    brownie discussion..

    do you make brownies from scatch or from a mix..what do you add to the brownies to make them yummy..

    my dh went to visit his mother and step father..so i baked them a batch of brownies..my step fil..said it was the best brownie he's ever tasted..could be because he's been on a vegan diet for several mos..the brownie was made from a mix and i tossed in reeses pieces candy chips.

    I use a mix.  I like triple chunk or chocolate chunk.  It has a pic of Hershey's on the box.  I like the hard edges all the way around and everyone else can have the middle!

    I make them from scratch.  Mixes taste so...."mix-y" to me.  Somewhere around here I have a good brownie recipe or two -- one plain, one with cream cheese.  Haven't made them in forever, because I'd just eat them!

    We call the harder edges around brownies the "brownie bones."  We like them, but I can keep them from happening if I shield the top edges of the pan with foil strips.

    My mom used to make the best brownies....unfortunately the recipe was in her head and even tho' I watched her and have the basics, mine never turn out as good as hers.

    So for now, at least, I use the boxed brownies.  Think it's Betty Crocker w/ walnuts & they turn out pretty good.  Not as good as mom's but what can I do?

    I don't care for the flavor of brownies from a mix, so I always bake from scratch.

    The Best Brownies

    1 c melted butter (may use 1/2 butter flavored shortening)

    2 c sugar

    4 eggs

    1 t vanilla

    2 1/4 c flour

    2/3 c cocoa

    1 c chocolate chips

    1 c chopped nuts

    Mix all ingredients well.  Bake in a greased 13 X 9 pan at 350° for 35 minutes.  No frosting is needed.

    Even when following a recipe written down by my mom, it never comes out as good.  Or at least not as good as I remember it from when I was a kid.  Of course, at that time, she was the one cooking it so that's probably the key!

    I only shield for my "Sunday Go To Meeting" brownies....if they're staying home with us, then I make bones.  Big Smile

    BTW, the leftover pieces of crusts on pizza, if you have someone who won't eat that part, are also called bones.  Wink

    I make them both ways, from scratch and from a box.  Just depends on how ambitious I feel & if the boxes were on sale that week.  They never last more then a day here, so the effort only really matters to me.  The kids like it when I put reeses chips in them.

    Yup....I also never been able to duplicate her Tamale Pie recipe...and God knows I've tried!! LOL

    They're easy and I don't worry about them falling, so I always make them from scratch.  I use various recipes, but this is one of my favorites.  I think this one may be from the BB but I'm not sure:

     

    The Best Fudge Brownies Ever

    1 cup butter
    2-1/4 cups sugar
    1-1/4 cups Dutch process cocoa
    1/2 tsp. salt
    1 tsp. baking powder
    1 Tbsp. vanilla extract
    4 large eggs
    1-1/2 cups King Arthur Unbleached All-Purpose Flour
    2 cups (12-oz bag) chocolate chips

    Preheat the oven to 350 degrees. Lightly grease a 9x13 pan.

    In a medium-size microwave-safe bowl, or in a saucepan set over low heat, melt the butter, then add the sugar and stir to combine. Return the mixture to the heat (or microwave) briefly, just till it's hot, but not bubbling; it'll become shiny-looking as you stir it. Heating the butter and sugar a second time will dissolve more of the sugar, which will yield a shiny top crust on your brownies. Transfer the mixture to a mixing bowl.

    Stir in the cocoa, salt, baking powder, and vanilla. Add the eggs, beating till smooth; then add the flour and chips, beating till well combined. Spoon the batter into the prepared pan.

    Bake the brownies for 28-30 minutes, until a cake tester inserted into the center comes out dry (though it may have a few crumbs clinging to it). The brownies should feel set both on the edges and in the center. Remove them from the oven, and after 5 minutes loosen the edges with a table knife; this helps prevent the brownies from sinking in the center as they cool. Cool completely before cutting and serving.

    I make them from a mix and from scratch. My  favorite homemade brownies are the cookie dough brownies,I think the recipe came from here. I f i make them from a mix,as soon as they are out of the oven,I add chocolate chips and toasted chopped pecans. Now I want a brownie...
