    Olive Walnut Bread  

     

    2 1/2 cups flour
    1 Tbsp baking powder
    1/4 tsp sea salt
    2 Tbsp fresh minced herbs or 1 Tbsp dried
    (such as rosemary, sage, basil, thyme...)
    1 cup plain rice milk
    1/4 cup extra virgin olive oil
    2 tsp brown rice syrup
    1/2 cup pitted olives, chopped
    1 cup walnut pieces

    In a large bowl, thoroughly combine the flour, baking powder, sea salt and herbs. In a small bowl, combine rice milk, olive oil and rice syrup. Add to flour mixture and stir until just combined. Fold in olives and walnuts.

    Heat oven to 350F and lightly grease a loaf pan (not too big). Scrape the batter into the pan and smooth the top a bit. Brush on a little rice milk all over the surface. Bake for 45 to 50 minutes or until a knife inserted comes out clean and dry.

    Makes 1 loaf. Serve warm with soup and salad for a meal, or spread with hummus

    HEALTHY BANANA BREAD 

     

    2 ripe bananas
    1/2 cup of 'milk (soy, rice or almond)
    1/3 cup oil
    2/3 cup sugar (preferably sucanat) or brown rice syrup
    1/2 tsp each salt, cinnamon, allspice and powdered ginger
    1/4 cup each raw pumpkin seeds, sunflower seeds, ground flax, carob chips and raisins or chopped prunes
    1 tsp vanilla extract
    1 3/4 cup flour
    1 tsp each baking powder and baking soda



    In a large bowl, mash the bananas and blend with 'milk, oil, vanilla, and brown rice syrup if using. Stir in all the seeds, carob chips and raisins or prunes. In a small bowl combine flour, sugar if using, baking powder, baking soda, salt and spices. Stir into the banana mixture without over-mixing. (If using sugar instead of syrup you might need a little more 'milk.) Pour into a lightly oiled loaf pan and bake at 350F for 45-55 minutes (check if a knife inserted in the center comes out dry). Makes 1 loaf.

    Hello Everyone! I am so sleepy. I didn't get to bed until 10:30 and was up just before 5am. I could use a couple more hours. I will definitely be napping when I get home this afternoon.

     

    Twinkle, I want to make that avocado bread just because I have 3 avocados in the fridge. But I can't think of a thing to eat it with. I always think of quick breads as sweet. I know they all are not but that's just what comes to mind. And when I eat a sweet quick bread, I usually heat it up and smear it with butter. Sugar and butter are always a good combination.But this avocado bread has me miffed. I can't imagine the taste and can't imagine me just sitting and eating it. It seems like it should be eaten with something. What do you think? HmmMaybe my brain is just in a fog. Feels like it.

    Congrats Char! How exciting when someone else is having a baby! he he he I've never had a baby and can't decide if I want one or not. I always tease other mothers when their child is acting up or has a runny nose or a really messy diaper..."That's reason # 5,310 why I don't have children" - "That's reason # 632 why I don't have children". I know, if I ever do have children, that I will eat those words one day. Oh well, you have to laugh!Big Smile

     

    Scott is feeling much better. Just a cough now. He's scheduled to come home April 15th (unless they change their minds again). Then he will be off work (no questions asked) with pay for the next two weeks. And this does not cut into his vacation time. I love his boss. He takes very good care of my lovey. He also asks about me and how I handle Scott being away so often. He wants to make sure that Scott's job doesn't burn him out or cause stress on our relationship. He's a good man in my book. OH, I was on the phone with Scott yesterday while he was on his way to work (in a Taxi). There was an accident just ahead of them and he saw a body under a blanket as they drove by. A man on a moped was hit by a car and killed. It was really awful. The city is full of moped drivers who whiz in and out of traffic like mad, it's a wonder it doesn't happen more often. Phew!

