     Crispy Potato Cubes Recipe

     

    Crispy Potato Cubes

    Outstanding -- crispy on the outside....tender on the inside!

    Source_ Taste of Home

     

    • 1/3 cup all-purpose flour
    • 3/4 teaspoon salt
    • 1/2 teaspoon dried thyme
    • 1/2 teaspoon dried marjoram
    • 1/8 teaspoon pepper
    • 5 medium potatoes, peeled and cut into 1-inch cubes
    • 1/4 cup butter, melted
    • 1 garlic clove, minced
    • 1 bay leaf

     

    • In a large resealable plastic bag, combine the flour, salt, thyme, marjoram and pepper. Add potatoes; seal bag and shake to coat. Pour butter into a 13-in. x 9-in. x 2-in. baking dish; stir in the garlic. Add potatoes and and bay leaf. 

    •     Cover and bake at 450° for 20 minutes. Uncover and stir; bake 15-20 minutes longer or until potatoes are lightly browned and tender. Discard bay leaf. Yield: 4 servings.

     Linda, those look and sound delicious. I've never floured my potatoes when I've roasted them. I'll make this soon. Thanks for the R&R.

    Thanks, Linda - I'll definitely try these.  Sounds yummy - not sure I've ever put marjoram and thyme together in the same recipe, but I trust any recipe you post!

    You have to try the whole meal, Linda, it has become one of my favorites! I originally wanted to try only the Sausage with Apple Sauerkraut from that issue of TOH (Oct./Nov. 2006) but ended up making the complete meal, including the Green Beans with Walnuts. I do omit the bay leaf with the potatoes because I thought it might be a bit strange. What's your opinion?

    Just happen to have my magazine in front of me so here you go!

     

    Sausage with Apple Sauerkraut

    1 medium sweet onion, sliced

    3 T. butter

    2 medium apples, peeled and shredded (I use 3)

    1T. lemon juice

    1 can (8 oz.) sauerkraut, rinsed and well drained (I use a 1 L jar - Canada)

    1/2 c. unsweetened apple juice (I add the contents of a small juice box)

    1 t. caraway seeds

    1/2 t. fennel seed, crushed (I omit this)

    1 pkg. (16 oz.) smoked Polsh sausage (I use 1 1/2 lb. Kielbasa)

     

    In large skillet, saute onion in butter for 15 minutes or until lightly browned. In a bowl, toss apples with lemon juice. Add apples and remaining ingredients except sausage to skillet. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. Meanwhile, heat sausage according to package directions; cut into slices and serve with sauerkraut. Yield: 4 servings.

     

    Note: I slice and add the kielbasa to the skillet to heat it through. Because of my changes I end up with 5 or 6 servings.

     

    Green Beans with Walnuts

     

    1 package (16 oz.) frozen cut green beans

    1/4 c. chopped walnuts, divided

    1/4 c. teriyaki sauce

    2 T. butter, cubed

     

    In a 1 1/2 qt. microwave-safe dish, combine beans, 2 T. walnuts teriyaki sauce and butter. Cover and microwave on high for 3 minutes; stir. Cook 5-6 minutes longer or until beans are tender. Sprinkle with remaining walnuts. Yield: 4 servings

     

    If you like kielbasa and sauerkraut this will be right up your alley! Enjoy!
