Trailmom, Here is the recipe you ask for. No bananas in the bread pudding.
Bread Pudding
Grease a 8inch baking dish
Layer 5 Cups of cubed bread in dish, sprinkle 1/4 cup raisins over the bread. (optional) In a mixing bowl combine 4 eggs, 1 1/4 Cup milk 1/2 Cup brown sugar, 1/2 tsp. ground cinnamon and 1/4 tsp. ground nutmeg, 1/2 tsp grated lemon peel.Beat well and pour over the bread.
Bake at 350 degrees for 30 min. uncovered. Cover with aluminum foil and bake 10 min. more.
Sauce:
In skillet or saucepan combine 6 Tbsp. butter, 8 Tbsp. brown sugar, 6 Tbsp. evaporated milk or heavy cream. Cook , stirring until brown sugar is dissolved. Remove from heat and add Vanilla and stir well, add 2 bananas cubed. Stir to heat the bananas through. Spoon over each serving of Bread Pudding.
Rum Sauce:
I use my usual vanilla sauce substituting rum extract for the vanilla. Simple but very good.
