    REC: Wet Burrito Casserole

    Wet Burrito Casserole

    1 1/2 lb ground chuck
    1 small can refried beans
    1 (8 oz) can tomato juice
    1/4 cup diced green pepper
    1 TSP cumin
    1 small chopped onion, dried onion, or minced onion
    1 to 2 TBSP chili powder (may be omitted if want to)
    1 small jar brown gravy
    1 (10 oz) can mild enchilada sauce
    12 oz grated cheddar cheese
    1 package large soft burrito shells

    Brown meat with cumin and onion. Add green pepper, chili powder, tomato juice, and refried beans. Cut soft burrito shells into fourths and put in 2 piles. Put 1/2 meat mixture on bottom of 9 x 13 in. pan. Lay 1 of the piles of burrito shells over meat. Sprinkle with 1/4 of cheese. Repeat layers (meat, shells, cheese). Mix enchilada sauce and brown gravy. Pour over top of all. Sprinkle the last 1/2 cheese. Bake at 350? until heated through, approximately 30 minutes. Leftovers will keep well.

    what is a soft burrito shell? Is it a flour tortilla?

    yep, a soft burrito shell is a flour tortilla. sorry, i should have typed that instead. we use the fat-free kind and they work fine.

    I never heard of a wet burrito casserole with brown gravy before.
    This is one I make and enjoy.

    Wet Burrito Casserole

    1 lb. lean ground beef
    1/2 medium yellow onion chopped
    1 pkg. taco seasoning
    Flour tortillas
    1 (16 oz.) can refried beans
    2-3 Cups shredded mild cheddar cheese
    1 (10 3/4 oz.) can cream of mushroom soup
    8-oz. carton sour cream, divided

    Preheat oven to 350° F.
    Brown hamburger and onions; drain. Add taco seasoning (prepare as directed on taco seasoning package). Add refried beans.
    Mix soup with 4 ounces of sour cream. Spread enough of the sour cream mixture to cover the bottom of a casserole dish.

    Put meat into tortillas. Wrap like a burrito and place seam side down in casserole dish. Put the remaining sour cream on top of the burritos. Sprinkle cheese over top and bake, uncovered, at 350 degrees F. for 20 to 30 minutes.
    You can garnish with chopped green onions, chopped tomatoes, remaining sour cream, and picante sauce if you like.

    Note: Substitute low fat sour cream and mushroom soups, as well as the cheddar, with no apparent loss of flavor.
