    R&R: 10-Minute Peanut Bars (2/17/08)

    I just made these but used roasted cashews instead of peanuts. I also added about 1/2 tsp. cinnamon and 1/3 cup ground flax. I tasted a little bit and it is delicious. The ginger was quite strong before I added the cinnamon and flax so you might want to start with half the amount and taste it. I'm going to serve them for breakfast tomorrow. It doesn't make a large amount, so you might want to double it for an 8" pan.

    This is a tasty, nutritious snack that takes only 10 minutes to prepare.

    10-Minute Peanut Bars

    Prep and Cook Time: 10 minutes

    Ingredients:

        * 1 cup raw or roasted peanuts
        * 1 TBS minced fresh ginger
        * 2 TBS sesame seeds
        * 1 cup raisins
        * 2 TBS honey

    Directions:

       1. Grind all ingredients, except for the honey, in a food processor until fairly fine but still with some texture (you don't want it to have the consistency of peanut butter).
       2. Add honey and process just long enough for it to blend in.
       3. Press into a square about 3/4-inch thick on a plate or square pan and refrigerate for about an hour or more.
       4. Cut into 2-inch squares.

    Makes 8-12 bars

     We had thumbs up from everyone this morning on these bars. They were still pretty soft and "buttery" so I pressed some coconut into the tops and bottoms before serving. I'll make these again today and increase the flax or use oat bran or wheat germ to give them more body. I'll report back with how much.

    Wow, what a pleasant surprise to see this review this morning!  Thanks chefly.  I planned on adding both the flax seeds and wheat germ also when I make them.  The cinnamon sounds like a good addition too!  So glad they turned out good.  I love George Matlejan, he has such good, healthy recipes in his newletter.  I think I'll post the other two I plan to try next now!!!

    I was hoping you would be on this morning and see the review. 

    Would you post the addy for his newsletter? It sounds like something I would enjoy receiving too. I can't wait to see the other recipes you plan on trying. I have to run to the grocery store for more raisins before I can make another batch. I saved two bars for DH then they are gone, so I have to get the raisins today. Lol!

     Thanks Janet, I just signed up.

    I made the peanut bars again and used 1/2 cup each of ground flax and oat bran. This time I used raw walnuts. IMO they are great now and seem to get even better when chilled for a couple of days as the flax and oat absorb the oil from the walnuts. DH and DD love them too.
