    New Thread~ Sandwiches that "Lose" the "Lids" ~ Open Faces~

    Dh and I had a most enjoyable Open Faced sandwich last week and I came to realized that sandwiches don't need lids~   So now I am on a Lidless mission~   I'll start with that enjoyable one we had~  Mama's Best Broiled Tomato Sandwich~  The marinated tomatoes are key to this recipe and so is the seasoned mayonnaise that would be "Great" on any sandwich requiring mayo~   I used sour dough bread  and if you think it sounds good,  It is~  Fresh  summer Tomatoes  are going to send this one sailing home for a real winner!~  Janie

     

     

    Mama's Best Broiled Tomato Sandwich

     

     

    Ingredients ( for the marinade)

     

    2 Tbs olive oil

     

    2 Tbs balsamic vinegar

     

    4 ripe tomatoes sliced

     

    Mix together and add the tomatoes to marinade(  Mine sat for about 20 minutes and I tossed them several times.

     

    Ingredients (for the mayonnaise spread) 

     

    3 Tbs mayonnaise ( used low fat)

     

    1/2 tsp parsley

     

    1/4 tsp oregano and black pepper

     

    3 Tbs parm cheese divided (  add 4 Tsp to the mayo mixture)

     

    4 slices of bread, lightly toasted  ( sour dough was very good)  a rustic bread would be a good choice as well~

     

    Spread some of the seasoned mayonnaise on each slice of bread. Place some of the tomatoes on top of each slice of toasted bread and sprinkle  each slice of bread with some of the left over parm cheese.  Broil till the cheese melts and slightly browns.~  Serve open faced~  Janie

    Cheddar and Chutney On Sourdough

     

    Ingredients

     

    4 thick slices of sourdough bread

     

    4 Tbs chuteny ( may need a litle more depending on how large the slices of bread are)

     

    6-oz English cheddar Cheese, grated

     

    3 Tbs butter

     

     

    Toast the bread slices and spread with some of the butter and chuteny.  Top with the cheese and Broil till the cheese melts~

    Turkey and Broccoli Melts

    Ingredients

     

     

    1/2 cup soft butter

     

    1/2 tsp tarragon leaves

     

    1 pound loaf of French Bread, cut into fourths and sliced horizonally

     

     one pound of cooked and sliced  turkey

     

    3/4 cup mayonnaise

     

    3/4 tsp tarragon leaves

     

    3 cups broccoli florets

     

    1 medium red onion, sliced

     

    8 slices of jack cheese ( 1-0z each slice)

     

    Combine the butter and 1/2 tsp tarragon. Spread on the cut bread. Divide up the turkey among the bread slices. Combine the mayonnaise and 3/4 tsp tarragon ( can use less) Spread over the turkey and top with the broccoli and onion rings.  Place sandwiches on a cookie sheet and broil for 3-5 minutes~

    Garden Tuna Melt

     

    Ingredients

    1/4 cup chopped celery

     

    1/4 cup mayonnaise

     

    6-1/2-oz can of tuna, drained

     

    4 English muffins , split and toasted

     

    8 green pepper rings

     

    8 slices of tomato

     

    8 slices of cheddar cheese

     

    2 Tbs sliced green onion

     

    Oven set at 350.  Combine the celery, mayonnaise and tuna.  Place the muffins on a cookie sheet and spread with some of the tuna mixture. Lay a green pepper slice on top and 1 slice of tomato.  Bake for 10-12 minutes then top each one with a slice of cheese.  Garnish with some of the green onions and bake for another 1-2 minutes or until the cheese melts~

    Toasted Vegtable Cheese Sandwiches

     

    Ingredients

     

    1 cup sliced fresh mushrooms

     

    2 Tbs hredded Zucchini and Carrot

     

    2 Tbs water

     

    1/2 tsp lemon juice

     

    1/8 tsp garlic powder

     

    2 tomato slices

     

    2 slices of whole wheat bread, toasted

     

    2 slices of mozzarella cheese, cut into fourths

     

