    ~!~ Gooey Coconut Bars ~!~

    Gooey Coconut Bars
    1 (18.25 ounce) box French vanilla cake mix
    2 eggs
    1/2 cup (1 stick) butter or margarine, melted
    8 ounces cream cheese, softened
    2 eggs
    1 teaspoon vanilla extract
    1/2 teaspoon almond extract
    1 (16 ounce) box confectioners' sugar
    1 1/2 cups shredded coconut

    Heat oven to 350 degrees F. Spray a 13 x 9-inch baking pan with Pam.
    Combine first 3 ingredients.
    Press into bottom about 1 inch up the sides of prepared baking pan.
    Mix together next 6 ingredients and pour over crust.
    Bake for 45 minutes, or until golden brown on top.
    Let cool completely to set,  and cut into small squares.

    These sound Yummy!

    Printed it up & will try to make them tomorrow! Im hoping I have a white cake mix but if not, I might try it with a choc. mix.

    Oooh Kate do those ever sound good! I will try them as soon as I can.  I just took a pan of Apple Dews out of the oven.  Thank you for the recipe....

    Kate, how neat - I was just getting ready to post a review of these.  I had copied this when you first posted, and finally got to make it last week for my dozen canasta buddies. I served it with vanilla ice cream and strawberries.  Fabulous!  And rave reviews from everyone.  I've made the regular, lemon, pumpkin, and chocolate gooey cakes and now adding this one to my list.  The pumpkin has been my favorite so far, but this one is right up there with it now.  Thanks!

    Hey Piggykins, I've heard about these appledews...actually I've just seen them mentioned a couple of times. What are they? Do you have a recipe you can post?

    Shannon, the Apple Dews are a recipe that Linda C. made famous on the board a couple of years ago. I think most of us made them around that time, so there are many "tweaked" versions running around, but I think this was her original. They're very delicious!

     

     

    Apple Dew (The original recipe)

     

    2 packages crescent rolls

    2 Granny Smith apples

    2 cups sugar

    2 sticks butter

    1 tsp. vanilla

    10-oz. Mountain Dew

     

    Peel apples and slice into 8 sections. Separate crescent rolls and roll 1 apple slice in each. Place in a 9x13-inch baking dish. Melt butter, add sugar and vanills; stir well and pour over rolls. Finally add Mountain Dew. Bake at 350 for 40 minutes. This recipe is SO easy, it took 10 minutes to prepare and it's SO good. Serve warm with a little ice cream on top.

    I have wanted to make this also but alas - no french vanilla  cake mix around here.  Can you use a white cake mix and french vanilla coffee creamer or something? What would you suggest?....

    Piggykins, I am sure regular white cake mix would work fine. I will look for the french vanilla cake mix today after work, because I need to stop at the grocery store. If I find it, I will send a box to you! It's my favorite white cake mix & I know Hy-Vee always has it in stock.... (unless it's been discontinued????)

    Apple Dew (The Best & #1)

    2 cans Pillsbury Crescent Rolls

    2 Large fresh apples

    1 1/2 cups light brown sugar

    2 sticks butter

    1 teaspoon vanilla

    1 teaspoon lemon (added Zest) or 2 tablespoons Lemon Juice)

    1 teaspoon Saigon Cinnamon

    1 can Mountain Dew (12-ounce or 1 1/2 cups)

    1 1/2 cups of toasted pecans

    Roll 2 pieces of fresh apples in Crescent roll, starting with the large end. Put in pan (9x13") sprayed with non-stick oil.

    Boil together: Butter and brown sugar for about 7 minutes, remove from heat and add Cinnamon, lemon and vanilla. Pour over dumplings. Sprinkle about 1 1/2 cup of toasted pecans over the top. Pour 1 can Mountain Dew over dumplings. Bake for 30 minutes @ 350 degrees. Serve with vanilla ice cream, if desired, we did not desire!

     

    The above recipe is the one we used.  I tried the one star posted, but this is our favorite....

    I forgot to ask because  of the cream cheese in this bars do they need to be kept in the refrigerator?....

    Piggykins, I'm not Kate, but I've never refrigerated any of the gooey cakes (or bars).  And no problems with them after even 3 days.  They just may not last long enough, anyway. Stick out tongue

    Oh...Kate!!  These sound really good....now I'm gonna have to make them...a question, tho...how many cups is in a 16 ounce box of confectioners' sugar?

    *brown 1 pound 2 1/4 cups firmly packed
    *confectioners', unsifted 1 pound approximately 3 3/4 to 4 cups
    *granulated 1 pound 2 1/4 cups
