    Banana Crumb Muffins

    Banana Crumb Muffins

     



    1 1/2 c all-purpose flour
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    3 bananas, mashed
    3/4 c white sugar
    1 egg, lightly beaten
    1/3 c butter, melted
    1/3 c packed brown sugar
    2 Tbsp all-purpose flour
    1/8 tsp ground cinnamon
    1 Tbsp butter



     

    Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.

    In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

    In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
    Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

    Wow!! Over 2,000 reviews--5 stars.  Thanks for posting this.  I made some banana muffins last week from a cookbook recipe, and they weren't very good.  Will try this one for sure.  BTW, your picture is much nicer than the one on all recipes.

    I can tell you without a doubt-these muffins are AMAZING!  My favorite way to use bananas up.....in fact, I do believe there's some in the kitchen with these muffin's name right on them!!!!Big Smile

    Yum yum, they look delicious.  I love crumb topping ANYTHING! lol

    You can't always get what you want. But if you try sometime, you might find, you get what you need.

    It only makes 10, do you use the larger muffin pan? Or do you make 12 of the smaller ones?
