    Rec & Rev. Vidalia Sweet Onion Chicken Breast Casserole

     I made this last night and it was fabulous!!! DH gave it 2 thumbs up and for him to say that about Chicken is rare!!!! Thanks for the great recipe Linda!  My changes are in ( ).

     

     

     

    Vidalia Sweet Onion Chicken Breast Casserole


    2 large chicken breasts, split & boned (I used 10 bone in thighs)
    2 tablespoons vegetable oil
    2 medium-sized potatoes, peeled & sliced  (4 potatoes)
    2 medium-sized Vidalia sweet onions, sliced (2 sweet onions)
    1 can (10 3/4-oz) cream of mushroom soup (I used 2 cans)
    Paprika


    (Button and portabello mushrooms (chopped and fried))

    (French’s French fried Mushrooms)

     


    Brown chicken in oil & drain on paper towel.


    Oil a 1 1/2-quart casserole.


    Layer potatoes on bottom; follow with a layer of onions & top with a layer of mushroom soup.

    Then I sprinkled on the fried muchroom.
    Gently, place chicken breast on top & sprinkle with paprika and French fried onions.


    Cover tightly & bake at 350 degrees for 1 hour.

     

    Will definately be mamking this again!

    Yum.  It is about Vidalia onion time!  ;)   Sounds wonderful will have to try.  I don't think I have ever seen French's french fried mushrooms! Those sound interesting!  Thanks for the review!

    They already Vidalia onions at my Walmart.    They had two bags for $5 but I just bought one bag for right now.   I love Vidalia onions.

     

    This recipe sounds so good.   I definitely want to try it.

    Redawna -- first of all thank you for the review, thank you for trying the recipe but most of all........thank you for the idea!! It totally made this recipe an out of the ball park hit! I topped it with French Fried Onions and it made ALL the difference in the world, thank you, thank you!

     

    Thank you for all  for your comments…..I love it when a recipe comes together and Redawna put the finishing touches on this one…I’m one happy camper right now!!

    HI Linda,

     

    I just so happened to have read about the French Fried onions on the board and had to check them out. I bought some and opened the can earlier in the week to use on some lunch time pizzas.  I was waiting for a way to use them up and this seemed perfect. Everyone loved the dish!

    Redawna ~ we are into baseball season with my grandson (and Karate) well…it’s so warm and perfect weather to be getting our gardens in. I made this Saturday so we wouldn’t have to hustle around getting dinner ready (I have to take food to Mother earlier than we normally sit down to eat). We had the chance to visit the moving wall memorial a few times that day…..DGS played four games and were headed for my house…..DH had two fire calls we four were in one vehicle so we just headed for the nearest town instead ~ I’m thinking DH could slide this baby in the oven and we’d eat when we came in……when I told him what we were doing he said he’d meet us at our favorite Mexican place instead. LOL SO…….this was made a day ahead covered and seting the frig until last night.

     

    I saw your review and I had a can of the fired onions in the pantry…..you know?!?!? For one of those “I have to fix THAT recipe” that I’ve never found since I bought the fried onions…..when I saw your review I popped them on top and Oh my! I thought my husband was going to take a bite of the sofa the house smelled SO good….poor guy! We took Mother’s food to her, getting her meds ready, cleaned out the frig, stripped her bed etc…….he’s STILL smelling this and carrying trash out all the time looking over his shoulder to see if I’m right behind him!


     

    Little does he know we are still delivering food to our youngest DD and family….well ~ we have to rave and inspect all the work they did on the pergola and all the new additions of flowers….again, he’s still smelling the casserole.

     

    Our grandson just goes in the house makes himself a plate and sets by DH ~ that was it…..home we came. *smiling* after all that every single one of them (DH included) proclaimed this the best thing around.

     

    Sorry for the long story but it made me smile and the fact this is a dish that can be made ahead and holds up well if you have a buffet type dinner it would be a good choice. Thank you so much ~ I almost didn’t post the recipe because it seems like I don’t get to the board like I use to and to be honest? I didn’t think there was that much interest in recipes anymore ~ this is one time I’m thrilled I was wrong. Thank you for interest and making my day! Hugs, Linda

    Hi Linda!

     

    I agree, the board is not what it used to be. But maybe, just maybe we can all work on getting it back to its former glory! lol  The Mom2Mom group moved back to Recipes last night! And I know personally, I am going to try to really start posting a lot more recipes on the board.  See if this place can not get to being as busy as it once was.

     

    So glad to hear everyone liked the french fried mushroom addition!

     

    I would love to be planting and building pergolas........we are under a heavy snowfall warning. Hmm