     

    Well, I must scoot and check out other threads. A little disappointed today because I started a new thread - another food/recipe game similar to the original that's still floating around. No one responded and I got tired of bumping it up. Guess not everyone thought it was such a good idea. Oh well. I'll get over it. Hope everyone has a sunny day!Paradise Full of hope for all of you!

    hi shannon - hope you get to nap a bit later - i enjoy a afternoon nap now and then - just 20 min - lovely..

     

    regarding that very healthy avocado bread i have the same feeling you do - it sounds fascinating weird.... hmmm maybe if i smell it i can decide wht i would like to eat with it - but avocado is actually often used in desserts - as ice cream or else especially in southern america.... If i am correct avocado is a berry or something - i have to google it -lol

    Aloha Quick Bread

    1/2 C. (1 stick) butter, softened

    1 C. sugar

    2 eggs

    1 C. mashed banana

    1/4 cup milk

    1 T. grated orange rind

    1 t. vanilla extract

    1/2 t. almond extract

    2 C. flour

    1/2 t. salt

    1 t. baking soda

    1 C. flaked coconut

    1/2 C. chopped macadamia nuts

    1/2 C. crushed pineapple, drained

    In a large mixing bowl, cream butter and sugar. Beat in eggs one at a time. Beat in banana, milk, orange rind and extracts. Combine flour, salt and baking soda. Add to wet ingredients and mix just until moistened. Fold in coconut, nuts and pineapple.

    Turn into prepared pan. Bake 1 hour and 20 minutes or until a toothpick inserted near the center comes out clean. (Start checking after 1 hour.)

    Serves 12.

    Fig Newton Sweet Bread

    1 1/2 cups all-purpose flour
    2/3 cup granulated sugar
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    2 beaten eggs
    1/2 cup milk
    1/3 cup oil
    1 teaspoon vanilla extract



    Combine all ingredients together. Put in a loaf pan. Swirl in filling and bake at 350 degrees F for 1 hour 45 minutes.


    Filling
    1/3 cup firmly packed brown sugar
    1/2 teaspoon cinnamon
    2 tablespoons butter
    10 Fig Newtons


    Crumble together and swirl into the batter with a knife to marbleize.

    ROOT BEER RYE BREAD

    "Root beer adds flavor and gives the yeast a big push!"



    2 pkgs. Red Star Instant Blend Dry Yeast
    2 1/4 cups warm root beer (110-115 degrees F)
    1 1/2 cups rye flour
    1/3 cup dark molasses
    1 tbsp. salt
    4 3/4 to 5 1/4 cups all-purpose flour, divided use
    1/4 cup soft shortening



    Dissolve yeast in root beer in large bowl; add rye flour, molasses, salt and about 2 cups of white flour. Beat until smooth. Stir in shortening and remaining flour to form a soft dough. Knead until smooth. Place in greased bowl; turn. Cover. Let rise in warm place about 1 hour or until doubled.

    Punch down. Let rest 15 minutes.

    Divide in two and shape into loaves. Place in lightly greased bread pans, 5x9x3-inches. Dough will fill pans about one-third full. Cover. Let rise in warm place about 1 hour - center of dough will be only slightly above pan rim.

    Bake in preheated 375 degree F (quick moderate) oven 40 to 50 minutes or until well browned. Cover with foil after first 20 minutes to prevent crusts from excess browning before bread is done. Remove from pans and cool on racks.

    Hi Twinkle and Shannon!

     

    Twinkle I know what you mean about it just being the time to have kids! One person that I worked with, she was on birth control, and she got pregnant...she had a hard time convincing her bf that she wasn't cheating on him............

     

    My sil is coming down today with her two kids, so we will have a very intertaining weekend! LOL! The lilttle girl will be three in May, and the little boy just turned a year old in Feb..

     

    When I see kids that are misbehaved I am thankful that I don't have to deal with that, but when Mother's Day comes around I want kids realy bad! How's that for a split personality! LOL!

    I do think things happen for a reason though.....

     

    Well enough talk about kids!

    Got to get going and get lunch ready!

