    Corn Flakes?

    I'm looking for different recipes that use corn flakes. My DH bought 4 boxes, (almost free after coupons), so we are trying to think of ways to use them other than just breakfast.

    Here's one in my 'to try' pile. 

    Crunchy Swiss and Ham Appetizers

    Country Woman

    We farm 2,000 acres and raise a few thousand chicken, so I'm often too busy to cook much in the summer. These appetizers are quick and easy, though, and perfect for hot days when you want to eat light. During the winter, when we have more time to entertain, they're also a great hit with guests.

    2 cups very stiff mashed potatoes
    2 cups finely chopped cooked ham
    1 cup (4 ounces) shredded Swiss cheese
    1/2 cup mayonnaise
    1/4 cup minced onion
    1 egg, well-beaten
    1 teaspoon prepared mustard
    1/2 teaspoon salt
    1/4 teaspoon pepper
    3-1/2 cups corn flakes, crushed

    Combine all ingredients except corn flakes; chill. Shape into 1-in. balls and roll in corn
    flakes.


    Place on greased baking sheet and bake at 350° for 25-30 minutes. Serve while hot.

    Yield: about 8 dozen.

    BUTTERSCOTCH CORN FLAKE CANDY

    1/2 cup peanut butter
    12 oz. butterscotch chips
    5 cups corn flakes

    Melt peanut butter and butterscotch chips in top of double boiler.

    Crush corn flakes just a little, then put into greased bowl.

    Pour melted mixture over top and mix.

    Dip out in small clusters onto waxed paper and let cool.

    krunchy kiss cookies

    36 hershey kisses
    1/2 cup light corn syrup
    1/4 cup packed light brown sugar
    1 cup peanut butter
    1 tsp vanilla
    2 cups rice cereal
    1 cup slightly crushed corn flakes

    Stir together corn syrup and brown sugar in med. saucepan. Cook over med. heat, stirring constantly until boiling. Remove from heat.

    Stir in p.b., vanilla and cereals. Stir until well coated.

    Drop by teaspoonfuls onto ungreased cookie sheet. Loosely shape into balls. Gently press kisses in center of each ball.

    Store in covered container at room temp.

    Cornflake Wreath Cookies

    1/2 cup butter
    3 cups miniature marshmallows
    1/2 tsp almond extract
    1/2 tsp vanilla extract
    1 tsp green food color
    4 cups corn flakes
    red hot candies
    silver dragées


    Melt butter, add marshmallows, stirring until all marshmallows are melted. Add extracts and food coloring; stir until it is a uniform green color. When mixture is smooth, add corn flakes; mix well but gently so as not to crush the cornflakes. Form into wreath shapes on sheets of waxed paper, decorate with red cinnamon candies and silver dragées. Let cool.

    Wow, thanks for the great choices and the quick reply! He was so proud of himself, I just couldn't stand to just stick them in the cupboard.

    I don't have a recipe to give you but I've used crushed corn flakes to coat chicken before baking (or frying).  I've also cut refrigerated tube biscuites in half, rolled them shaped like a bread stick. Then roll, or brush, them in a little melted butter or margarine & then into crushed seasoned corn flakes - season them with whatever herbs/seasonings you prefer...we like granulated garlic, parsley or dill - you can try red pepper flakes...your favorites...then bake them at the temperature recommended on the package.  Crunchy, flavored bread sticks.

    Corn Flake Cookies

     

    1/2 cup margarine

    1 cup sugar

    2 eggs

    1 cup coconut

    1/4 tesp.salt

    1 cup flour

    2 tesp.baking powder

    1/2 tesp.vanilla

    2 cups corn flakes

    Cream margarine and sugar,add eggs and vanilla,mix.Combine dry ingredients together.Add dry ingredients to creamed mixture,stir in corn flakes(do not mix too much)Bake in 350ºoven--10-12 minutes or until lightly browned.

    I know this is after the holidays...but these are soo good and fun to make...keep this one handy!!

