For breakfast I pre-make breakfast burritos at home. I use eggs, potatoes, onions and sausage. Then I wrap them in foil & freeze them. When I go camping I pack the burritos in a cooler and throw them on the BBQ each morning to heat them up. It works perfect for a 2-3 day camping trip.
For dinner I pre-make chili and then freeze it in ice cube trays. Once frozen I throw the cubes in a large zip lock bag & take them on my camping trip. This way I can decide how much to cook & when. I usually heat it in a pot over an open fire.
Here's my chili recipe:
1 lb. ground beef, turkey, chicken, pork, or buffalo
1/2 cup water
1 can(14.5 oz)diced tomatoes undrained
1 can kidney, pinto, or black beans
1 chili seasoning packet(I use Amazing Taste for Chili Seasoning)
Brown meat in large skillet on medium heat. Add water, seasoning, tomato, beans, stir well. Bring to boil. Cover, reduce heat and simmer 10 minutes, stirring occasionally. Serve if desired with shredded cheddar cheese, sour cream and chopped onions.