    Hello ladies. Well, we are going away for the weekend, really looking forward to some time away, just relax and visit with my cousins and aunt and uncle.  Taking the kids to a motel, they will be so excited when they find out!  they have only once stayed at a motel, and it was kinda dumpy, but it was a small town with no other choice!

     

    Twinkle, funny, we found the pastries in Europe to be blah because they weren't sweet enough!! LOL, I normally dont' like really sweet things, but I guess I like it sweeter then Europeans.  Well, we were on such a tight budget, that we couldn't acutally afford to buy anything, but the once or twice that I did splurge, it was a bit dissapointing.  But mostly it was lack of $$$$.

     

    Shannon, that is great that your DH boss is so carring.  So you must not be too terrible old if you still somtimes consider having kids.  I have three of my own, youngest is going to be four soon.  I so miss the baby stage, but not that inbetween stage where they are neither baby, nor responsible for anything including bathroom time!!  Nightmares of potty training keep me from having more!

     

    Well, I am starving, time for breakfast I guess, then DH will come home, and hopefully we will be able to leave right after!

    This is a recipe that I devised to copy a bread at our local store.

    Marathon Energy Bread

    1 5/8 c water

    2 Tbls honey

    ¼ c shredded carrots

    ¼ c applesauce

    3 c bread flour

    1 c rye flour

    1 c white whole wheat flour

    1/3 c sunflower seeds

    1/3 c pumpkin seeds

    2 Tbls whole flax seeds

    2 Tbls ground flax seeds

    2 Tbls wheat germ

    2 Tbls rolled oats

    2 Tbls sesame seeds

    2 Tbls lecithin

    2 Tbls banana chips chopped

    1 Tbls wheat gluten

    1 Tbls potato flakes

    1 tsp diastolic malt powder

    ½ tsp salt

    1/8 tsp ascorbic acid

    1 ½ tsp instant yeast

     

    Place all ingredients in bread machine pan.  Use the dough cycle only.  Remove dough and shape into loaf. Place in greased two 9 x 5 pans.  Let rise until doubled ~40 min. Bake at 375° for 40 minutes.  Remove from pan and cool.

    This is our "Everyday" bread.  Flour is getting more expensive - I usually bake all our bread.  I just about fell over when I had to buy a loaf of bread the other day!  It makes a bag of flour seem not so bad!

     

    Honey Wheat-Oatmeal Bread2 1/4 teaspoons (approx. 1 packet) active dry yeast1 3/4 cups lukewarm water2 tablespoons honey3 cups King Arthur Special Flour for Machines1 cup King Arthur Stone Ground Whole Wheat Flour1 cup rolled oats ("old-fashioned" oats are best)2 tablespoons instant mashed potatoes (optional)2 teaspoons salt1/4 cup vegetable oilBread Machine Instructions: Place all of the ingredients into the pan of your bread machine, program the machine for Manual or Dough, and press Start. When the machine completes its cycle, continue at * below.Mixer/Food Processor Instructions: In the bowl of your mixer or processor, dissolve the yeast and honey in the warm water. Add the flours, oatmeal, salt and batter. Using a mixer, mix for 2 minutes, switch to the dough hook, then knead for 10 minutes. Using a processor, process for 90 seconds. Transfer the dough to a lightly greased bowl, cover it, and allow it to rise for 1 hour, or till doubled in bulk. *Shape dough into a loaf, and place it in 2 greased 8X4-inch bread pans. Lightly cover the dough, and allow it to rise for 20-30 minutes, or until it has risen 1 to 2 inches over the top of the pan.Bake the bread in a preheated 350°F oven for 30 minutes, or until it tested done (its internal temperature will read 190°F on an instant-read thermometer). Remove the bread from the pans and cool it on a wire rack. Yield: 2 loaves.

