    Jolene - hope you & Jake have a good day. We're doing burgers tonight on the grill if the rain holds off. Well - I can do them on the george foreman but they don't taste as good :-)

    Jen - glad you & your family made it out of the storm ok. I"m really glad the  neighbor man wasn't home, how scary!  I can't believe your wedding is only a month away Surprise  have fun at the fitting tonight

    Muril - have a great day with Miss Nancy!! Lunch should be a lot of fun if her friend is anything like her LOL!!!

     Jet - hope you have a good day :-)  did you get bad storms last night?

    Dusta - we don't have Popeye's here, but we do like BoJangles when we have fried chicken. Which is seldom but every once in a while dh and I get a taste for it.

    supposed to be near 80 today, with chances of rain tonight and tomorrow. We need to cut the grass again, not sure if it will get done before the rain.  I'd like to get out to the park tonight, and I'd like to get to the bookstore. It's at the mall & if it rains saturday the mall will be packed so I'd like to go tonight. We'll see. We're going to have turkey burgers on the grill and grilled dijon potato salad. I'll see if I can find the recipe & post it, it's good. And I think relatively good for you, minus the starch/potatoes.

     I found it!! 

     

    Dijon Grilled Potato Salad

     

    Serves: 4

    Source: Taste of Home website

    ~this can be baked in the oven or crockpot also, I do those often

     

    Ingredients:

    1/3 c. Olive Oil

    1/3 c. Dijon Mustard

    1/3 c. Red Wine Vinegar

    Salt & Pepper

    4 Baking Potatoes, cut into chunks

    1 Onion, cut into wedges

    1-2 tsp. Parsley (or 1-2 tbsp. Fresh)

     Instructions:

    Blend oil, mustard and vinegar. Season to taste with parsley, salt and pepper. Toss potatoes and onions with dressing mixture until well coated. Spoon onto greased double thickness of foil; seal well. Place on grill over medium coals. Grill 20 to 25 minutes or until potatoes are tender, turning packet occasionally.

     

    To bake - I spread in a foil lined 9x13 (spray foil w/ nonstick). Cover loosely with another piece of foil then bake at 400-425 for 30-45 minutes or unilt potatoes are done. 

    Crockpot - spray crockpot w/ non stick then mix everything together. cover & cook on low all day

    Good Morning.  We had some pretty rough storms last night - couple of inches of rain.  It's real cloudy today and chance for more rain all day.  This weekend is to be wet and cold. 

    Jolene - Sorry you didn't get much sleep - hopefully you and Jake will have a peaceful day.

    Dawn - Hope you can get to the bookstore tonight - I HATE the mall on weekends, especially when it's raining.

    Jen - So glad you are OK - sounds like an eventful night.  Enjoy your last fitting and your weekend sounds fun.  These last couple of weeks will fly by . . . . just keep focusing on the honeymoon.  Smile

    Jet - Hope you are feeling better.  Did you get much rain last night??

    Dusta - We have a Popeye's here but I've never been - I've seen a couple of their commercials and it sure looks good.  I haven't tried the South Beach pizzas but I have a coupon so I think I'll pick one up and give it a whirl.  Pizza sounds really good about now.  Hope Mel is feeling better today.

    Was able to get out and walk, I think I was gone about 45 minutes. I am going to get in the car and drive where I walked to check mileage, LOL. Seems like 2 miles, but it was probably 1/2.

     

    Popeye's are all over this area, my area, in LA.  I think it was last week, but the man that started them died, I believe he had cancer, was 64.  I check my orders before I leave too. The other morning I went to McD's and got an egg mcmuffin, no cheese, and the wrapper said double checked, it didn't have cheese.

     

    Dawn the potatoes sound good.  I would love to have a big fat juicy burger, cooked out.

    I was talking to my mom and we were wondering if maybe I didn't have strep throat......if I don't get better soon I will go to the doctor and get some medicine, so far I have been taking over the counter medicine, and my symptoms are less but are still there.....

