     saw this recipe that Laura posted on Sundays thread and thought we shd have a separate thread for recipes so we can find them.

    A side dish I got from TOH got "raves".  I'll make it again for sure !

     
    Zesty Carrot Bake
    1 pound carrots, cut into 1/2" (I added parsnips too) par-boil until tender
     
    Combine following 5 ingredients and mix well:
    2Tbsp minced onion
    3/4 cup mayonaise
    1/3 cup water
    1 Tbsp horseradish (I didn't have any so used 1TBS dried dill)
    1/4 tsp pepper
    Pour this sauce over carrots in a buttered casserole dish
    TOPPING:
    1/2 cup dry fine bread crumbs
    2 TBSP melted butter
    Sprinkle on top of carrots. Bake uncovered at 350' for 25-30 minutes.
    Remove from oven and
    SPRINKLE top of casserole with 1/2 cup shredded cheddar cheese.
    Return to oven for 2-3 minutes until cheese melts.
    (I had a lid on casserole dish while baking,  but removed lid to melt cheese)
    (serves 6)....should have made more !

    I made this for a Hawaiian themed Potluck lunch we had a t work. I prefer blueberry o\ver cherry, so used that!

     

    HAWAIIAN SALAD 

    1ST LAYER1/2 c. graham crackers, crushed
    1 stick melted butter
    Pour butter over crumbs and press firmly in pan.  2ND LAYER:2 cans Eagle Brand milk
    1/2 c. lemon juice
    Mix until very thick and pour over first layer.  3RD LAYER:1 med. can crushed pineapple, drainedPour over second layer.  4TH LAYER:1 med. tub Cool WhipThis goes over third layer.


    5TH LAYER:
    1 can cherry pie filling over the 4th layer.
    ( I prefer the blueberry pie filling)

    Chill before serving

    Thes are quite popular around our house at Christmas and New Years

    Polynesian Nuts

    This is a recipe I got from one of my weekends at the lake with my girlfriends. I go away for a weekend every Sept. I highly recommend it. These go great at a Christmas party or any gathering. I guarantee you’ll be making a double batch!

    2 tbsp butter, melted
    2 cups pecans (almonds or macadamia nuts can be used too. I’ve only used pecans)
    2 tsp soya sauce
    ½ tsp salt
    1/8 tsp cayenne pepper

    Coat nuts in melted butter. Spread on a baking sheet. Bake at 325 for 15-20 mins. stirring twice.
    Sprinkle soya sauce, salt and cayenne over top. Stir well. Cool before storing in airtight container.

    If you want a decadent cake this is it!!

    SKOR CAKE

    1 CHOCOLATE CAKE MIX (PREPARED AS DIRECTED ON THE BOX)
    1 CAN EAGLE BRAND MILK
    CARAMEL SUNDAE SAUCE
    1 PINT COOL WHIP
    2-3 SKOR BARS, CRUSHED

    BAKE THE CAKE AS PER DIRECTIONS ON THE BOX. WHEN IT COME OUT OF THE OVEN AND WHILE IT IS STILL HOT, POKE HOLES IN THE CAKE AND POUR EAGLE BRAND MILK AND SUNDAE SAUCE ON IT. LET IT COOL COMPLETELY. ADD COOL WHIP AND GARNISH WITH CRUSHED SKOR BAR.

    Better Than Sex Cake

    1 white cake baked (cake mix is easiest)

    Mix together:

    8oz cream cheese
    1 vanilla instant pudding mix
    1/2 cup milk
    1 can crushed pineapple, undrained
    Beat it all together.
    Spread over top of baked and cooled white cake.

    Top with a carton of Cool Whip.

    This is very yummy. Keep in fridge.

    I think this is the roast everyone is making  

     

    Black Forest Pot Roast:


    1(3-3 1/2lb.)chuck roast
    1 onion,chopped
    1/4 cup water
    5-7 button mushrooms,sliced
    1/4 cup catsup
    1/4 cup dry red wine
    2 Tbsp. Dijon mustard
    1 Tbsp. Worcestershire sauce
    1/2 tsp. salt
    1/4 tsp. pepper
    1 clove garlic,minced
    2 Tbsp. cornstarch
    3 Tbsp. water


    Place roast in slow cooker.Mix remaining ingredients(except cornstarch and 3 Tbsp. water)and pour over roast.Cover and cook on low for 8-10 hrs.Remove roast and slice.Keep warm.Turn to HIGH.Dissolve water and cornstarch,stir into cooker.Cover and cook for 15 min. Ladle gravy over meat.

    Cola Roast:
    1 tsp. salt
    1/2 tsp. pepper
    1/2 tsp. garlic powder
    3-3 1/2 lb. roast
    3 Tbsp. oil
    1/4 cup Coca Cola
    12 oz. bottle chili sauce
    2 Tbsp. worcestershire sauce
    2 Tbsp. hot pepper sauce
    Mix the Coca Cola,chili sauce,worcestershire sauce and hot pepper sauce.Set aside.Rub the roast with the salt,pepper and garlic powder.Heat the oil in a roasting pan,then sear the roast on all sides.Pour the Cola sauce mix over the roast.Cover and bake in a 325F oven for 2 1/2-3 hrs.
    P.S.I ALWAYS serve mashed potatoes with this recipe so we can ladle some of the gravy over them. Depo!!!

