Well, jello is good, and green is the right color! (LOL right back to you!)This is a recipe I used to make quite a bit. However instead of making it up into a pie as directed, I just put it into dessert cups. I recall once putting it into parfait glasses, layering it with Oreo crumbs.
GRASSHOPPER PIE
2 pkg (3 oz. each) lime jello
4 Tbsp. sugar
1/8 tsp. salt
2 cups boilling water
3/4 cup cold water
1/3 cup green creme de menthe
1/3 cup white creme de cacao
1 tsp. vanilla
1 egg white
1 env. Dream Whip Dessert Topping Mix OR 1 cup whipping cream
9- or 10-inch chocolate crumb pie crust
Dissolve jello, 2 tablespoons of the sugar and the salt in boililng water. Add cold water, liqueurs, and vanilla. Chill until slightly thickened. Beat egg white until foamy. Gradually add remaining sugar, beating after each addition until blended. Then beat until meringue will stand in shiny, soft peaks. Prepare dessert topping mix as directed on pacakage, omitting vanilla, or whip the cream.
Then measure 1/2 cup jello and set aside. Blend meringue and dessert topping into remaining jello mixture. Chill until quite thick. Spoon into crust, using as much as possible. (Any remaining filling may be chilled in sherbet glasses for another meal.) Drizzle the reserved clear jello over the top of the pie; pull spoon through a zigzag course to marble. Chill until firm. Garnish with chocolate curls, if desired.
