    Awesome Dessert if you like Pumpkin

    My changes to the recipe are in (((    )))

     Easy Pumpkin Dessert

    Bottom:

     1 pkg. yellow cake mix(reserve 1 cup mix for topping)   (((I used white cake mix)))

     1 egg

    1/2 cup margarine

    Mix margarine and egg with remaining cake mix. Pat into greased 9x 13 pan.

    Filling:

    3 cups pumpkin pie mix(large can, 28oz.)

     2 eggs

    1/3 cup milk

    ((( I added a sprinkle of cinnamon and a sprinkle of nutmeg ))))

    Mix ingredients well and pour over crust.

    Topping:

    1 cup reserved cake mix

    1/4 cup sugar

    1/4 cup margarine

    1 tsp. cinnamon

     Mix together- it will be lumpy. Sprinkle over filling. Bake at 350º for 45 mins.

    When cold, spread with cool whip and sprinkle with chopped nuts. Refrigerate.

    ((( I used finely chopped pecans. )))

    Thanks for the recipe!!  Anything to do with pumpkin DH and I love.  Will have to try this for sure!

    This is the same recipe I use, I make it all the time and especially when company comes, no more pumpkin pie here as this is better. Karen

    Hi Elaine and all!

    I copied this recipe down to try out.  It does sound really good..

    If you don't mind, I'll post a pumpkin recipe here for you to try, Elaine.  It's a good one!

    **My cousin makes this in her Diner..

    Pumpkin Pie Cake

    1 29 oz. can pumpkin
    1 13 oz. can evaporated milk
    4 eggs
    1 1/2 c. sugar
    2 t. cinn.
    1 c. oleo melted
    1 1/2 t. nutmeg
    1 t. ginger
    1 yellow cake mix
    1 c. chop nuts ( I use pecans)

    Mix all ingredients except cake mix, oleo and nuts. Pour into 9x13x2 inch cake pan. Sprinkle dry cake mix on top and drizzle with melted oleo and sprinkle nuts on top. Bake 350 degrees for 1 hour or until pumkin is set. Serve with coolwhip.
