2 cups corn kernels,cut from fresh corn(about 4 cobs)
1 Tbsp. lime juice
1 Tbsp. olive oil
dash cayenne pepper
1/4 tsp. salt
1/8 tsp. pepper
2 Tbsp. minced fresh cilantro
1/3 cup shredded or fonely chopped queso blanco cheese
Preheat oven to 400.Pour corn into shallow roasting pan.Drizzle with olive oil and roast for 10 minutes.Pour into salad bowl.Combine lime juice,cayenne,salt and pepper in a cup.Stir well and pour over corn.Add cilantro and toss well.Sprinkle with the cheese. Depo!!!