     

    Corn Flake Wreaths

    1/2 cup margarine
    1 package regular marshmallows (10 oz; about 40)
    1 tsp green food coloring
    6 cups Kelloggs corn flakes
    red cinnamon candies
    vegetable cooking spray


    In a large saucepan, melt margarine over low heat
    Add marshmallows and stir until completely melted
    Remove from heat
    Stir in food coloring
    Add corn flakes; stir until well coated
    Using 1/4 cup dry measuring cup coated with cooking spray, evenly portion warm mixture
    Using buttered fingers, quickly shape into individual wreaths
    Dot with cinnamon candies

    Yield: 16 wreaths

    COLONEL MUNCY'S OVEN FRIED CHICKEN

    10 chicken breasts
    2 c. sour cream
    1/4 c. lemon juice
    4 tsp. Worcestershire sauce
    2 tsp. celery salt or celery seed
    2 tsp. paprika
    4 cloves garlic or 1/2 tsp. garlic powder
    2 tsp. salt
    1/2 tsp. pepper
    2 tsp. poultry seasoning
    2 tsp. parsley
    1/2 c. melted butter
    Corn flake crumbs

    Cut chicken breasts in half. Remove skin and excess fat. Combine all ingredients except butter and corn flakes. Stir well.
    Add chicken, making sure each piece is covered well. Let stand overnight in refrigerator.

    Remove chicken from mixture. Blot off excess mixture. Dip in melted butter, roll in corn flake crumbs. Place in single layer on a shallow cooking pan. Sprinkle with additional parsley
     
    . Bake at 375 degrees for 25 to 30 minutes or until chicken tests done.

    Cornflake Chicken

    1 cup crushed cornflakes
    1 envelope zesty Italian salad dressing mix
    2 tablespoons grated Parmesan cheese
    1 teaspoon dried parsley flakes
    6 chicken breasts halves, skinned and de-boned
    1/4 cup milk

    Combine first 4 ingredients in a shallow dish. Dip each chicken breast in milk; roll in crumb mixture. Place chicken in a lightly greased 13 x 9-inch baking dish. Bake at 375 degrees F for 18 minutes or until done.

    Serves 6.

    Years ago my mom used to make Crushed Corn Flakes Crispy batter coating for Chicken and Fish bake & frying (long before "Shake and Bake" was even thought of.  Very similar result, but we preferred her preparation to the S&B product and encouraged her to stay with it).

    She also used crushed Corn Flakes as a topping for several casserole dishes that were family staple favorites.

    Swiss Chicken and Green Bean Amandine
     
     
    1½ cups rice
    1 can French-fried onions
    1cup sliced almonds
    ¾ cup milk
    1½ cups (6 ounces) shredded Swiss cheese
    14½-ounce can French-cut green beans
    1 can mushroom soup
    4 skinless boneless chicken breast halves
    ¼ to ½ cup melted butter
    ½ cup grated Parmesan cheese
    ½ cup crushed cornflakes


     

          Combine rice, half the onions, ½ cup almonds, milk, ½ cup Swiss cheese, undrained beans, and soup.  Put in 12x8 or 8x8 dish.  Pound chicken flat.  Divide remaining Swiss cheese among each piece.  Roll jelly-roll style and arrange on rice mixture.  Brush each with melted butter and drizzle rest of butter over rice.  Mix almonds, Parmesan, rest of onions and cornflakes. Before baking time is finished but after rice is cooked, scatter on top.  Bake at 350º for 35-40 minutes, or until chicken is tender.
    I used frozen green beans.

    Surprise Dogs

    Better Homes and Gardens 


     

    1 pound ground beef
    ¼ cup finely crushed corn flakes
    ¼ cup sour cream
    2 tablespoons chili sauce
    2 tablespoons chopped ripe olives
    2 tablespoons chopped onion
    1 tablespoon snipped parsley
    ½ teaspoon salt
    Dash pepper
    20 pitted ripe olives
    5 coney or hot dog buns, toasted

     

     

          Combine first 9 ingredients.  Shape into 5 logs to fit buns.  Press a row of olives into center of each log, molding meat around olives.  Broil on grill or over hot coals, turning occasionally, 12-15 minutes, until done.  Serve in buns.

    Peanut Crunch Bars

    Newspaper

     

    ½ cup butter
    1 cup brown sugar
    1 cup flour
    ½ teaspoon soda
    ½ teaspoon baking powder
    2 eggs
    3 tablespoons water
    1 teaspoon vanilla
    1 cup corn flakes1 cup peanuts
    ½ cup rolled oats

     

          Combine first 8 ingredients.  Beat for 2 minutes.  Fold in corn flakes, peanuts and oats..  Spread in greased 9x13 pan.  Bake at 350º for 20-25 minutes.  When cool spread with orange frosting.
