    lemon meringue pie

    I tried this pie from the last issue of taste of home and the meringue looked so pretty but after I let it cool in the refrig for three hrs the meringue shrunk and when I cut the first piece there was a lot of liquid in the bottom of the pie plate.  What did I do wrong?

    I don't know about the extra liquid in the bottom, but my mom always told me to make sure when you're spreading the meringue over the top of the pie, to make sure it is touching the crust, apparently that kind of makes it stay to the edge of the pie and it won't shrink. Hope this helpsSmile

    If you put the pie in the refrigerator before it had cooled - it sweated - that would cause the meringue to shrink and the bottom to be wet.
