    Looking for St. Patrick's Day dessert recipes...simple is best for me. lol.

    I never know what to have for dessert after our corned beef and cabbage meal.  It's always the same thing....green jello. lol.  Sad, but true.  Does anyone have any other suggestions and if so, would you mind sharing the recipe?  Thanks in advance.

    Here is a Taste of Home recipe for Mint Brownie Pie. It is from the February/March 1999 issue, on the "Just Desserts" page. My family thought this was very good.

    It looks fancy but is not hard to make.

     Well, jello is good, and green is the right color!  (LOL right back to you!)This is a recipe I used to make quite a bit.  However instead of making it up into a pie as directed, I just put it into dessert cups.  I recall once putting it into parfait glasses, layering it with Oreo crumbs.

     GRASSHOPPER PIE

    2 pkg (3 oz. each) lime jello
    4 Tbsp. sugar
    1/8 tsp. salt
    2 cups boilling water
    3/4 cup cold water
    1/3 cup green creme de menthe
    1/3 cup white creme de cacao
    1 tsp. vanilla
    1 egg white
    1 env. Dream Whip Dessert Topping Mix OR 1 cup whipping cream
    9- or 10-inch chocolate crumb pie crust

    Dissolve jello, 2 tablespoons of the sugar and the salt in boililng water.  Add cold water, liqueurs, and vanilla.  Chill until slightly thickened.  Beat egg white until foamy.  Gradually add remaining sugar, beating after each addition until blended.  Then beat until meringue will stand in shiny, soft peaks.  Prepare dessert topping mix as directed on pacakage, omitting vanilla, or whip the cream.

    Then measure 1/2 cup jello and set aside.  Blend meringue and dessert topping into remaining jello mixture.  Chill until quite thick.  Spoon into crust, using as much as possible.  (Any remaining filling may be chilled in sherbet glasses for another meal.)  Drizzle the reserved clear jello over the top of the pie; pull spoon through a zigzag course to marble.  Chill until firm.  Garnish with chocolate curls, if desired.

    Grasshopper Pie Lulubelle Recipe

    With its old-west dancehall decor and its hearty western dinners (or dainty ladies' lunches), Lulubelle's used to be THE place to eat here in Scottsdale. This pie was the specialty of the house, and people often came just for a slice. Do not be put off by the name; do try this recipe. It is a basic recipe and may be varied with your favorite liqueurs if you choose -- suggestions are at the end. There are shortcuts you can take with this recipe, too. Use a commercially prepared chocolate crumb crust, for example. Two cups thawed Cool Whip may be substituted for the whipped cream.

    20 min | 20 min prep | SERVES 6 -8 , 1 pie

    1 1/4 cups crushed chocolate cookie crumbs
    1/3 cup melted butter
    2/3 cup milk, scalded
    24 large marshmallows
    2 ounces green creme de menthe (4 tablespoons)
    1 ounce white Creme de Cacao (2 table spoons)
    1 cup heavy cream (1/2 pint)
    3 drops green food coloring (optional)
    1. Combine crumbs and melted butter. Press and pat evenly into a 9-inch pie plate; chill. (Crust will hold its shape better and taste better, too; chill well.).
    2. Add marshmallows to scalded milk and melt slowly in a double boiler over simmering water, stirring often. Cool to room temperature.
    3. Add liqueurs; chill until thickened.
    4. In a chilled bowl, beat cream until stiff. Fold into marshmallow mixture, adding a few drops of green food coloring, if desired. This should be a delicate green color.
    5. Pour into crust and freeze.
    6. Remove from freezer about 20 minutes before serving. Serve pie garnished with additional whipped cream and/or grated semi-sweet chocolate.
    7. Variations:.
    8. Brandy Alexander Pie: For the liqueurs, substitute 2 ounces dark creme de cacao and 1 ounce brandy.
    9. Cherry Brandy Pie: For the liqueurs substitute 3 ounces cherry Brandy.
    10. Harvey Wallbanger Pie: Substitute orange juice for the scalded milk. For the liqueurs substitute 2 ounces Galliano and 1 ounce Cointreau (or vodka). Add 1/2 teaspoon grated orange zest.
    11. Pink Squirrel Pie: For the liqueurs substitute 1-1/2 ounces amaretto and 1-1/2 ounces white creme de cacao (1-1/2 ounces equals 3 tablespoons.).

    You're probably thinking that I do like the grasshopper flavor and you are right.  So I cannot forget this choice recipe from Paula Deen!  Hope one of these recipes looks promising to you.

     Creme De Menthe Brownies

    Recipe courtesy Paula Deen



    1 cups (2 sticks) butter, softened
    2 cups sugar
    4 large eggs
    1 teaspoon vanilla extract
    11/4 cup all-purpose flour
    3/4 cup unsweetened cocoa
    1/2 teaspoon baking powder
    1 (10-ounce) package Creme de Menthe baking chips (recommended: Andes)
    Shaved Creme de Menthe thins (recommended: Andes)
    Chocolate frosting

    Frosting:
    1/2 cup (1 stick) butter, melted
    1/3 cup cocoa
    2 cups sifted confectioners' sugar
    1 teaspoon vanilla extract
    2 tablespoons milk

    Preheat oven to 350 degrees F. Grease a 13 by 9 by 2-inch pan.

