Red Flannel Hash
Dice up corned beef, cook 2-3 potatoes (with peels on), red preferably. After potatoes are done, peel and dice. Saute a few slices of onion that has been diced in butter, add potatoes and corn beef. Cook until warmed through and perhaps a little crispy (your choice). Just before serving add about a cup or so of sour cream and serve immediately.
This can also be done with hamburger, but the true Red Flannel Hash is done with corned beef.
This has been a favorite for about 20 years.