     

    Combine the first 6 ingredients and saute over medium heat until crisp tender.  ( you may want to do this in olive oil verses the water, especially with the mushrooms).  Place tomato slices on the toasted bread and spoon mushroom mixture over the tomatoes. Top each with cheese pieces  and broil until the cheese is melted~

     

     

    *  Toaster Ovens are great for all of these types of recipes~  Janie

    Turkey, Cranberry Pear and Brie Open Faced Sandwiches

     

    Ingredients

     

    4 slices of sour dough bread

     

    Can of cranbery sauce

     

    Sliced Turkey

     

    1 pear , sliced

     

    8 slices of Brie cheese

     

    Olive Oil

     

     

    Lightly spread the bottom of each piece of bread with some olive oil. Place face down on a cookie sheet.  Spread with some cranberry sauce, then add a slice of  turkey, Add a few pear slices add a slice of turkey add some brie and Bake for 10  minutes till the cheese has melted.

    Ingredients

     

    1-1/2 cups fresh basil leaves packed

     

    1-1/2 Tbs grated parm cheese

     

    1-1/2 Tbs olive oil

     

    1 Tbs minced garlic

     

    3 Tbs non fat yogurt

     

    4 English Muffins, split

     

    1 Ripe tomato sliced

     

    Process  the parm cheese and olive oil and garlic. Process until well combined.

     

    Add yogurt and process till smooth. Season with salt and pepper.  Preheat the broiler and place muffin halves on a baking sheet.  Broil 1-2 minutes(  can use the toaster)

     

    Spread each 1/2 with the basil mixture and top with several tomato slices.  Broil 1-2 minutes or until heatd through.

    Hot Antipasto Open Faced Sandwich

     

    Ingredients

     

    1/4 cup creamy italian dressing mix

     

    2 Tbs parm cheese

     

    1 cup cherry tomatoes, cut into fourths

     

    14-oz can of artichoke hearts, drained and cut into fourthe

     

    1 package of pepperoni, cut up

     

    1 can sliced black olives

     

    2 poor boy buns or Portuguese rolls

     

    1/2 cup mozzarella cheese

     

     

    Mix the dressing and cheese add the tomatoes, artichoke hearts, pepperoni and olives.  Mix well. Place the buns cut side up on a cookie sheet ( cut in half,  Lenghwise )  Broil with tops 6" from the heat.    Broil till  until golden brown  Don't over toast~

     

    Spoon the mixture onto the buns. Sprinkle with the cheese and bril till cheese has melted.  Makes 4 open faced sandwiches.

    Scandinavian  Open Faced Bay Shrimp Sandwich

     

    Ingredients

     

     

    1/2 cup mayonnaise

     

    1/2 cup fresh dill (  use less)   Start with a Tbs then taste~  That 1/2 up may be over bearing!

     

    4 tsp dijon mustard

     

    2 tsp fresh lemon juice

     

    Combine all and season with salt and pepper.

     

    4 egg or pumpernickle bread slices, toasted

     

    1 pound of cooked bay shrimp, drained and patted dry

     

    4 butter lettuce leaves

     

    1/2 of English cucumber, thinly sliced

     

    4 tomato wedges

    lemon slices and additonal dill for garnishes.

     

     

    Spread 1 Tbs of the mayonnaise mixture over each toasted bread slice.  Mix shrimp into the  remainingg mayonnaise mixture..  Place 1 lettuce leaf on each slice of bread pressing to adhere arrange 6 cucumber slices atop the lettuce leaves and arrange shrimp atop the cucumbers.  Garnish with a lemon slice, tomato wedge and some fresh dill sprigs~

    thank you very much for those janie!!!  I love open faced sandwiches as this is how we eat bread in germany but i do love the other versions too -lol

     

    those recipes would make wonderful mini open face sandwiches for a party - again thanks -twinkle

    They used to serve these at a Hospital in which I worked. I make them at home today repeatedly, most especially when my garden is in full throttle.

