    Low Carb Chat Feb 2

    Good morning all!

    Hope you have good plans for the weekend- and decent weather to do it in!

    We've just come off of an ice storm...very tricky underfoot, but the roads not too bad. A neighbor invited a few of us in for a mini wine tasting last night. Very nice...the wine, just OK. Smile

    She had been sent this as a wine of the month kind of thing, and I knew someone had probably paid way too much for the wine. But, she was a gracious hostess, and she was happy, so I wasn't about to complain about wine, good people and snacks!

    I'm making the famous "heroin" wings for tomorrow night. I've never made them, so I'm anxious to do it!

    It'll just be DH and me, so it'll be rather low-key.

     Hello Margaret, I haven't tried the chicken wings since I am not much on Chicken.

    Wine tasting is more in my line, LOL

    We are still digging out from all the snow, You be careful on that ice.

    Well I am taking it easy today so I might get a book to read and a cuppa tea.

    Just checking in... Sunny, Bright blue sky here...

    but I've heard the groundhog saw his shadow... so it will be Easter before we have spring.  Mind you, up here, we usually don't have spring till well after Easter even if that groundhog doesn't see his shadow.  LOL  But that's Alberta.

     

    Normal Saturday chores happening here...  and leftovers for supper.  Made meatloaf for supper last night and it was so good.  Looking forward to having some more of that today.

    Getting ready for the big game tomorrow!  I made this recipe during the holidays....and thought how it's perfect for the Super Bowl.  I am sharing it and hope you ladies like it.

    Spicy Nut Mix

    Serves: 20

    Details:

    An outrageous blend of nuts, soybeans, and spices makes a supercharged snack that provides an energy boost. Don't be put off by the number of ingredients — the mix takes just 5 minutes to put together. We recommend packing small amounts of the cooled mixture into resealable bags for quick grab-and-go snacks.

    Tip:

    Roasted edamame is available at supermarkets and specialty stores. If you can't find it, just add more of any other nut to make 5 cups.

    Ingredients:

    • 2 teaspoons ground cinnamon
    • 2 teaspoons ground ginger
    • 2 teaspoons ground cumin
    • 2 teaspoons salt
    • 1 teaspoon chili powder
    • 1/4 teaspoon ground cloves
    • 2 large egg whites
    • 1 cup unsalted soy nuts
    • 1 cup roasted edamame
    • 1 cup pecan pieces
    • 1 cup walnut pieces
    • 1 cup raw almonds
    • 1/4 cup granular sugar substitute

    Nutritional Information:

    153 calories
    13 g total fat (1 g sat)
    0 mg cholesterol
    6 g carbohydrate
    6 g protein
    2 g fiber
    243 mg sodium

    Directions:

    1. Preheat oven to 225° F. In a small bowl, add first 6 ingredients and blend. In a large bowl, whisk egg whites until foamy. Whisk in spice mixture. Add nuts and sugar substitute; toss to coat.
    2. Evenly divide nut mixture between two nonstick baking sheets, preferably with sides. (If sheets are not nonstick, line them with parchment paper.) Spread nuts to evenly cover sheets. Bake 1 hour 5 minutes, until nuts are dry and toasted. Stir every 20 minutes. Cool on baking sheet.

     Hi, beeje...and welcome! Here's the recipe- it's called Heroin because it's so addictive...lousy name, but apparently a great recipe!

     

    The Recipe

    4 lb chicken wings
    1/2 cup butter
    1 cup grated parmesan cheese
    2 tbsp dried parsley
    1 tbsp dried oregano
    2 tsp paprika
    1 tsp salt
    1/2 tsp freshly-ground black pepper

    First, preheat the oven to 350°F. Cut the wings up into "drummettes". (Freeze the pointy "tips" for soup -- they make great broth!) Then combine the grated cheese and the seasonings. Line a shallow baking pan with foil. (Do not omit this step, or you'll still be scrubbing the pan come New Year's Day!) Melt the butter in a shallow bowl or pan.

    Dip each "drummette" in butter, roll in the seasoned cheese, and arrange in the foil lined pan. Bake for 1 hour at 350°F. Kick yourself that you didn't make a double recipe!!

    Hi.

    Well, if it's even only half as good as everyone says, it'll be wonderful!  Party!!!

     

    I think I'd prefer chicken strips done the same way, but we're trying this first!
