    Salmon Spread

    I rarely post in Recipes, but I just had this for lunch, and it's a long time favorite of mine. I got the recipe from a book called The 8 Week Cholesterol Cure years ago. It's great on bread as sandwiches, or on crackers.

     

    1 large (15-1/2 oz) can salmon

    1/2 cup low fat cottage cheese

    2 T finely minced onion

    1 T lemon juice

    1 tsp prepared white horseradish

    1/2 tsp salt

    1/4 tsp pepper

     

    Clean the salmon of bones and skin, put in a bowl and flake with a fork. Put the cottage cheese in a strainer, rinse with cold water until all the milk is gone and you are left with just the curds. Put all ingredients in the bowl with the salmon and mix together.

     

    This is full of protein, flavor and fish is so good for us!

    If there are no stupid questions, then what kind of questions do stupid people ask? Do they get smart just in time to ask questions?

    This sounds really good.  I just had salmon patties for lunch. I usually eat salmon of some kind at least once a week, and I'm going to have to try this recipe.  Can you just eat this like a salad? That's probably what I would do.

    Carolyn, I eat it on crackers or pita bread or just plain with a fork! I'm sure it would do well served on a lettuce leaf like chicken salad!
