    recipe for chicken and gravy 

    I am one of those people who loved the old site, would visit it regularly but only wrote in a time or two.  There was a great recipe by daddy cricket(?) I think for chicken and gravy that was real popular.  I finally found the favorite listings but could not locate this recipe.  Also could not find Linda chicken's favorite recipes.  Can someone help me with this?  I think this recipe was "my wife's chicken and gravy"

    Oven Fried Chicken with Country Gravy

    1-3lb. cut up frying chicken (8 pieces)
    1/4 cup vegetable oil
    1/4 cup (1/2 stick) margarine
    1 heaping cup flour
    1 teaspoon paprika
    1/2 teaspoon salt
    1/2 teaspoon seasoned salt
    Black pepper to taste
    1/2 teaspoon garlic powder

    Wash chicken, and pat dry with paper towel. (My wife soaks the washed chicken in salt water for 15 20 minutes).
    Preheat oven to 425.
    Place vegetable oil and margarine in shallow baking pan, and set in oven to heat and melt.
    Combine flour and seasonings. Roll chicken pieces in flour mixture.
    Remove hot pan from oven and arrange chicken pieces on it, skin side down, do not crowd.
    Place in oven and bake for 30 minutes. Turn chicken so that skin side is up and continue baking-20-30 minutes until nicely browned and juices run clear.
    Remove to a platter and keep warm (at least 10 minutes).
    Country Gravy
    Scrape baking pan and place 3 Tablespoons of the accumulated cooking fat and browned bits into a sauce pan. Stir in 3 Tablespoons flour and cook 1-2 minutes until well combined. Stir in 2 cups milk and continue cooking and whisking until gravy boils and thickens. Cook about one minute. Season with salt and pepper if necessary.

    4 pounds Chicken Thighs without skin -- ready to cook
    2 tablespoons Butter or Margarine -- melted
    1/2 teaspoon Black Pepper
    1/2 teaspoon Salt
    1 ounce Italian Salad Dressing Mix -- low salt
    1 can Condensed Cream of Chicken soup
    8 ounces Cream Cheese -- cubed
    1/2 cup Chicken Broth
    1 large Onion -- chopped
    2 tablespoons Chicken Broth -- to cook onion
    2 cloves Garlic -- minced

    Brush chicken with butter and layer in crock pot with dry Italian seasoning mix sprinkled on each layer. Cover and cook on low for 6-7 hours. About 45 minutes before done, brown the onion in the chicken broth and then add the cream cheese, soup, salt & pepper and remaining chicken broth to the saucepan. Add the minced garlic and stir all ingredients until smooth. Pour sauce mixture over chicken in crockpot and cook an additional 30-45 minutes. Remove chicken to platter and stir sauce before putting in gravy bowl.

    OVEN RECIPE
    Cut boneless, skinless chicken breasts into serving size pieces. Sprinkle with dry salad dressing mix. Brown chicken in skillet with a little butter. Remove chicken to casserole dish. Add the onion to the skillet and brown. Add other ingredients to skillet to make sauce. Pour sauce over the chicken, cover and bake at 350 for 30-45 minutes. Serve over noodles or rice.

    STOVETOP RECIPE
    Prepare as for oven recipe, browning chicken in skillet. Remove chicken, add onions and sauté . Add other sauce ingredients, return chicken to skillet with the sauce. Cover the pan and cook over low heat for 20 minutes.

    Thanks guys!   This is the one I was looking for by foodguy.  Maybe I will get brave and participate instead of just reading!

    Thanks for the Post... Daddy Krickets sound like one I want to try.

    Cheaperbythedozen... jump on in I am trying to learn computers as well as this board. Lots of people help you out.. It gets a little easier after your on for awhile. Hope to talk again.. bdett

    Sometime ago I found "foodguys" recipe to fry chicken in the oven in an iron skillet.  I left the recipe lay on the cupboard and tried it a few nite ago.  It was absolutely wonderful, as well as an easy way to fry chicken.  I did not make the gravy though.

     I'm kinda in a rut, always making the same old chicken recipe.  Can't wait to try both of these --- big question is which one first?  Confused
