    Pasta salad

I lost my pasta salad recipe. I love a good pasta or macaroni salad without too many exotic ingredients! One I can make at home.  Any ideas?

Here's how I make mine and it's one of the first to disappear at church functions.

I use corkscrew pasta. I like the tri-colored kind. Cook until al dente. Drain

I buy two frozen veggie blends. (The large bags and defrost). I like an asparagus stirfry blend and an Italian blend. I also add fresh parsley, cucumber, tomato and celery. Sometimes I add artichoke hearts and olives.

I add the pasta and veggies together. I them blend together a large bottle of ranch dressing and zesty Italian dressing and pour over the pasta mixture. Add some parmesan cheese if you like.

Type "pasta salad" (without the quotes) into the Search box at the top of this page. You'll get hundreds of family-favorite recipes, each one kitchen-tested by our Home Economists.

    SCGranny,

I love pasta salad with LOTS of fresh veggies.  I make mine for all the family picnics.

1 Box of Pasta-I use the tricolored kind

1 cup each (chopped): celery, red onion, shaved or sliced carrot, cucumbers, zucchini, radish slices, halved grape tomatoes, peppers (whatever color you have on hand or is on sale).  I try to get different colored veggies for the sight-appeal!!

Cook pasta as directed...I like mine firm.  Let cool and then add the veggies, 1 bottle of your favorite italian dressing..I like the Zesty Italian and 2 or 3 spoonfuls of the pasta salad season mix by McCormick.  I think the seasonings add a nice flavor.

Let sit in fridge so that the everything absorbs the dressing and seasonings.

    Enjoy!!!

    Midge
