    looking for a original sopapilla recipe?

    i  would love to make homemade sopapillas for my family, the pre-mix type doesn"t taste the way the mexican restaurants make them very light and airy,can someone help....

    My mother in law went to Mexico sometime in the early '70 s & when she came back she made these often.Hope you enjoy.

                 Sopaipillas

      Dissolve  one pkg. dry yeast in 1/4 c. lukewarm water.Bring 3/4 c.milk, 6 T. sugar & 1 tsp.saltto a boil.Stir in  2 T.butter.Cook to lukewarm & stir  into yeast mixture. Stir in 1 beaten egg.  Gradually beat in 3 c. flour. Cover dough & let rest 1 1/2 hrs.  Knead & let rest for another 10 min.Roll dough 1/4 in. thick. Cut into  2 X 3 strips. (She cut them into cicles using a large water glass.)Fry in deep Hot fat till golden brown,turning only once.(Should puff up) They are delicious served with honey,sugar or plain. Keep warm.