     

    Cook 4 slices of Bacon until slightly crisp (or however you like it). Blot with paper towels. Very  Lightly toast 2 slices of bread under a pre-heated broiler. Turn the bread over and top generously with shredded or 1/4 inch slices of cheese covering all of the slice to prevent overly browned edges (DH likes Mozzarella.......I have tried many varieties if you like the cheese, you should like the sandwich....I like Pepper Jack a lot too.)

     .Broil cheese until hot and Bubbly

     

    Press 2 bacon slices on each slice of broiled cheese pressing the bacon lightly into the cheese. I usually cut each piece of bacon into 2 resulting in 4 pieces per slice.

     

    Top each with a couple Juicy slices of fresh tomato. Lightly salt with Sea salt or Seasoned salt.

     

    * Such a Fresh easy tweakable recipe. We have never tired of it. I have added Sweet Vidalia slices, lighlty fried shaved ham. pepperoni, capers, artichokes, fried mushrooms, thinly sliced Dill pickle ......The list goes on and on.

     

      Also Pretty much what in your opinion tastes good on Pizza works well with this great little sandwich..

    Bagel Divan

     

    Ingredients

     

    3 plain bagels split

     

    2 Tbs butter

     

    1 clove of garlic, minced

     

    1 cup sliced mushrooms

     

    1 small red pepper diced

     

    2 green onions, sliced

     

    2 cups diced cooked chicken

     

    1-1/2 cups cooked broccoli florets

     

    1 can of cream of mushroom soup ( Thin with a little chicken stock or make homemade)  Just a suggestion

     

    2 tsp worcestershire sauce

     

    1/2 tsp salt

     

    3/4 cup grated cheddar cheese

     

     

    Saute the garlic and mushrooms in the butter, Add the red pepper and cook for 1 minute.  Add the chicken, broccoli and green onions. Heat  Reduce the heat and add the soup, worchestershiere sauce and salt.  Stir well and heat for about 5 minutes.  Toast the bagels and lightly butter.  Spoon chicken mixture over the toasted bagel halves and top with some of the grated cheddar cheese.  Serves 4-6 ~

     

    * homemade white sauce would be very nice in this recipe and would contain less salt~  using undiluted soups  adds a pasty taste to recipes~  That is just mho~  Janie

    Kentucky  Hot Brown  With mornay Sauce

     

    Ingredients

     

    3 slices of white sandwich bread, toasted

     

    6-oz of roasted turkey

     

     1 cup of Mornay sauce ( recipe will follow)

     

    2 slices of fresh tomato

     

    2 Tbs parm cheese

     

    2 strips of bacon

     

    On a large round platter, place toasted bread so the the points meet in the center of the plate, creating a small mound.  Place the warmed turkey slices on top of the bread coverin it completely.  Cover with some of the Mornay sauce and top with some tomato slices and the parm cheese.  Broil till the cheese has melted.  Top with the bacon forming an x in the center of the presentation

     

    this recipe yields (1)  whoa~  This should serve 2 reasonable eaters~  Janie

     

     

    Morrnay Sauce

     

    Ingredients

     

    3 Tbs butter

    1 tsp finely chopped onion

     

    3 Tbs flour

     

    1 cup hot milk

     

    1/4 cup parm cheese

     

    1 tsp chopped parsley

     

    1/2 tsp salt and pepper ( can cut back to 1/4 )  Just a suggestion

     

    1/4 tsp nutmeg

     

    1 egg yolk

     

     

    Melt the butter and add the onion. Cook over low heat till softened.  Stir in the flour and cook till smooth.  Gradually add the heated milk stirring constantly.  Add remainin ingredients and cook till the cheese has melted and the sauce is smooth.  Beat the egg yolk in a small bowl and add about 1/4 cup of the hot sauce. Stir to blend then add to the sauce in the pan. Mix well until sauce is hot and again smooth.  Correct the seasonings if needed and serve hot~

     

    A double broiler can be used if fear of curdling is an issue~   ( after the onions are cooked)