     

    Last night we got about 1 12/ to 2 inches of rain and we did get a couple of bad storms, but no tornados...(thanks goodness)!!!

    don't know why but I have a taste for yellow cake with chocolate frosting. Not sure if it's my sweet tooth or pregnancy LOL!! I'mt thinking pregnancy since it's so specific - I can almost taste it. Which means I"ll be baking this weekend....  I may make cupcakes - we can keep some but I can give the majority to the neighbors or dh can bring them into work monday.

    Jake is not a cooperative patient.    I've practically had to sit with him all day to get him to stay on the couch.    Tim bailed early for work because Jake was being a terror, and I am about to fall asleep standing up.    Hopefully he will go right to bed tonight and I can get some rest too.

     

    Lunch today was tacos with 97% lean ground beef, drained, and since I didn't have any tomatoes I spooned some mild salsa over the meat.     Very good.    I've got 6 points left for dinner and I'm considering English muffin pizza (light english muffin, tiny bit of sauce, sprinkle of cheese).   


    Jen, how SCARY!   I'm so glad you all are ok.    I can't even imagine having to deal with tornadoes or hurricanes.   I b!tch about the snow, but I wouldn't trade for either of those!   Have fun at your fitting/lessons, sounds like a great evening    :)

     

    Dawn, hope your weather cooperated and you get out to the bookstore tonight!   Library is holding CARROT CAKE MURDER for me, need to run by and pick it up tomorrow.    Have to say, I gave my GF grill away, hated it.   I bought a grill pan for the stove top instead, I especially like it for panini.    Potatoes look yummy, not a mayo fan, so I like the more dressing based potato salads.    Good plan on the making the cupcakes and then sending the rest out of the house, it's why Tim's coworkers love me   :)

     

    Michelle, sorry about your icky weather too.   Pizza always sounds good to me   LOL   

     

    Dusta, glad you got out on your walk!   LOL about it always feeling further than what it is.   Tomorrow is the MS Walk, not doing it this year because my sister really messed up her foot falling down our stairs and she needs surgery.    It was real early this year, and we wouldn't gotten rained on, so I don't feel too bad.     We'll look for a different charity walk to do in the fall instead.

     

    Jet, hope you get to feeling better soon and that it's NOT strep!   I'd do just about anything to avoid a throat culture, gosh I hate those things.     Get lots of rest and take care of yourself!

    I had a good day today.  Guess what?  Miss Lita (pronounced Leeta) is almost as cute and sweet as Miss Nancy. :)  We had a nice lunch out at a club they both belong to- it was Miss Nancy's treat of course. I got the blackened chicken sandwich- Miss Nancy got a fried oyster sandwich and Miss Lita got Welsh Rarebit. All entrees came with chips ...unfortunate for me - because I munched them away- empty calories now that I think about it. Embarrassed The sandwich was yummy though! :)

     

    DH and I went to Chinese Buffet for supper and I ate too much. Thank God tomorrow is another day! :)

     

    Jolene, sorry you are so tired. Hope Jake goes to bed without a hitch and you get some "Me" time to relax and do what you want to do. :)  Have a relaxing evening.

     

    Dawn, sorry I didn't see this sooner or I could have shared our favorite yellow cake with chocolate frosting recipes. It is Ryan(DS#2) favorite cake - we have it on all his B'days and when I feel like making something special for Mom as well- it is her favorite! :) Anyway- Happy Eating! :)

     

    Jet, Hope you are feeling better. If it is strep, the throat thing won't go away without meds- I think.

    Morning everyone.   Crazy pounding rain here since 6am.    Even though Jake didn't get to bed til almost 9, he was still up before 6.     Tim got out of work early, he was home by 10, so I made his dinner and got to to bed by midnight.    I watched Catch & Release after Jake went to sleep, don't know what it is about that movie, I just love it.


