    Bread Baking

    When I take off the plastic wrap, after the second rise, my bread collapses.  I spray nonstick spray on the wrap but for some reason it always sticks.  Does anyone have a suggestion(s) on how to stop this from happening?  What do you use to cover your dough?  All info will be gratefully appreciated.

    Shasta, usually when people post a question in more than one place the add that they do add they also posted in other forums.

    Many of us go to the trouble of answering and then find you already have answers somewhere else so we could have saved our time.

    I too spray plastic wrap to cover my bread dough and have never had a problem.  It might be that you are using too much yeast.  I will cause the dough to over rise and the dough can't support itself, so it will collapse.

    ??? I am wondering why the plastic wrap on the rising bread?? I have never use plastic. I have a old clean cotto table cloth that I use. My aunt used to wrap her bread in blankets or an old thin quilt even!  Then again her old house was pretty drafty. Just wondering why the plastic?  On my bread bowl it would take a pretty good hunk of plastic to cover that,

    I always have used a clean cotton dish towel.

    I use a clean damp towel.