    Maple Oat Bread

    1 cup of old fashioned oats
    1 cup of boiling water
    1 pkg of yeast
    1/3 cup of warm water
    1/2 cup of maple syrup
    2 tsp of canola oil
    1 1/2 tsp of salt
    3 1/2 - 4 cups of flour

    Topping:
    1 egg white, lightly beaten
    2 tbsp of oats

    In a blender or food processor, cover and process oats for 6-7 seconds or unitl coarsely chopped. Transfer to a small bowl, add boiling water. Let mixture stand unitl cooled to 110*-115*. In a mixing bowl, dissolve yeast in 1/3 cup warm water, add syrup, oil, salt, oat mixture and 2 cups of flour, beat unitl smooth. Stir in enough remaing flour to form a soft dough. Turn onto a lightly floured surface, knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise ina warm place until doubled, about 1 hour.
    Punch down. Turn onto a lightly floured surface. Shape into a flattened 9 inch round loaf. Place ina greased 9 inch round baking dish. Cover and let rise until doubled, about 45 minutes. Brush with egg white, sprinkle with oats. Bake at 350* for 30 - 35 minutes or unitl golden brown. Remove from pan to cool.

    char i know what you mean it is true many bakeries in europe are now supplied by factories and everythign tastes the same and it can be just like baked air -lol..... so i completly feel for you the presentation is so tempting and then you take a bit and you think you eat a rice waffle.... i am lucky we still have a bakery that produces by them selves and the pastry chef is really good...Enjoy your little vaccation in the motel!!

     

    jet have a nice weekend with the kids - you will have your hands full i am sure!! you do not have a split personality - that is normal and human - lol everything else would scare me..... who would want misbehaved or difficult children!!

    Hello Ladies :)

     

    Lol, on kids - mine are now 20 and 22, still live at home.  I enjoyed them every step of the way, what characters.  When I found out I was PG, told hubby, you better be VERY NICE to me, because this is gonna be weird, and he was.  When home, he was Mr. Mom to give me a break.

     

    Twinkle, get out for some good German fresh air, watch out for logs.  Dobie goes out about 5 a.m. and just barks at nothing 3-4 times.  If you have children and dogs, may God bless you.

     

    Char, kids just love going to a hotel, they don't care if fancy or not.  We dragged our two sons on many hubby-business trips - it was a good time to teach them restaurant, etc. manners.  Now they're "Mr. Continental," 

     

    Shannon, your DF's boss knows that a happy wife makes a happy/productive hubby.  Which, in turn, makes your DF's boss look good.  In Chicagoland, in the 80's, there were actually seminars that "taught you how to be the best corporate wife."  Well, blow me to Bermuda as Merlin would say.  DH saw this and said I wouldn't be the best candidate; I told him he should go and give everyone a thrill.

     

    Wisconsin has always had lovely wheat fields.  Now being replaced by corn fields for the production of ethanol fuel.  I live in the middle of farmlands; most of wheat is replaced, so no wonder that the price of flour is up.  Yes, I'll pay the inflated $ for flour, to keep the wheat-growers in business.  Our state senators want to make ethanol the only fuel of choice for Wisconsin.

     

    Have made some savory breads; usually, they were not a hit.  I'd have absolutely no idea what to do with a bread made of avocados.  Plus, who wants to eat green bread.  lydia

    Herb Bread



    3 cups all - purpose flour
    2 tablespoons sugar
    1 tablespoon baking powder
    2 teaspoons caraway seeds
    1/2 teaspoon ground nutmeg
    1/2 teaspoon dried whole thyme
    1/2 teaspoon salt
    1 egg, beaten
    1 1/2 cups milk
    1/2 cup vegetable oil

     

    Combine flour, sugar, baking powder, and seasonings in a large mixing bowl; stir well. Combine remaining ingredients; add to dry ingredients, stirring just until moistened. Spoon into a greased and floured 8 1/2 - x 4 1/2 - x 3 - inch loaf pan.

    Bake at 350 degrees for 50 to 55 minutes or until a wooden pick inserted in center comes out clean.
