    Seven Layer Fiesta Dip & Simple Guacamole recipe

    Not usually a fan of refried beans, I have to admit that this recipe most definitely surprised me at how really good it is!! I'm know there are many versions of this same recipe out there. But for me this one will be the one I make again, and again, and again! :o) Enjoy!

    Seven Layer Fiesta Dip

    1 (16 oz.) can refried beans
    1 (16 oz.) container sour cream
    1 pkg. taco seasoning (I prefer Ortega®)
    2 c. (8 oz.) shredded cheddar cheese
    1 c. prepared guacamole (I make my own. Recipe follows!)
    1 c. chopped tomato
    ½ c. sliced green onions
    ½ c. sliced black olives
    tortilla chips

    Spread refried beans in shallow serving dish. Mix sour cream and taco seasoning 'til well blended. Spread over refried beans. Top with shredded cheddar cheese, dollops of guacamole, tomato, onions and black olives. Serve with tortilla chips.

    And in the event you might ask? Here's the guacamole I usually make.

    Simple Guacamole

    2 ripe avocados
    1 sm, sweet onion, finely chopped
    1 clove garlic, minced
    1 small tomato, finely chopped
    1½ Tb. fresh lime juice (from 1 lime)
    salt and freshly ground black pepper to taste

    Peel avocados; remove pit;. Peel and mince garlic and onion. Chop tomato. Mash avocado and add remaining ingredients and mix well. Chill and serve.

    Layer Fiesta Dip Recipe

     

    2 x 8 oz. Cans or 1 large Can Refried beans
    2 x 4 oz. can Jalapenos; or chilies
    2 Tomatoes; or more
    1 Onion; (optional)
    16 oz Sour cream
    2 Med to large Avocados
    2 pkg. Taco seasoning
    2 cups Shredded cheese; (1 mozzarella & 1 cheddar)
    4oz (or more) Black olives

    Mix the refried beans, chili's and taco seasoning together . Spread evenly into 10" pie plate or square cake pan. Next, add a layer of well mixed/mashed avocados. Then, put a layer of sour cream over on top. Next, sprinkle cheeses on top. Next, cut up tomatoes and layer on top. Last, sprinkle with chopped up olives.

    Put in the oven on a low heat until the cheese is melted. Serve with Taco chips.

     Hi back, Twinkle!! As I said, refried beans have never gotten me very excited about any recipe! But this is one I will definitely be making an exception for!!

    YUM.  Thank you for both recipes.  They sound delicious and I can't wait to try them.

    Mmmmmm...love this dip - has to be good for you too with all the veggies on top LOL!!  One of our favorites!
