    Vidalia Sweet Onion Chicken Breast Casserole

     



    Vidalia Sweet Onion Chicken Breast Casserole
    2 large chicken breasts, split & boned
    2 tablespoons vegetable oil
    2 medium-sized potatoes, peeled & sliced
    2 medium-sized Vidalia sweet onions, sliced
    1 can (10 3/4-oz) cream of mushroom soup
    Paprika

    Brown chicken in oil & drain on paper towel.


    Oil a 1 1/2-quart casserole.


    Layer potatoes on bottom; follow with a layer of onions & top with a layer of mushroom soup.


    Gently, place chicken breast on top & sprinkle with paprika.


    Cover tightly & bake at 350 degrees for 1 hour.

     Shirley ~ this is SO quick and easy but still looks like you worked half the day to get it on the table....I LOVE recipes like that and this one is on the top of our favorites, good to see you, hugs, Linda.

    It's been a long day....I haven't had anything to eat since I had coffee and oatmeal this morning.  This sounds sooooo good!  I am going to take the chicken breasts out of the freezer right now and tomorrow morning I'm driving over to the farm to pick up the vidalia onions.   This will be on the table for dinner tomorrow night!  Thank you for posting your recipe!

    This sounds so good!  Easy too.  It's a perfect dinner on those nights when I am looking for simple.  Can't wait to try it.  Thanks.

    This is also delicious with pork chops in place of chicken - It is my family's favorite! I also salt and pepper the potato layer.

    I can't get Vidalia's here in SD right now.  Have you ever used any of the other so called "sweet" onions for this?

    Nindsy, living in Canada I don't know that I have ever had a Vidalia onion???? But my store did have sweet yellow onions from Texas that I tried and they were really good!

    Hi  Linda

    I have a question about your delicious chicken casserole?  I will be going to a family get together in a couple of weeks that is a bring a covered dish luncheon.  Do you think I could put your casserole (a double recipe) together the night before and bake it that morning just before I leave home?  Have you tried this?  It  will be an outdoor thing with no kitchen available. I was wondering if the potatoes would turn dark if they sit overnight and how it would be served at room temperature.
