    Looking for a Macaroni and Cheese Recipe

     A couple of years ago I made a macaroni and cheese dish that was wonderful. It was very easy because you did not cook the macaroni at all. If I remember right, you melted butter in a 9x13" pan and then you added uncooked macaroni, several cups of milk, and Velveeta cheese (maybe some other ingredients as well). It all baked in the pan was delicious.  

    Since the macaroni was essentially cooked in the milk/cheese mixture it was really nicely flavored. Also, it was so much easier than regular mac and cheese... one pot cooking! 

    Does anyone have the quantities for this recipe?

    Here is one but it uses reg cheese not velveeta 

     

     

    Creamy Macaroni and Cheese
    Time: 1 hour 15 minutes

    2 tablespoons butter
    1 cup cottage cheese (not lowfat)
    2 cups milk (not skim)
    1 teaspoon dry mustard
    Pinch cayenne
    Pinch freshly grated nutmeg
    1/2 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    1 pound sharp or extra-sharp cheddar cheese, grated
    1/2 pound elbow pasta, uncooked.

    1. Heat oven to 375 degrees and position an oven rack in upper third of oven. Use 1 tablespoon butter to butter a 9-inch round or square baking pan.

    2. In a blender, purée cottage cheese, milk, mustard, cayenne, nutmeg and salt and pepper together. Reserve 1/4 cup grated cheese for topping. In a large bowl, combine remaining grated cheese, milk mixture and uncooked pasta. Pour into prepared pan, cover tightly with foil and bake 30 minutes.

    3. Uncover pan, stir gently, sprinkle with reserved cheese and dot with remaining tablespoon butter. Bake, uncovered, 30 minutes more, until browned. Let cool at least 15 minutes before serving.

    Susan's - Omatje_Calif - macaroni and cheese recipe gets rave reviews.  However, this recipe also uses regular cheese.



    OVEN BAKED MACARONI AND CHEESE by Omatje_Calif

    Melt 3 TBsp. margarine in a 2 quart baking dish (I used pyrex dish)
    Add 2 1/2 cups UNCOOKED elbow macaroni (mix together)
    Add 1/2 tsp. salt, pepper to taste
    3 cups shredded cheese..toss lightly together
    Pour in 1 quart of milk DO NOT STIR...DO NOT COVER
    Bake at 350 degree for 1 hour

    I have been making this for a couple of years and was scared it would bake over the baking dish, so I put a cookie sheet under it in the oven, but it never went over the top.

    I've searched many, many recipes at this site and others, but the key is that I want to only use my 9x13" pan. I don't want to have to cook the macaroni in a pot or make a roux and cheese sauce. The recipe I had was very good... and very simple. I'm all about the simple right now since I am a mom/wife/student, etc.

    My favorite macaroni and Cheese is also VERY easy! When it comes to recipes, easy and favorite are synonomous for me!

    Here goes...

    BAKED MACARONI AND CHEESE posted by Mama2004

    2 T. butter
    1-1/2 c. uncooked macaroni
    1t. salt
    dash of pepper
    1-1/2 c. cubed Velveeta cheese
    4 c. milk

    In a 2-1/2 quart casserole melt butter. Stir in macaroni and sprinkle with salt and pepper. Top with cheese and pour milk over all. DO NOT STIR! Bake at 275 for 2-1/2 hours or at 300 for 3 hours.
