    HL Topic of the week 3/24 to 3/30 Spring Makeover for your Pantry!

    Enjoy the Season's Freshest Foods

    In the US, we enjoy practically unlimited access to any food any time of the year. Although it's nice to have watermelon in February and asparagus in August, many people don't even know that foods have a season, let alone what foods are in season at any given time of year.

    But in the food world, local is the new exotic. Farmer’s markets are popping up in every neighborhood as consumers are realizing the benefits of eating food that was grown within miles of their mouths. Local food boasts a host of benefits, including better flavor, higher nutritional value, and less environmental burden. It's healthier for you because you get the higher nutrient levels from just-picked produce. It's healthier for the environment because local food uses less fossil fuel for transport. It tastes better because it really is fresh (not shipped-from-across-the-country-yet-still-bearing-a-label-that-says-fresh). And it’s also interesting, as each season brings a new crop of foods that you haven't had for an entire year. Before you've had a chance to tire of its bounty, the season changes to bring new, flavorful foods.

    If you want to eat healthy, home-cooked meals without all the fuss, try a seasonal pantry makeover! To do it, stock up on locally-grown foods—a fun trip to your local farmer's market will yield the majority of the ingredients you need—and simply create meals based on what's in season in your region.

    Availability will vary from region to region, but here's a list of foods that make spring their season, along with tips on how to incorporate the new-to-you ingredients into your meals.

    Spring Vegetables

    • Artichokes. A perfect springtime appetizer, serve artichokes that have been boiled until tender (about an hour) with homemade garlic butter for dipping. Or add cooked artichokes to pasta sauce, pizza or salads.
    • Asparagus. Although you can pick up asparagus at the supermarket any time of the year, it never tastes as good as freshly-harvested springtime asparagus. Grill, steam, or braise, and sprinkle with some kosher salt for a simple side-dish.
    • Carrots. Pair them with peanut butter for a quick and healthy midday snack, or make a side dish like glazed carrots for a gourmet dinner.
    • Celeriac. Soups and salads both benefit from the addition of celeriac, a highly aromatic root vegetable that has a celery-like flavor. It can be eaten raw or cooked.
    • Collards. Abundant spring through fall, this dark leafy green is the main ingredient in famous southern greens recipes. Collards are also a rich source of calcium.
    • Fennel. Fennel slightly resembles celery, with a bulbous base, which is the part that you eat. Chop into small spears and sauté in olive oil and minced garlic until tender, then sprinkle with minced fresh parsley and cook a minute more.
    • Morels. These wild mushrooms are so treasured, there’s even a website dedicated to morel “hunting,” complete with message boards and photos of people’s finds. Morels are delicious sautéed or roasted, and boast a nutty, meaty flavor and a rich and creamy texture.
    • Mustard Greens. High in antioxidants and vitamins K and A, these dark leafy greens are as nutritious as they are flavorful. The raw leaves can be added to salads or steamed or boiled until tender.
    • New Potatoes. Although they can be mashed, these springtime babies are best roasted or boiled and topped with a pat of butter and some kosher salt to accentuate their fresh flavor.
    • Rhubarb. Most famous for its part in rhubarb pie, this perennial vegetable can be cooked and pureed to make a sweet sauce, or even used to make oatmeal-rhubarb bars. Just make sure you don’t eat the leaves, which are toxic.
    • Spinach. Mix with baby lettuce for an exceptional salad, or sauté with garlic to make a delicious side dish.

    Spring Fruits
    Fruit is always easy. It is ready to eat, and tastes great. But if you're looking for some new ways to incorporate fruit into your menu besides the "grab and bite" technique, try fruit smoothies, fruit cobblers and fruit-topped pancakes and French toast.

    • Apricots. These delectable and delicate fruits are delicious fresh, cooked into a sauce, or grilled. Get them while you can, because they don’t last long!
    • Strawberries. Strawberry shortcake, strawberry smoothies, strawberries al a mode…the possibilities are endless.
    • Avocado. Avocadoes are an excellent source of healthy unsaturated fats, but many people don’t know what to do with them outside of whipping up some guacamole. Try them sliced on a sandwich, or cubed into salads. Just remember that they don’t keep well, so try to use them immediately.

    Spring Seasonings
    If you've done a little cooking, you probably know that the seasonings can make the meal. Here are some seasonal seasonings for your spring suppers.

