Cooking Pleasures has a recipe this month that is flourless. It's called the Chocolate Tweed Passover Torte. It's yummy.
Cake
1 cup walnuts,chopped
2 tablespoons plus 1/2 cup sugar, divided
9 oz. 70% bittersweet chocolate, coarsely chopped
1 tablespoon grated orange zest
1/8 teaspoon salt
7 egg whites
1/4 teaspoon cream of tarter
Heat oven to 350*. Lightly spray sides of a 9" springform pan with cooking spray, line the bottom with parchment paper.
Pulse walnuts and 1 tablespoon sugar together in a food processor until finely ground. Wipe excess oil from processor bowl. Pulse chocolate and 1 tablespoon sugar until mixture resembles crumbs ranging from very fine to 1/4" pieces. Add to nuts, along with orange zest and salt, stir to combine.
Beat egg whites and cream of tartar in a large bowl at medium speed until soft peaks form. Gradually add the 1/2 cup sugar, beating until egg whites are stiff and glossy but not dry, 2-3 minutes. Pour 1/2 of the chocolate and nut mixture over the whites and fold until incorporated. Repeat with the rest of the mixture. Place in springform, spread gently to level. Bake 30-35 minutes or until torte is golden brown on top and springs back when pressed gently with fingers. Rest for 10 minutes then slide knife or thin spatula around sides of pan. Serve room temperature. Serve with some homemade whipped cream.
