    REC Spinach Salad with Hot Bacon Dressing

    Even though it is winter I still love a good salad!

    Spinach Salad with Hot Bacon Dressing

    Ingredients

    • l bag baby spinach, washed and patted dry
    • 8 large mushrooms, cleaned and sliced
    • 8 hard boiled eggs, shelled and quartered
    • 2 slices of sweet red onion
    • l cup croutons

    Hot Bacon Dressing:

    • 3 chopped onions
    • 1-1/2 lbs diced raw bacon
    • 2-1/2 cups cold water
    • 3/4 cup sugar
    • 1/4 tsp pepper
    • 3/4 cup vinegar
    • 4 Tbsp lemon juice
    • 3 Tbsp cornstarch
    • 3/4 tsp salt

     

    Directions

    Divide spinach on to 4 plates. Top each salad with 2 sliced mushrooms, 2 hard boiled eggs, quartered, half a slice of sweet red onion, separated into rings, and 1/4 cup croutons.

     Drizzle with hot bacon dressing to taste and serve immediately.

     

     Brown bacon until well done; add onions. Saute until onions are translucent. 

    Add remaining ingredients and bring to a boil. Cook for 5 minutes, until somewhat thick.

     Makes almost 1 quart. 

    Refrigerate leftover dressing and warm before using again.

    Oh I will be making this tomorrow.  The best part is our grocery has the most awesome salad bar where I can pick up everything I need for two servings of this (spinach, mushrooms, red onion, and boiled eggs) and then I can just make the hot dressing and I have homemade croutons.  Can't wait.  Thanks for the recipe.

    Spinach Salad With Hot Bacon Dressing

    8-10 c. fresh spinach
    1 c. fresh or canned (drained) bean sprouts
    1 (8oz.)can water chestnuts, drained and sliced (optional)
    1 c. fresh sliced mushrooms
    1/2 c. shredded cheddar cheese
    3 hard cooked eggs, sliced
    1/4 c. cooking oil
    1/4 c. ketchup
    1/4 c. vinegar
    1/4 c. finely chopped onion
    2 Tbl. barbecue sauce
    2 Tbl. sugar
    1 Tbl. steak sauce
    1 Tbl. Worchestershire sauce
    1/4 tsp. Tabasco sauce
    6 strips bacon

    Tear spinach into bite size pieces, add bean sprouts, water chestnuts, mushrooms,cheese and eggs. Cover and refrigerate. Combine, oil, ketchup, vinegar, onion, barbecue sauce, sugar, steak sauce, Worchestershire sauce and Tabasco sauce in glass jar, cover and shake well. Refrigerate.
    Cook bacon in skillet until crisp. Remove and drain on paper towels. Pour off all but 2 Tbl. Bacon drippings. Stir in dressing mixture and cook over medium heat until mixture simmers.
    Add bacon to salad. Pour dressing over salad and toss lightly, but well.

    My family really liked this recipe. It is a keeper..This sauce made enough for about 4 servings of salad.
    I would double the dressing the next time. It is so good.

    This is one of the best spinach salads we have tasted. Tastes just like a favorite/nice restaurant we go to.