    Using an electric mixer, combine butter and sugar in a large mixing bowl; beat at medium speed until creamy. Add eggs, 1 at a time, beating well after each addition. Add vanilla, mixing well.

    In a separate bowl, combine flour, cocoa, and baking powder. Gradually stir into butter mixture. Fold in mint chips. Spoon into greased pan. Bake for 35 minutes.

    While brownies are baking, prepare frosting. Combine butter, cocoa, confectioners' sugar, vanilla and milk in a large mixing bowl; beat at medium speed with an electric mixer until dry ingredients are moistened. Beat at high speed until spreading consistency.

    Remove pan from the oven and allow brownies to cool in pan on wire rack. Spread with chocolate frosting. Top with shaved mint thins.

    Thanks Saw-Whet & Shoppingaddict!  OK.  These pies do sound a tad more interesting than a cup o' jello. lol.  The mint brownie pie sounds great, Saw-Whet.  I love mint (and brownies.)  Then again the Grasshopper pies by Lulubelle or Paula Deen sound delicious too, SA.  Well, I still have a few days to think about it.  Maybe I'll make all of them!  lol.  Thanks so much for your help.   Yum.  I'm hankering for a piece of pie just thinking about these. lol.

    LIME JELLO SALAD

     

    Serves:  12

    Source:  Grandma

    Effort:  average

     

    Ingredients: 

    1 pkg. lime Jell-O

    1 pkg. lemon Jell-O

    4 cup water

    1 cup crushed pineapple, drained

    8 oz. cool whip

    small pkg. Oreo cookies

     

    Instructions: 

    Dissolve Jell-O in 2 cup boiling water.

    Add 2 cup cold water

    Stir well & set in refrigerator

    When Jell-O is thickened, but not quite set, add pineapple & cool whip

    Crush the cookies

    Place a layer of cookies in 9 x 12" pan

    Pour Jell-O mixture over them

    Cover with remaining cookies

    Refrigerate until set well

    Candykisses,  that sounds good.  Looks pretty simple too.  Actually, lime is my favorite jello flavor and you can NEVER get it in a diner.  What's with that?  They only have red all the time.   The more I look at this the more I like it.   Decisions, decisions.  Thanks for the reply.  I could actually make that tonight!  And, on St. Pat's Day too!

    How about some mint ice cream or vanilla ice cream with some cream de mint poured over it for the adults.

     

    Fast Yogurt Pie

     

    1 (9-inch) graham cracker crust -

     

    1 (3-ounce) lime gelatin -

     

    2 (8-ounce) containers of key lime yogurt -


    1 (12-ounce) container whipped dessert topping, thawed

       
    1. In a large mixing bowl, combine the yogurt and gelatin with 3 1/2 cups of the dessert topping until well blended. Spoon into crust. Freeze until filling is firm, about 3 to 4 hours or overnight.
    2. Top frozen pie filling with remaining dessert topping. Store pie in freezer. For best results, remove from freezer about 10 minutes before serving.

    An activity i recall doing as a kid is making rice krispie treats and then dying them green w/ food coloring for St. Patrick's Day.

    Mkmac, now that does sound simple enough.  And tasty!   So many ideas.  That's why I love this place.   Thanks for the reply.   I do like quick, easy and simple.  This is a keeper too!

     

    Stacy78, I remember doing that too.  That was fun.  My mother used to have green milk and butter and green beer.  Today you can get green bagels.  But, I did enjoy those rice crispies.   You brought back some fond childhood memroies.  Thank you.

    Try a chocolate graham cracker crust and put a little choc sauceor hot fudge on it, then spoon mint chocolate chip ice cream into it and top with either choc sauce or the hot fudge. (You have to put it back into the freezer for a little while choc sauceor hot fudge can melt the ice cream...  It is really good!!

    Here is a recipe I've been making forever. To me it's easy and so delicious. Hope you give it a try... You won't be disappointed. Dessert Girl  P.S. It's also green!

    Pistachio Dessert

    Crust:  2 cups flour      1 cup butter or margarine    1 cup finely chopped pecans

    Filling: 1 8oz pkg  cream cheese, softened   - 1 cup icing sugar     -  1 pkg 6 serving size       pistachio instant pudding  -  2 cups milk

    1 cup whipping cream or 1 envelope topping  - 2-3 Tbsp slivered almonds

    Crust: Put flour and butter in a bowl. Mix until crumbly. Stir in pecans. Press into an ungreased 9x13 pan. Bake at 350 degrees for 15 minutes. Cool.

    Filling: Mix cream cheese and sugar together well. Spread over cooled shortbread crust.

    Beat pudding mix with milk. Pour over cheese-sugar layer. Chill a few minutes to firm.

    Whip cream until stiff. Spread over pudding layer. Sprinkle with slivered almonds.