    • Chives
    • Cilantro
    • Dill
    • Mint
    • Oregano
    • Parsley
    • Sage
    • Rosemary
    • Watercress

    If your pantry isn't stocked with the season's tastiest and most nutritious staples, then get yourself to your local farmer's market and add flavor to your meals with the best spring seasonings.     Good morning!  Hope you all had a wonderful Easter.   We enjoyed a nice meal, then headed out for a ride for a few hours.   Too cold to take Jake out to ride his bike though.   Came home, and I got to spend most of the evening reading and Tim played with Jake.


    Though spring is still a month or so away for us New Englanders, I've been enjoying seeing some of the season's produce come into the market.   I am eagerly awaiting signs of life at our local farms!   So far though, most still have a good amount of snow, and then we'll have the spring flooding to contend with.

    Good morning

     

    It's back to school for Jennifer, spring break is over.

     

    Wednesday afternoon hubby told me we were leaving, Thursday was our anniversary.  He gave me about 15 minutes to pack.  I almost remembered everything we needed.   We went to Branson again.  Had a great time,  got back Saturday afternoon. 

     

    The grass is starting to grow,  will have to get the mower out before long,  I have flowers up and growing, have been transplanting some.  I also have deer coming in the yard eating my bushes.  So starting to get a little mad. 

     

    Need to make sure Jennifer is up and around getting herself ready.   Will be back later.

    Jolene - How did Jake like his Easter basket & bike?

     

    We had a nice long weekend - friday we got some things doen around the house & ran some errands. Saturday we hit the bookstore & grabbed some lunch. Went to the evening Easter service at church. Sunday we kind of relaxed most of the day. It was nice out so dh cut the grass and I did some tidying up in the yard & garage.

    Hello everyone!

     

    Well we had a good weekend!! Of course our town was a'hoppin because of our win! :)

     

    Sunday I had my parents over for lunch....I fixed a huge ham! We will be having ham for months to come! LOL!

    Jolene how was the jelly beans? LOL! I love Easter candy!

    I havn't bought any yet, so I will probably hit up the clearance aisle at WM tonight! Stick out tongue

     

    Dawn sounds like you are having nice weather! It got cold here again this weekend and actually had snow yesterday!!! Angry Its suppossed to warm up later this week though!!!

     

    Well I had better get busy! I have a full day today since I had my long weekend!

    Dawn,  at least I got to go shopping for missing items.   He had figured out which direction he wanted to go, and he planned the route he wanted to take,  Left it up to me to make sure we had everything.  But we had a great time. 

     

    Baby "Gertie" is due in 3 weeks, so I've been hemming little cotton blankets.  It will be interesting to see how David takes not being the center of attention.  I will have him Wednesday and Thursday and then DIL is taking off work till after the baby comes.    Looking forward to garage sales starting up so we can find baby girl clothes.

    Jolene, Great topic. I am wondering when Rhubarb is at it's peak around here. I love Strawberry Rhubarb pie.  :)  Might not be a good idea for me not to find out.lol   Glad you had a good Easter. We did too. I ate more than I should have yesterday evening but am back on the straight and narrow today.

     

    Dusta, Yum, on the strawberry and banana dipped in chocolate! I am glad you splurged just a little. You deserve some special every now and then.  I had a small slice of the key lime pie for dessert. About the pound cake, do you use a regular yellow cake mix or the butter recipe? Do you bake it in a bundt pan?  I may have to make it sometime. I used to love the poundcake mix that Pillsbury made- the one in the big box that made a bundt cake. Remember? But they stopped making it I had the baking time downpat so it was really moist and I liked the lemon blueberry poundcake they made too. Phoey, they always stop making the really good products. :(

     

    Debbie, our grass is starting to grow too- yeah, but it is 35 degrees this morning- is supposed to warm up by the weekend to the 60s again.

     

    Dawn, I have almost finished the book- CWTGTH. It is a quick read. I love the main character- Aunt Elner. ;)

    Hi Ladies!!

     

    Hope you all had a wondeful Easter, we had a snowy start, sun came out but didn't make it past 25 degrees, when did spring start again!!!

    Last Friday my Mom sent the kids a HUGE box of candy for Easter, between that and what I already had for baskets, we have tons!!  Sent a bunch with the kids to school, they set it out at lunch and it all disappears fast!  Told DH I'm not buying candy for all of April, that could just kill me!!  We have been trying new fruits, the kids will eat apples, bananas, oranges, clementines, kiwi.  We tried asian pears, very tasteless, coconuts, I knew they wouldn't like that!  ...and a few others, Rule is everyone has to take one normal size bite to try.  The kids all look forward to going to the store to see what fruit we come home with next!