     This is really good and simple

     

    String Pie

    1 pound ground beef
    1/2 cup chopped onion
    1/4 cup chopped green bell pepper
    1 jar (15-1/2 ounces) spaghetti sauce
    8 ounces spaghetti, cooked and drained
    1/3 cup grated Parmesan cheese
    2 eggs, beaten
    2 teaspoons butter, melted
    1 cup cottage cheese
    1/2 cup (2 ounces) shredded mozzarella cheese

    Preheat oven to 350°F. Cook beef, onion and green pepper in large skillet over medium-high heat until meat is browned. Drain fat. Stir in spaghetti sauce. Combine spaghetti, Parmesan cheese, eggs and melted butter in large bowl; mix well. Place in 13×9-inch baking pan. Spread cottage cheese over top; cover with sauce mixture. Sprinkle with mozzarella cheese. Bake until mixture is thoroughly heated and cheese is melted, about 20 minutes.

    Bacon-Cheese Topped Chicken

    1/2 cup Dijon Mustard

    1/2 cup honey

    4 1/2 tsp oil, divided

    1/2 tsp lemon juice

    4 chicken breast

    Salt and pepper to taste

    Paprika

    2 cups slice mushrooms

    1 cup montery jack cheese (or mozza)

    1 cup cheddar cheese

    8 bacon strips, partially cooked

    Combine mustard, honey, lemon and 1 1/2 tsp oil. Pour 1/2 over chicken and marinade 2 hours.

    Brown chicken in remaining oil. Sprinkle with salt and pepper and paparika. Transfere to 11x7 dish.

    Saute mushrooms until tender. Spoon reserved marinade over chicken. Top with cheeses and mushrooms. Place bacon crisscross over chicken. Bake uncovered at 375 for 20-25 minutes

    Serves four

    Very easy but good enough for company!

     These muffins are so darn good. 

     

     BANANA CRUMB MUFFINS

    • 1 1/2 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 3 large ripe bananas, mashed
    • 3/4 cup sugar
    • 1 egg, lightly beaten
    • 1/2 cup butter or margarine, melted
    • TOPPING:
    • 1/3 cup packed brown sugar
    • 1 tablespoon all-purpose flour
    • 1/8 teaspoon ground cinnamon
    • 1 tablespoon cold butter

    In a large bowl, combine dry ingredients. Combine bananas, sugar, egg and butter; mix well. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups three-fourths full. Combine the first three topping ingredients; cut in butter until crumbly. Sprinkle over muffins. Bake at 375 degrees F for 18-20 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.

    1 lb. Itilian sausage
    • 2 onions, chopped
    • 1 (28 ounce) can whole peeled tomatoes with juice
    • 6 cups chicken broth
    • 2 teaspoons dried basil
    • 2 cups bow tie pasta
    • 1/2 teaspoon garlic salt
    • 1 cup chopped celery
    • 1 cup chopped carrots
    • 1 1/2 cups shredded cabbage
    In a soup pot, cook sausage over medium heat until no pink remains.
    1. Add onions, celery, and carrots. Cook uncovered for 5 minutes, or until onions are soft.
    2. Add tomatoes, chicken broth, cabbage, and basil. Bring to a boil. Stir in macaroni, and cover. Simmer for 10 minutes, or until pasta is tender. Season with garlic salt. Serve.

    This is Yooper's recipe - I brought it over here from CC

    So the Mexican ravioli turned out quite good. Here's how:

     

    1 24-oz pkg frozen ravioli

    1 10-oz can red or green enchilada sauce

    about 10 pitted black olives, sliced

    1 1/2 cups shredded cheese--use shredded cheddar with red enchilada sauce, OR

                                                use shredded Monterry Jack with green enchilada sauce

     

    Preheat oven to 350F. Cook ravioli according to package directions. Drain. Pour into 2 qt casserole dish. Add sliced olives, half the shredded cheese, and whichever kind of enchilada sauce you prefer. Mix well and sprinkle the other half of the cheese over the top. Cover tightly with foil. Bake at 350 for about 30 minutes.

     

    I serve this with just a salad, but it might also be good with refried beans. Until today, I'd always made it using red enchilada sauce and shredded cheddar. DH liked it better with green enchilada sauce and Monterrey Jack cheese. I like them both

    I made this for a family reunion, and am always asked to bring again and again...

    Blueberry Lemon Tea Loaf

    1 cup blueberries (Tossed with 1 Tbsp flour)

    1 2/3 cups flour

    1/2 cup margarine

    1 cup sugar

    2 eggs

    1/2 cup milk

    1 1/2 tsp baking powder

    1/4 tsp salt

    1 Tbsp grated lemon peel

    Glaze:

    1/4 cup sugar

    1/4 cup lemon juice

     

    Toss berries in flour and set aside.  Cream margarine and sugar.  Beat in eggs one at a time.  Add milk and dry ingredients, beating until just combined.  Fold in berries and lemon peel.  Pour into a 9x5 loaf pan.  Bake 60 to 70 minutes in 350 oven (preheated).  Cool in pan for 10 minutes after removing from oven.   Mix glaze ingredients together in saucepan and heat to boiling.  Remove loaf from pan onto a wire rack.  Brush hot glaze over top and sides of loaf.

    *  Can use fresh or frozen berries.

    * Freezes well

    This is a favorite of ours. When we got to the kids', I always have to make it for them.

     

    Sweet and Sour Spareribs

    Brown ribs in frying pan. Season as you like (garlic salt, pepper)

    Place in a casserole or roaster.

     

    Mix in pot

           1/2 c vinegar
           1 cup water
           1 cup brown sugar

    Bring to a boil. Add 2 tbsp cornstarch mixed with a small amount of water. Stir to thicken.

    Remove from heat. Stir in 1 c. Ketchup. Mix well.

    Pour over ribs in pan. Bake at 350º for about an hour or so.

    Serve with rice. Yummy!
