    OMGosh!! Lemon Apricot Bars ~ A Famous Dave's Sweet Treat!!

     My dad got the Famous Dave's cookbook for Christmas and he recently made these wonderful bars! I think I could've eaten half the pan all by myself!! They are just so yummy!! I snatched  the recipe so I can make these often!! I'm thinking of throwing in some toasted slivered almonds when I whip up a pan!! Enjoy!!!

    Lemon Apricot Bars
    (Famous Dave's Backroads & Sidestreets Cookbook)

    Crust:
    1 1/2 c. flour
    1/2 c. confectioners' sugar
    3/4 c. unsalted butter, softened

    Filling:
    1/2 c. apricot preserves
    4 eggs
    2 c. sugar
    6 Tb. lemon juice
    1 Tb. grated lemon peel
    1/4 c. flour
    1 tsp. baking powder
    1/2 tsp. lemon oil
    1/2 tsp. salt
    confectioners' sugar to taste

     For the crust, mix flour and confectioners' sugar in bowl. Cut in butter 'til crumbly. Preheat oven to 350º. Press crumb mixture over bottom of 9X13" baking pan. Bake for 30 min. Let stand 'til cool. Reduce oven temp. to 325º.
     For the filling, spread apricot preserves over bottom of the crust. Beat eggs in a mixer bowl 'til blended. Add sugar, lemon juice, lemon peel, flour, baking powder, lemon oil and salt. Beat 'til blended. Pour over prepared layers. Bake for 35 min. Let stand 'til cool. Sprinkle with confectioners' sugar. Cut into bars.

    Yield: 36 bars

    BTW, I am so jealous he has that book! Have you looked through it?  Is it a 'good one'?

    Sounds wonderful!  I have never seen lemon oil?  Is this with the extracts?

    I go to this baking store that generally has everything I need. The oil is highly concentrated with a 'clean' taste unless you get too much. You might try a store that has a larger selection of baking supplies rather than just extracts.

    I had no idea that Famous Dave's had a cookbook either!  hmmm.  We eat at Famous Dave's alot but have never noticed - do they serve desserts there?  I guess that by the time we clean our plates of our meal, we're ready to be rolled out of there and have no ROOM for dessert!  LOL

    I know that you can buy the BBQ sauces & rubs in the store, other than that I don't know.  I think that I've seen both at Walmart in fact.

     LindA - I, too, am a bit jealous of dad and his cookbook. Everytime I go over there he's pulling it out and showing me another gem he has found. He just bought himself a new gas grill and is itching to put it to work! He still needs to attach all the gas lines and then he should be good go! I'll be an eager guinea pig!!:o)

    Lemon oil is also found in some small town pharmacies! You may need to ask for it . That's where I find mind! As Linda says, they are pretty potent, so you need to be careful! A little goes a long way! If you can't find the oil, you can always use extract instead. But it won't taste quite the same and I would suggest you use twice as much!

    Ms Paulette - Desserts at Famous Dave's? Yup!! But usually we are too full to ask for dessert! I've always wanted to try their cheesecake, though. I have no idea if they make their own or not. But I have this weakness for the stuff!!! One of these days........

    barbsacookin - I know we can get the BBQ sauces at Menard's and the price is usually really, really cheap!! The sales at Menard's are usually 3 for 5 bucks and on occasion, I've seen them for a buck a piece! The grocery stores are always around 3 bucks!!  I've never seen the rubs anywhere and I have looked. I think I'm gonna have to find out where Paulette shops!!  As to any of his other stuff? Seems to me I've seen baked beans in the freezer section on occasion. But I can't swear to that! I've never seen any other products with his name on them!

    *sigh*  There is no FD around me and I want to go there...I even looked on their website and someone must have our area purchased but no restaurant! Time to take a vacation to find a Famous Daves~

    You know, we just started getting his sauces and rubs~and they are found at the Menards Lumberyard! Smaller towns~you gotta get used to them! I guess it is no wonder we don't have a restaurant close~lol Guess I will be content to find recipes on the net~I have made the junkin jukin ribs(or something like that) and they are awesome!
