My canning books say that a bushel is 48 pounds, will make 16-20 quarts (I used 18) and that figures out to 2.6666 pounds per quart. A quart is 4 cups so 3 cups figures out to just under 2 pounds. Math was never my strong suit.....better check my numbers. Also, this is a canning book and they are telling you to put these apples into a quart jar and they aren't counting the peels and cores. So 2 1/2 pounds, maybe? It's 2 3/4 cup cored and peeled.....I googled it.
