Chicken Cordon Bleu Casserole

    Chicken Cordon Bleu Casserole

    Do you have leftover Easter ham?  This yummy casserole is a hit.  Add a salad and possibly fruit to the menu, and you have a great meal!


    CHICKEN CORDON BLEU CASSEROLE

    1-1/2 pounds boneless chicken breasts, cooked and cubed
    2 cups ham, chopped
    2 cups Swiss cheese, shredded
    1 can cream of mushroom OR cream of celery soup
    1/2 soup can water
    plain bread crumbs

    -- Preheat oven to 350 degrees.  Spray a 2 quart rectangular casserole dish with non-stick spray.
    -- Mix soup with water.  Set aside.
    -- Sprinkle dish with layer of bread crumbs.  Then, half of the chicken, half of the ham, half of the cheese, and half of the soup mixture.  Repeat layers.  Top with a layer of bread crumbs.            
    --  Bake covered for 45 minutes.

    Sounds like something DH would like.  Definitely one to try.

    Just curious - are you from the Holland area?  My mil and fil are planning on buying in that area as soon as they sell their present home.

    We live approximately 25 miles east, but frequently drive to Holland to visit family.  Do you live in Michigan, too?

    Wow, this looks really good. And we just happen to have several pkgs. of cut up ham and some boneless chicken breasts in the freezer.

    I read the recipe to DW and she said to please save it-it sounded delicious.

    Please let me know how you like it.  We had some leftover.  I thinned it with milk and tossed in some freshly cooked noodles.  Leftovers disappeared.  Stick out tongue

    Thank you for sharing this recipe with us. We had a fairly big ham cooked for Easter and those who were expected got caught in snow in the south. We were won dering about the different ways to use it up, other than freezing bstches of it for future use.

    Thanks for sharing Vicki,  This is a much easier recipe then the one I have~  Sounds great~

    I want to make this for 4 adults and 1 three yr old.  Do you think it would be the right size?  I hate to not have enough.Gail

    Gail,
    This recipe was made in a 2 quart rectangular pan, almost 13 by 9. You should have more than enough.  With only a salad and a banana, my husband and I ate less than half of the casserole.

    P.S.  If you want a little more with the meal, add a vegetable dish, rolls, and/or pasta.
