melted

    Combine brown sugar, cereal, and nuts. Add melted butter and toss to mix well. Spread evenly on top of sweet potatoes. Bake 30 minutes, or until bubbling hot all through and topping is browned. Makes about 8 to 10 servings.

    Wow, this sounds like both a delicious side dish and a dessert. I could see a scoop of ice cream on top and serve it as dessert.

    You know, Ro, you could easily do that. My mind won't let me eat Sweet Potatoes as a real dessert unless they're baked into a cake or a pie, but this is just as rich and sweet as any cake or pie out there. It's absolutely awesome. The creamer, the rum and the almonds add a very special dimension to the casserole. I'm sure hazelnuts would be good too...Grace says they're a favorite nut of theirs and that's why she came up with this particular variation.

     Star, I just got back from grocery shopping and picked up some hazelnut creamer. I've got all the other ingredients. I'm going to serve this as dessert and not mention to my family that it is really a side dish. Shhh! I'll report back with their comments. I do have hazelnuts at home, so I'll use those.

    Hi Star, thanks for posting this here! I have it printed off to try very soon! I made sooo many sweet potato casseroles over the years trying to get the "one" for Steve and when I made yours, he said "this is it!" so I've been making yours.  BUT this one is very similar and looks interesting too, so I shall put this next in line!

     

    Grace always has the best-est recipes!

    If you're still here, Star.....I'm heading out and thought I'd pick up the ingredients for this now that my stove is back among the living! I think I'll make up a recipe of this as a test drive for the next holiday dinner.

     

     Did you use the real stuff or the rum flavoring?

     

    Think I'll ask Grace too what she usually uses. O, Grace....!

    Dark rum is definitely the way to go [unless you're Baptist, which I am! Shhhhhhhh! LOL]. McCormick's is a good second choice [and better to use when taking this to a church dinner, which I do!] Does that answer the question? Angel

    You're so funny, Miss Chef! I hope the ruse worked....and I cannot wait to hear what you think about these....I just loved them, as did the girls.

    Susie, Miss Grace just answered you as far as what she used. I always prefer dark rum in things like this and didn't have any, but I did have the rum flavoring, so that was what I used and it was just delicious, so in my opinion, it works fine. I was also serving it to a bunch of Baptists, LOL! :).....Now, you made me laugh Grace. My nephew in law is a part time minister, but I think he would have tried it even if I had put the rum in it, :). Anyway, awesome recipe. I know Steve will love it.

    I tried this yesterday and it was delicious..had all the ingredients on hand as I was so sick at Christmas that I didn't get to cook my normal dinner....thank you Star for posting it....I used the dark rum and it was a hit....

    Kathy, thanks for the review! Hope you're feeling better now! We're going to be doing low carb for a while, but this is on my list to try real soon!

     

    Think I'll use the real thing too after hearing from Grace -- thanks, Grace -- and Star! Not cooking for Baptists here, so no worry!
