2 onions,sliced thin
2 ribs celery,sliced thin
2 clove garlic,pressed
1(2-3 lb.) beef brisket
2 tsp. salt
1 1/2 tsp. chipotle powder
1 cup chopped cilantro
flour tortillas
Toppings: Mexican cheese blend,sour cream,salsa,chopped cilantro,lime wedges.
Place the first 3 ingredients in a 6 qt. slow cooker.Trim fat from bisket;cut brisket into 3" pieces.Rub pieces evenly with the salt and chipotle powder and place on top of the vegetables in slow cooker.Top with 1 cup cilantro.Cover and cook on high for 6-8 hours.Remove brisket and cool slightly.Shred the brisket using two forks.Serve in the flour tortillas with desired toppings.