     

    Jolene,    how does Jake like his bike??   Does he have training wheels?  We too have alot of snow on the gound yet, and are expecting 2-3 inches tonight!!

     

    Debbie, how nice of Richard to suprise you!!!  Did Jennifer stay home alone?  Wish I could even see grass to mow!!

     

    Dawn,  like Debbie, lucky you having yard work to do!  When are you going to visit your family?  I hope you pack warm clothes, we are suppose to have below normal temps for the next 2 weeks.

    Muril, if you like strawberry rhubarb pies you would like Jolene's Rhubarb crunch dessert.  It is SO good.  Only thing I do different on it is I halve the crust ingredients, makes me think its less calories/ww points that way.  But I don't dare make it because its something I can't resist taking a bite of everytime I go through the kitchen. 

     

    Jolene,  yes, spring has sprung and my grass will need mowed within a couple of weeks.

    Debbie, ... Last spring or summer, Mom and I found a fresh baked one(S/R pie) at a grocery store(in her area) and it was wonderful- just out of the oven and still warm- She, DH and I ate it at one sitting- good thing it was a small pie. It had a perfect flakey crust too. Yum.  Now that rhubarb is in season again, Mom is going by the store looking for the pie.lol  I guess I will have to search for Miss Jolene's RC recipe, sounds just fabulous. Thanks for the tip on halving the crust recipe to save calories.

     Debbie - hope DIL is doing well. She  must be anxious!  We hit a few consignment places friday, got some good deals on some nice things. it's so much fun to shop them & garage sales ~ you just can't beat it :-)

     

    Muril - I"m so glad you like the book!!!  You would love her other novels, they are just as fun, fascinating and sweet. And Aunt Elner is a blast in ALL of them LOL!!!! well, Standing in the Rainbow and Welcome to the World Baby Girl. The other books aren't connected. Wait, Green Tomatoes may be but I can't be sure. Maybe I should re-read :-) 

     

    Jolene K - I"m going to Wisconsin this saturday. I haven't put away my winter clothes specifically for this reason LOL!!!! They got some snow again recently & the temps have been in the 30's at best. I had to make a note to remember my coat - I'd leave charlotte w/o it otherwise LOL!!  I love the idea of a new fruit each week. I did that with veggies last year - would bring home something

    Good morning. A little cool here, but sunny. Last week I put my long sleeve tops in a plastic box in the "basement" of the motor home and told Mel it will probably get cold again now that I have done that. It is suppose to be cooler for the next couple of days.

     

    I look for farmers markets when we go places. I was disappointed in the one they had in Branson, or the one I went to they may have others. They said the tomatoes were vine rippened, but they were not. I bought some tomatoes in the commisary last week, in a box, and they were a little smaller than a tennis ball, very good.

     

    Muril Betty Crocker makes a pound cake mix in a box and that is what I use. Make it in a loaf pan, the whipping  cream and butter make it taste like home made. Speaking of  butter I tasted something yesterday with butter and it was awful.  I know it is what your taste buds get use to. For the most part I don't eat extra sweet stuff, ever once in a while, maybe once a week, now, I have one of those devil food chocolate cookies, one point.

     

    Hi  to everyone. Debbie we are going to Branson the first of June. Are there any new shows that you liked? We went to see the brothers that you told us about last spring and I liked them.

    Dusta,  we saw the Haygoods and New South,  The haygoods were wonderful,  New South was OK.   We ate once at the *** Clark place, it was good.  We also ate at Bandanas, its in the new Branson Mill.  DO NOT go there,  food was bad,  service was terrible, then got the bill and they charged us prices way higher than what was on the menu.  And because they were so slow we missed a 2:00 show we wanted to see.

    Haygoods sound familiar, but not New South. We have eaten at *** Clarks a couple of times and Bandanas when it first opened. At that time the food was good and it was not very busy the time of day we went. I went back and got some of the bar-b-que to go later, but we didn't eat there the last time. Mel is not a real big fan of b b q.  There use to be a place on the strip, Uncle Joe's and he liked it. There is a shopping place, don't remember the name, but it is by the White House and there is an eating place called Mel's, have singing watiters and we liked it.

    Do you go to the new shops down by the water? The campground down there is where we stay.
