    Confused [*-)] ISO simple whole roasted chicken

    I looked up on the search for whole roasted chicken and several other recipes came up which had nothing to do with chicken. If anyone has a simple recipe for a whole roasted chicken I would appreciate it if you would share. Thanks !!!

    I take a whole chicken and put lawerys season salt on it. you could do any seasoning you like. Roll foil into balls, set in bottom of crockpot.  Set chicken on top of the foil balls.  cook on low for 7 to 8 hours.  It is the mosit chicken. DH will not let me cook them in oven any more.

    I take a whole chicken, wash inside and out and pat dry.  Rub with oil (olive or canola.) I season it with lemon pepper, thyme, and seasoned salt.  You can switch up the seasonings however you like.  I put the chicken in a covered roaster and roast for 1-1/2-2 hours.  Take the cover off the roaster to brown.  That's it.  Let the chicken rest for 30 minutes or so before you slice.

    Thank you...that sounds good too. I need to get a roaster pan with a lid though ! I think I have everything but that ! Thanks for sending !

    I do something similar to this in the crockpot. I chop up carrots, celery, and onion and place the vegetables in the bottom of the crockpot. Then I rub the chicken with dry herbs (thyme, rosemary, etc. change it up as you like). Place the chicken on top of the vegetables. Then I place citrus fruit wedges (lemon, orange, lime) under the skin of the chicken and in the cavity of the chicken. I simmer this for several hours. Once the chicken is done I take it out of the crockpot and discard the citrus fruit wedges. We eat what we want to that night. The meat is always moist and delicious.

     After eating I pull the remaining meat from the bones and save it for a later use. Then I place the bones back in the crockpot and let the juices continue to simmer for another hour or two for a great chicken stock that can be used later. I usually discard the vegetables once the stock is done. But I suppose you might be able to use them for something.
