    ~!~ Chicken Stuffed Peppers - Texas Style ~!~

    Chichen Stuffed Peppers - Texas Style
    5 peppers
    1 c. cream cheese
    1 egg
    1/2 oz. heavy cream
    3/4 lbs. diced cooked chicken breasts
    4 oz. grated Monterey Jack cheese
    1/8 c. diced onion
    1 tbsp. seeded & minced jalapeno pepper
    1/2 tsp. diced fresh garlic
    1/2 tsp. ground cumin
    1/4 tsp. salt
    1/4 tsp. black pepper
    8 oz. chicken broth
    8 sprigs of fresh cilantro, chopped

    Rinse peppers.
    Cut peppers in half, remove core and seeds. Chop up 2 peppers. Reserve 3 remaining to "suff"
    Beat cream cheese with eggs and cream, stir in chopped peppers and remaining ingredients except chicken broth and reserved peppers.
    Mix well.
    Stuff remaining 6 pepper halves with chicken mixture and place in a baking dish that will hold them snugly.
    Pour the chicken broth around the peppers.
    Bake at 350 degrees for 1 hour or until peppers are soft and wrinkled but still intact. For individual servings, place half pepper on a plate

    That does it! I'm moving to Texas! This has everything I love in it...except chocolate...but I can squeeze that into dessert. YUM!

    I am not getting the 2 peppers (reserved part)

     

     Chop and reserve 2 peppers. ?????????????? Stuff reserved pepper halves

    Do you end up with 4 halves to stuff?

    You started with 5 peppers....

    Do you chop up 3 peppers and then cut the other 2 in half...??  So out of the 5 peppers you only use 2 to stuff???

     

    It is confusing, but sounds great.....

    psomeone correct me if I'm wrong, but this is how I am interpreting the directions. You chop 2 peppers and mix in with the cream cheese and other ingredients. That leaves you with 3 whole peppers or 6 halves. These are the 6 halves that you will stuff, giving you 6 servings when finished. I hope this is right. I am going to try this as it sounds awesome!

    Zakons,I think that it`s supposed to read-stuff 'remaining" peppers halves which should be 8 if you start out with 10 halves.

    Does anybody have chicken tuffed peppers Russian Style? The local restaurent serves them and they are good,very light. Besides chicken,they have pork or beef in them and come with a sauce,but not a tomato sauce.