    Today my sister is coming and we are going out to lunch.   Uno's, Jake's choice.     I'm not fond of the food there, but it is one of the few places Jake will sit and eat all his meal.    It's good because they give the NI on their website for all their food items.   The bad side to that is it's often premade and they just reheat it.    Today I'm having a side Caesar salad (5pts) and cheese flatbread pizza (5pts for 1/3 of the pizza).   


    I've got to get through just one weekend OP.   Catch that groove back.   Last weekend I totally lost it after the call about my grandmother, not that day, but the next, Chinese food out with Tim, then pizza on Sunday.      I've started having anxiety about summer and short sleeves and bathing suits and meeting the staff at Jake's new school.    Tim says I've been having frequent nightmares and thrashing in my sleep.     I need to do something to take control.

     

    Muril, sounds like a fun day with 2 fun ladies!  Blackened chicken sandwich sounds yummy.

    Good morning. Mel was on the computer when I got up, about 6, and just now got off. Rained last night and for a while looked like it was going to clear. We are talking about going to the mall, just to get out. They do have a parking garage and we can walk in and not get wet if it rains again.

     

    Muril the walk was 2.2 and the heel is not bothering me this morning. :)  Glad you had fun with the ladies.  Something was said about eating out today, but I have eaten out 3 times since Thursday and I do not want to eat out anymore this week.

     

    Have fun with your sister Jolene. Finished My Sister's Keeper.  Have another to read, but not by this author.

     

    Talked with DM this morning and she told me again that she is going to start driving. Don't think it is a good idea, legally blind in one eye among other things. But I didn't say anything, she is really hard headed, hope she changes her mind, since she can't get in the car without help.

    Well, no y.s. today because it was too rain-y looking- everyone thought it may rain- actually it did last night. :)  It is slightly breezy, cloudy and about 72 degrees- feels colder because of the cool breeze. It is getting colder again tomorrow and they are even predicting snow showers. Good Grief! :)

     

    We went to Penney's. I had to pick up an order that came in plus ran by the shoe dept. while there for a good deal on some sandals, and got my oldest sister a necklace for her Bday(will be Monday). We usually just do the card thing but this year is a little more special for her so thought I would do something special.  :)

     

    Jolene, hope you have a fun lunch out with your sister and Jake. That is neat that you have an ongoing thing with DS.  I have to wait on the sister get togethers. Although I will get to see oldest DS on Monday- Miss Nancy and I will meet her for lunch at Red Lobsters.  She used to work for Miss Nancy before me so we all will catch up on our lives and have a good time. :)

     

    Dusta, yeah on the distance walked.  You walked farther than my cardio workout- it is equivilant to 1&1/2 miles. Yeah on your heel behaving itself. :)  I did a new pilate routine today with Denise Austin- kinda challenging. :)   So, I got in 4 days of exercise this week- Tu/W/Thu/Sat.  Not too bad, I guess. :)

     

    We got the fixings for Reubens for supper this evening. DH wanted them so badly and I couldn't say no. :)  Seriously, going to measure out the fattening stuff like the dressing and will go light on the cheese and I do turkey instead of corned beef so that is more healthy.

    Muril 4 days sounds good to me, last week I didn't get but 2 or 3.  It rained last night and this morning, no wind and I was able to ride the bike close to lunch time. Cooler here too, enough that I had to wear jeans and something with sleeves. One day we sweat and have the air on and the next it is chilly.  It had been so long since I walked my shines hurt  today and I didn't walk fast.

     

    There is a place in Shreveport that makes good Reubens, haven't had one in ages. They have a turkey wrap that I get now, it is good. The last time I got it they were putting less meat and folding the  wrap different so they saved money. I would rather pay more instead of getting all bread. I know everything has gone up.

    DH was thinking we could have the reubens since it was Nascar race day but didn't think about it starting at 8:00pm  and it is on now- way past our supper time. :) Oh well, he almost had it figured out. :)
