I made a wonderful loaf of bread last night. I used a recipe posted by Crea and Maybrie, but of course, I tweaked it. LOL Guess you could call mine Banana Apple Pie Bread.
I only had one apple, but I had two ripe bananas, so I fine-chopped the apple and mashed the bananas. I omitted the raisins and just used a touch of Saigon cinnamon. I had to bake it about 12 minutes longer for the center to get done.
The recipe instructions don't mention the eggs, so I stirred them into the mixture before adding the flour.
It is very good, especially with a cup of coffee this morning. DH loves it and is on his second piece already. LOL
APPLE PIE BREAD

1/2 c butter, softened
1 c sugar
1/4 c buttermilk or sour milk
2 tsp baking powder
2 eggs
1 tsp vanilla
2 c flour
1/2 tsp salt
1 1/2 tsp cinnamon
2 c shredded peeled apples (about 4 medium)
1 c chopped walnuts or pecans
1/2 c raisins (optional)
Streusel-Nut Topping
1/4 c brown sugar
3 TBSP flour
2 TBSP butter
1/3 c chopped walnuts
Oven 350. Grease bread pan.
In large bowl beat butter, then beat in sugar.
Add buttermilk, eggs and baking powder, beat until
combined. Add flour and salt. Stir in apples,
nuts and raisins. Spoon into pan. Sprinkle with
topping. bake for 60-65 minutes. Cool, on
wire rack.
Streusel Nut Topping:
In small bowl combine brown sugar and flour.
Cut in 2 TBSP softened butter. Stir in walnuts.
** to make sour milk place 3/4 tsp lemon juice
in a measuring cup add enough milk to make
1/4 c total liquid. Stir. Let mixture stand for 5
minutes before using.
