    Chicken and Dumplings

    I'm looking for a chicken and dumplings recipe that the dumplings are pasta like. I make a very good light and fluffy dumpling but, my soon to be son in-law said it's not like his mother's.  lol  If anyone can help it would be very much appreciated. Thank you in advance. Marianne413

    Slick Dumplings

     

    2 C. flour

    1 t. salt

    4T. shortening

    1 C. warm chicken broth (if you already have your pot going with the broth or just out of the can is fine)

     

    blend the dry ingredients and then cut in the shortening. Then add liquid. If its too dry add a little more liquid, if its too pasty add some flour a teaspoon at a time.  Kneed a bit in the bowl, then dust table with four and roll out rather thin. Use a pizza cutter or pastry wheel (or knife) to cut into sugar packet size pieces. Drop into boiling thickened broth with chicken (and some vegetables if desired) Drop them in in alternating spots so they don't stick together. cook about 15 minutes, stir gently with wooden spoon once or twice.

     

     

    when I make theese I add 3 cups of flour and increase the other ingredients a tad bit, because my family of 6 LOVES IT. I make 2 pots--------I add one bag of frozen mixed vegetables  to one and not the other because some of the kids and my DH doesn't like vegetables in it (DH likes his on the side).......... when I boil my chicken I add some carrot, celery and onion I strain the broth and thats my base..... I pull apart the chicken and add the cooked shredded chicken right before I put in the dumplings. since I do 2 pots I also need a large can of store bought chicken broth, thickened with corn starch and add my seasonings to both pots like parsley flakes, paprika, salt and pepper.
